 I might have shed a couple tears after I saw these two pictures side by side. Today is the first day in a week that I’ve felt confident and halfway human. Is it a coincidence that I’ve had the last 5 days off and that’s when my motivation and self esteem plummeted? Probably not. I’m the type that needs to stay busy and moving and when I’m just a sitting duck, it starts messing with my head. There’s some things I need to figure out about that so that in the future I’m more comfortable with just being still. I think the issue is that I used to be so comfortable being still (thanks, depression) that it got me to 360 pounds. Now when I have lazy days it takes me back to those days and all the feelings come rushing back. We all have different things to figure out and work on during our paths to healthy so don’t think you have to struggle alone. 💛💛💛

I had eaten like straight poo last week (teacher appreciation week, way too many keto treats, Mexican food, and a continued mindset of “well I guess I can have another because I already screwed it up or I’m moving soon so I need to eat all the food here because I’ll never have it again.”) and I ended up going from 168 pounds to 176 pounds (Sunday morning’s weigh in) in just a couple days. I know this was water weight from the extra carbs I had been eating because I bloat like a balloon when I go off plan and I can feel it in every inch of my body. It actually physically hurts me now. I get the worst gas (sorry if it’s TMI), my stomach hurts, and I feel completely sluggish.

I decided I was going to do a 48 hour fast starting after Sunday’s dinner, which was Mexican food (another bad choice), to reset my body and mind, give my body some time to heal internally, and to help with the bloating and uncomfortableness I was feeling. I weighed in Monday morning at 174.6 and I’m ending the week on 166 pounds, 8.6 pounds lower than I started the week.

The 48 hour fast helped get rid of my bloat and then I ate super clean the rest of the week and still made sure to practice intermittent fasting every day. This is what will get me the results I want; consistency. I know what works for my body and when I deviate from that, my body becomes like a toddler and throws a huge screaming tantrum on the floor and makes sure that everyone can see it.

I used to reward myself with food or eat my emotions and I let that mindset come back last week. No more. Some people can go off plan and it doesn’t really bother them, but for me, sometimes it turns into a mindset of “I can eat what I want especially since I already messed up” and I sometimes can’t get out of it. Most times I can have one off plan meal and hop back in but time I couldn’t. You have to find what works for you. Balance is important but so is consistency

Ingredients:
Crust
* 1/2 cup almond meal
* 2 tbsp butter

Cheesecake
* 8 oz. cream cheese
* 1 large egg
* 1/2 tsp vanilla extract
* 1/2 tsp lemon juice
* 1 pinch salt
* 1/4 cup sweetener of your choice

Instructions:
1. Preheat the oven to 350°F. To make the crust, melt some butter until liquid and mix in your almond meal until you have some that feels like crumbly play dough.

2. Take about a teaspoon at a time and press the dough into the bottom of a muffin tin. Tip: line your pan with cupcake liners for easy removal. Cheesecake is very soft and if hard to scoop out without causing damage! Bake these crusts for about 5 minutes. They’ll come out slightly brown and crispy.

3. Then take your room temperature cream cheese and beat it with an electric hand mixer or standing mixer until creamy. Then add vanilla extract, lemon, an egg and your sugar substitute, erythritol in our case. Beat until all combined.

4. Use an ice cream scooper to fill all the crust-bottomed muffin tin cups evenly almost to the top (the mini cheesecakes will rise while in the oven but will flatten while refrigerating). You can also line each cup with a cupcake liner to make removing the mini cheesecakes easier.

5. Bake at 350°F for about 15 minutes. The mini cheesecakes should be slightly jiggly. Let them cool in the refrigerator for ideally 24 hours. But if you’re strapped for time, try putting them in the freezer for as long as you can.

6. Once the mini cheesecakes are done cooling, slide a knife around the edges of each muffin cup to loosen them up. Then use a fork and your hands to help them out cleanly. As a delicious bonus, slice up some strawberries and arrange them however you like on top of the mini cheesecakes.

