Chinese Chives Boxes

Recipe:

Dough recipe: (Make 24 boxes) 
400 g flour
210 ml water
1/2 tsp salt 
Add the flour and salt into a big bowl for easy kneading. Pour water little at a time. It’s all depending on the quality of the flour, some may need 210 ml of water and some may need less than 200 ml to have perfectly knead dough. Knead the dough till it doesn’t stick anymore on hand. (add flour if dough is too soft) Cover and let the dough rest for 15 minutes. 
Fillings recipe: 
350g Chinese Chives, clean & finely chopped 
1 carrot, finely sliced 
100g shiitake mushrooms, chopped 
4 clove garlic, minced 
2 tbsp oil
Sauce ingredients: 
1 tbsp sesame oil 
1 tbsp soy sauce 
1 tsp white pepper 
1 tsp ginger powder
1 tbsp mushrooms stir fry sauce 
Salt for taste

✔Heat up oil in a wok, add in the garlic and sauté till fragrant. Then add the carrots and cook till soft, follow by mushrooms. Add in the sauce ingredients and stir for another 2 minutes. Turn off the heat, lastly add in the chinese chives and mix well. Let it cool completely before use. ✔Take out the dough from the bowl and knead for a few seconds. Divide the dough into 24 pieces (about 40g per piece). Roll each piece into a circle (about 4 1/2 inch in diameter). Place the fillings in the middle and seal it in the same way as to fold a dumpling. Place the fold side down and gently patch it flat. ✔Heat 2 tbsp of oil in a frying pan, place the fold side down and cover it. Cook with medium low heat. Flip the chives box until both side are golden brown. ✔Finally serve hot with chilli oil or your favourite sauce. .

Peanut Sesame Noodles

STIR-FRIED PEANUT SESAME NOODLES
Good for 2-3 servings ​180g dry rice noodles
½ medium red onion, sliced into strips
½ cup sliced bell peppers, sliced into strips*
1/2 medium carrot, sliced into strips*
2 tbsp sesame oil (highly recommend, but feel free to use other oil)
Chopped spring onions, for topping
Sesame seeds, for topping *The veggies are really up to you! You can basically whatever you have available!

SAUCE:
¾ cup warm water
2.5 tbsp peanut butter (I used slightly salted and sweetened peanut butter)
3 cloves garlic, minced
2 tbsp sesame oil (highly recommend, but feel free to use other oil)
2 tbsp maple syrup or other liquid sweetener, can be subbed with sugar
4 tbsp soy sauce, or to taste
1 tsp sriracha (optional), adjust according to desired spice
Sesame seeds, optional

1/2 tbsp cornstarch + 1 tbsp room temperature water, mixed into a slurry

STEPS
Pour boiling hot water over the noodles. Carefully break apart. Leave to sit for a few minutes until pliable and half-cooked. Drain the water afterwards.
Mix all sauce ingredients EXCEPT the cornstarch slurry in a bowl until smooth. Adjust flavours based on desired taste. Set aside.
In a large pan, heat the 2 tbsp sesame oil or other oil. Sauté the onions, leeks, and bell peppers.
Add in the tofu and other veggies you're using. Sauté until tender.
Add in the noodles. Pour in the sauce while mixing the noodles.
Cook for another 3-5 minutes on medium to high heat. Pour in the cornstarch slurry and mix well until sauce has thickened and is absorbed by the noodles.
Turn off heat. Top with sesame seeds and spring onions, if using. Enjoy while hot!

🥑 Get the dressing recipe:

Dill Avocado Dressing
1/2 a ripe avocado 
3-4 sprigs fresh dill
Juice of half a small lime
2 tsp apple cider vinegar
1/2 tsp garlic powder
2 tsp liquid sweetener of choice
Pinch of salt
1/4 cup water
.
Combine all ingredients in a small blender and blend until creamy. Add a little more water if sauce is too thick for your liking. Added a little of the dressing to my kale, and then topped over the completed bowl.

Spicy Basil Noodles with minced tofu😋

Recipe (makes 2 servings)

🌱Ingredients:
- 2 servings of dried noodles of your choice (used Wu-Mu)
- 14oz (397g) firm tofu, drained, pressed & mashed
- 1/2 (~20g) cup packed fresh Thai basil/basil
- 3 cloves of garlic, finely minced
- 1 - 2 Thai chili, chopped
- shredded butter lettuce or veggies of choice
- oil for cooking, toasted sesame oil, salt to taste
🌱Sauce ingredients: - 2 tablespoons soy sauce/tamari/coconut amino
- 1 tablespoon thick dark soy sauce
- 1 tablespoon *stir fry sauce
- 1 tablespoon *'fish' sauce

Instructions:
1. Cook noodles based on package’s instructions, drain & toss in a little oil to prevent noodles from sticking together.
2. Meanwhile, cook mashed tofu (be sure they are dry) in a heated non-stick pan with 1 tablespoon oil until slightly brown, then push to the side of the pan.
3. Add 2-3 toasted sesame oil, then garlic & sauté until aromatic. Stir in soy sauce, 'fish' sauce, Thai chili, basil & continue to cook for 1 minute until tofu absorbs all the sauce, turn off heat.
4. Add noodles to the tofu mixture, then drizzle with dark soy sauce & stir fry sauce. Quickly toss noodles using a pair of tongs & chopsticks until well combined. Season accordingly, if needed.
5. Serve warm with butter lettuce.

