A Packed for Power Lunch!
I love an excuse to buy one of those Super Food salad snack pots when I’m out and about. Probably my favourite at the moment is M&S Edamame and Humus snack pot (£2.33). It’s all about superfoods and powerplants at the moment.
I made my own yesterday…felt a bit like Super Mum wielding her own Super Power in the kitchen (perhaps I’m exaggerating a little)…. Thought I’d share it with you (serves 2)… · Toss 3 tomatoes cut up into wedges, along with 5 chopped spring onions, in a tablespoon of olive oil and some fresh coriander. Roast in the oven at 200F Fan for 15 minutes. · Mix the roasted vegetables with ½ packet Merchant Gourmet Tomatoey French Puy & Green Lentils and Spicey Mexican-Style Grains & Pulses · Sprinkle some chopped fresh coriander over the top and serve. · Option to serve with sliced avocado or chopped beetroot, and a spoonful of humus.

Vegan mango lassi is awesome but when making it or my famous mango curry I use the pulp of the fibrous-less and sweet true Indian Alphonso mangoes .Trust me, it’s a huuuuuuge difference. But I’ve only enjoyed one fresh Alphonso in my life.. :-(

Homemade Mixed Vegetable Pakora with Mint Chutney 🌿
My family went NUTS for these Baked Bhajji Fritters from @veganricha! My dad said that these were the best pakora he’s ever had. That’s high praise because it’s one of his favorite foods and he’s eaten them all over the city at Indian restaurants! 😍
The photo above is of a double batch. I love that this recipe is made with wholesome whole foods including chickpea flour, cauliflower, carrots, potato, onion, ginger, fresh mint, and fresh coriander (all gluten-free). To keep things on the healthier side I used 1/2 the oil that the recipe called for and didn’t brush with oil, which was fine because they browned nicely when I baked them!👌🏽I also didn’t have Chaat Masala, so I used Garam Masala + Black Salt. I did a quick search of the ingredients in Chaat Masala and this was the closest spice blend I could get with what I had on hand! I’ll def be making these again, they were so easy to whip up.🌱

Peanut Butter Sweet Potato Curry deliciousness!! Recipe from @veganricha (link in her bio! always the yummiest 😋recipes!) I made a few tweaks: instead of cauliflower, I used broccoli. Added a tin of diced tomatoes. It took quite a while for sweet potato to cook (must dice it tiny next time), but the wait was SO worth it. Pure perfection 😍Serve over quinoa. Sweet potato parathas (pressured 2 sweet potatoes, puréed them and mixed with whole wheat and millet flour) 🍠🍠
Vegan ras (mango dessert)- blended frozen mangoes, a chunk of aloe plant, frozen butternut squash, chia seeds and cardamom🥭🥭
@veganricha lemon turmeric cauliflower rice (I threw in carrots and chopped cashews)🍋🍚 •
Roasted lima bean shaak (cook mustard seeds in oil and then throw every spice u have in and then add lima beans and water and cook until most of the water evaporates -help from my nani) •
Besan barfi (mixed oil and chickpea flour on a heated pan and added in shredded jaggery and water, then chilled in fridge)

Vegans Taking Stock
Most people don't make their stock from scratch these days - turning to stock cubes and stock pots in their cooking. But, be warned, not all stock cubes and pots are plant-based.
The main problem is that many products contain "Disodium 5′-ribonucleotides” or E635 (same thing – which can be from plants or animal derived, so its status as vegan friendly is uncertain).
The following are plant-based vegetable stock cubes:
• Kallo Organic Vegetable Stock Cubes, Kallo Yeast Free Stock Cubes, Kallo Low Salt Stock Cubes.
• Marigold Organic Yeast Free Vegetable Bouillon Cubes
• Sainsbury's Basics Vegetable Stock Cubes (but not the non-basic variety).
Those which are not vegan include: OXO Vegetable Stock Cubes, Tesco Vegetable Stock Cubes, Tesco Everyday Value Vegetable Stock Cubes, Morrisons Vegetable Stock Cubes.
But if you do want to cook a stock from scratch, just finely chop up 3 sticks of celery, 3-4 medium carrots, 2 peeled onions and fry these up in a little oil. Add a chopped clove of garlic with some chopped parsley, along with 100ml white wine and 3 pints/1.75 litres of water. Cook for about 20 minutes, and then strain, to leave some plant-based vegan stock!

Ok, so #veganricha gives so much advice in #veganrichasindiankitchen on troubleshooting your #veganpaneer that I had zero expectations of getting it right first time. I figured I’d at least get a nice-tasting cheesy spread and I’d be happy with that. Imagine my surprise that I seem to have invented some cheesy biscuits/cookies from the recipe instead, that are crispy on the outside and soft on the inside. They are delicious and moreish. Vegan Bleeding Burger Dilemmas
Asda just announced that its got a new range from Oumph! Including a plant-based burger ‘perfect for those cutting down on meat’ as well as vegans and vegetarians. Last year, Tesco launched it’s Beyond Burger that Bleeds.
It’s great to see more choice, but put simply, I’m looking for something that allows me to join in the BBQ that doesn’t pretend to be meat and feel like I’m eating a ‘cardboard disc’ …. Therefore, I’m going to say #VeganAwesome to Morrisons Edamame & Sweet Potato Burgers from the frozen section, approved by The Vegan Society. They’re simple (and affordable). But that’s great because they taste good, and you feel like you can identify what has gone into it. You need to take care when you’re cooking them not to break them - but then that’s because they’re not cardboard.
I’d say the same goes for Tesco’s Mexican Style Bean Burger, labelled as vegetarian, but seems to be vegan.
I’m sticking to the bean burger look-alikes for now and leaving the ‘bleeding burgers’ for the meat-reducers. How do you feel?