Today I was walking through the grocery store, getting some caffeine, and what I saw literally shocked me. So many people are mindlessly walking through the grocery stores. Mindlessly loading up stuff they don’t really need. If you’re really serious about fat loss, you should go into the grocery store like it’s a military operation. You should have a plan, know what you need AND don’t waiver from the plan. Of course, getting some foods that you like makes adhering to your diet better. But at least 80% of your cart should consist out of these 4 groups.

1️⃣ Proteins.
2️⃣ Complex carbs.
3️⃣ Fruits and vegetables.
4️⃣ Healthy fats.

You don’t really need more. Seriously, keep things simple. Don’t load up on candy and chocolate. Of course having some is possible, but don’t load up on it.

2. Preheat oven to 350 degrees F. Grease an 8x4 inch loaf pan and line with parchment paper for easier removal. ⁠⠀
3. Combine eggs, softened butter & cream cheese, and vanilla in a high-speed blender. Blend until smooth. Add coconut flour and baking powder and pulse until combined.⁠⠀
4. Pour batter into the pan, and bake for about 50 min-1 hr, or until firm in the centre.⁠⠀
5. Allow cooling. Refrigerate for a few hours or overnight before slicing to use for the french toast sticks.⁠⠀
6. Slice into approx. 24-36 stick shapes, or whatever size and shape you desire. ⁠⠀
7. Heat a Tbsp of butter in a skillet over low-medium heat. Fry the sticks in batches, turning until golden brown on all sides. ⁠⠀
8. Optional: Dip french toast sticks in a mixture of 1-2 Tbsp sugar-free sweetener mixed with 1/2 tsp cinnamon to coat.⁠⠀
9. Dunk in choczero syrup, and enjoy!!!⁠⠀

The BEST way to ensure you're eating at a calorie deficit and hitting your macronutrient (protein/carbs/fat) goals is to prepare most of your meals yourself. - Which means you're gonna need some equipment... - - MEASURING SPOONS - I was recently talking to a client who had started measuring portions more. He mentioned he had bought some measuring spoons so he knew exactly how much oil he was using to cook. - It turned out what he THOUGHT was 1 tablespoon was actually 2. - And he was using "1" tablespoon of oil to cook twice per day. - That's an extra 240 calories he wasn't aware of - he thought his daily calorie deficit was around 500, but it was actually closer to 250. - No wonder his rate of fat loss was so slow. - - MEASURING CUPS - 1 cup of white rice contains around 200 calories. - But how do you know what "a cup" is without measuring? - - FRYING PAN WITH LID - Super useful. I always buy non-stick for convenience and the fact that you don't need anywhere near as much oil. - You can cook anything in this - eggs, meat, veggies etc. - - POT WITH LID - You can boil eggs, make stews and soups, and steam veggies. - - STEAMER BASKET - Add some water to the pot above, put the steamer in, add veggies, cover, and wait. - - CAN OPENER - I usually have canned tuna and canned tomatoes in the cupboard. - And if I want to eat them, I need a can opener. - - CHOPPING BOARD - You're going to need this to chop vegetables and cut up meat. - - KITCHEN KNIFE - Goes with the chopping board. Grab a knife sharpener too. - - OVEN PAN - For roasting meat and veggies. - - MIXING BOWL - If you're going to add herbs and spices to meat before cooking in the oven, it's useful to have a mixing bowl so you can throw everything together. - You can also use it to make salads. - - STORAGE CONTAINERS - For leftovers or taking food to work for lunch. - - COFFEE MAKER - Because coffee is essential to life 😁.

INGREDIENTS⠀
4 oz. goat cheese, softened at room temperature⠀
12 or 18 very thin slices of fresh tomato (make 12 slices for bigger tomatoes or 18 slices for smaller tomatoes)⠀
12 thin slices fresh mozzarella, cut in half to make 24 half-slices⠀
1/4 cup half-and-half, milk, or cream⠀
1 tsp. Spike Seasoning (or other all-purpose seasoning blend of your choice)⠀
1/2 tsp. Italian Herb Seasoning⠀
fresh-ground black pepper to taste⠀
8 eggs, beaten until whites and yolks are combined⠀
10-15 fresh basil leaves, thinly sliced⠀

INSTRUCTIONS⠀
Preheat oven to 375F/190C. Spray a 6-well tart pan or large muffin tin with non-stock spray.⠀
Remove 4 oz. goat cheese from the fridge and let it soften while you cut up other ingredients.⠀
Cut 12 or 18 thin slices of tomatoes (12 slices for large tomatoes and 18 slices for smaller tomatoes.)⠀
Let the tomatoes drain on a paper towel if they’re really juicy.⠀
Cut 12 thin slices of fresh mozzarella, then cut each one in half to make 24 half-slices.⠀
When the goat cheese is soft, mix in the half-and-half to soften it even more.⠀
Then mix in Spike Seasoning, Italian Herb Seasoning, and black pepper and stir to combine.⠀
Beat eggs until the whites and yolks are all combined and then fold eggs into the goat cheese mixture.⠀
Divide the egg mixture into the 6 tart wells and bake tarts about 10 minutes, or until the eggs are barely getting firm.⠀
While tarts bake, thinly slice the basil.⠀
Remove tarts from the oven and top each one with slices of mozzarella, followed by slices of tomato.⠀
Put back in the oven and bake about 10-12 minutes more, until the egg is firm, cheese is starting to melt, and tomatoes are slightly roasted.⠀
Turn oven to broil and broil tarts 2-3 minutes, or until the top is lightly browned.⠀
Remove from oven, cool 2-3 minutes, and then top with sliced basil and serve.⠀

Spike Seasoning (or other all-purpose seasoning blend of your choice)⠀ 1/2 tsp. Italian Herb Seasoning⠀ fresh-ground black pepper to taste⠀ 8 eggs, beaten until whites and yolks are combined⠀ 10-15 fresh basil leaves, thinly sliced⠀ .⠀ INSTRUCTIONS⠀ Preheat oven to 375F/190C. Spray a 6-well tart pan or large muffin tin with non-stock spray.⠀ Remove 4 oz. goat cheese from the fridge and let it soften while you cut up other ingredients.⠀ Cut 12 or 18 thin slices of tomatoes (12 slices for large tomatoes and 18 slices for smaller tomatoes.)⠀ Let the tomatoes drain on a paper towel if they’re really juicy.⠀ Cut 12 thin slices of fresh mozzarella, then cut each one in half to make 24 half-slices.⠀ When the goat cheese is soft, mix in the half-and-half to soften it even more.⠀ Then mix in Spike Seasoning, Italian Herb Seasoning, and black pepper and stir to combine.⠀ Beat eggs until the whites and yolks are all combined and then fold eggs into the goat cheese mixture.⠀ Divide the egg mixture into the 6 tart wells and bake tarts about 10 minutes, or until the eggs are barely getting firm.⠀ While tarts bake, thinly slice the basil.⠀ Remove tarts from the oven and top each one with slices of mozzarella, followed by slices of tomato.⠀ Put back in the oven and bake about 10-12 minutes more, until the egg is firm, cheese is starting to melt, and tomatoes are slightly roasted.⠀ Turn oven to broil and broil tarts 2-3 minutes, or until the top is lightly browned.⠀ Remove from oven, cool 2-3 minutes, and then top with sliced basil and serve.⠀ .⠀ Thanks @kalynskitchen for such a lovely recipe⠀ .⠀ Don't do keto diet alone. INGREDIENTS

Cooking spray, for pan

4 large eggs

4 c. shredded mozzarella, divided

1/4 c. freshly grated Parmesan

Kosher salt

Freshly ground black pepper

1/2 c.  pizza sauce

1/4 c.  pepperoni

1/4  thinly sliced mushrooms

2 tbsp.  thinly sliced black olives

Fresh basil leaves, torn

DIRECTIONS

Preheat oven to 425°. Grease a small baking sheet with cooking spray. In a medium bowl, stir together eggs, 3 cups mozzarella, and parmesan. Season with salt and pepper, and spread mixture evenly on baking sheet.

Bake until lightly golden, about 12 to 15 minutes. Spread pizza sauce on top of baked crust. Top with remaining 1 cup of mozzarella, pepperoni, mushrooms, and olives. 
Bake until cheese is melted and crust is crispy, about 15 minutes more. Sprinkle with basil. Slice and remove from pan while still warm.