Verrühren, süße Beeren in den Teig addieren und in eine 10 oder 12 cm Silikonform geben. Bei 165 Grad Umluft 25-30 Minuten backen.

Ich habe noch einen Vanillepudding gekocht und auf den Kuchen geben. Mit weiteren Beeren garnieren.

In case you missed it: Bruce was born on a beef farm—and had all gone to plan, he likely would have been slaughtered between 14-36 months of age. Bruce escaped his paddock—but because he was so young, this separation from his mother—and her immunity-building colostrum—left him weak and vulnerable. Ironically, his resulting illness would end up saving his life. A member of the medical team working on his case thought this little guy had a chance—but it would take more time, attention, and resources than the farm was able to invest in him.⁣⁣

Now safe at Farm Sanctuary, where we can give him the care he needs, Bruce is looking better every day.This tag removal symbolizes once and for all that he will forever be viewed as someone, not something.⁣

2. Spinach
3. Garlic cloves
4. Onions
5. Ginger garlic paste
6. Mixed spices
7. Turmeric powder 
Recipe:

On to the mixer:

Garlic cloves, spinach, cumin seeds
Grind it.

On to the pan:

Add some oil and pop some mustard and cumin seeds. Add onions and ginger garlic paste, cook it for some time. 
Then add sweet corn and allow it to cook. Then add salt, pepper and the grind mixture. 
Simmer and cook for about 10-15minutes. 
Tada. Corn n spinach gravy is ready to serve😃

2 cups almond milk

½ cup melted vegan butter

¼ cup maple syrup

1 tsp salt

1 packet of active dry yeast

5 cups all purpose

Vegan Cinnamon Roll Filling

¾ cup softened vegan butter

¾ cup brown sugar

2 tbsp cinnamon

additional flour to flour the surface for rolling

Maple Glaze

¼ cup maple syrup

1 cup confectioners sugar

2 tbsp almond milk

2 tbsp melted vegan butter

½ tsp vanilla

1 Prepare the dough by beginning with a large mixing bowl and mixing together almond milk, melted butter, maple syrup, and salt. Sprinkle a packet of dry yeast evenly across the top of the mixture and let it sit for about 5 minutes. Then, add flour and mix until a dough forms. Don't over mix! Cover the dough in the bowl with plastic wrap and allow it to set for an hour.

2 While waiting on the dough to rise, prepare the maple glaze by mixing all of the ingredients together. Sit aside.

3 Once the dough has sat for an hour, roll it onto a floured surface (add more flour if it's too sticky). Roll it into a 1/4 inch thick rectangle. Spread the softened butter to cover the dough. Then, sprinkle sugar and cinnamon.

4 Roll the dough into a log and cut it into about 12 pinwheels. Place them into a baking dish so that they are close but not touching. Cover them with a towel or loose plastic wrap and set aside for another 30 minutes. Preheat the oven to 350.

5 After 30 minutes, the rolls should have almost doubled in size, bake them in the oven for 30-35 minutes until they are golden on top. Pour the glaze over them and enjoy!

So I used my quick chili recipe, relying on organic canned ingredients from @publix and @beyondmeat for the added protein.  I say added protein because all those veggies and beans have protein in them.

I condensed this into 10 slides using Layout. So zoom in if needed. I marinated the beyond meat with @mccormickspice organic chili seasoning, @nandosusa Peri Peri, sriracha, diced onion, and garlic for around 10 minutes before browning it in olive oil. Then I set that aside in a mixing bowl and did the same with the bell peppers. Drained and rinsed three different beans. Tossed them in and sautéed for a bit, then added @beyondmeat and kept stirring and sautéing.

For the tomato 🍅 sauce I love the flavor of @muirglen organic fire roasted diced tomatoes. 1 large can diced added and 1 large can puréed in the @vitamix with minced garlic and a few tsp of @nandosusa Peri Peri. Then drained and rinsed the sweet corn and peas. Tossed them in. Simmered on low covered for 2 hours, stirring and tasting frequently. I added more @nandosusa and black pepper.

This was enjoyed for 3 days, served as is, as a sloppy joe sandwich, over basmati rice, topped with cheddar shreds, side of avocado 🥑, etc.  it got better with age!

I cannot wait to make these again. I used Garbanzo bean flour, but i would recommend Buckwheat flour or any other gluten free flour that does not have a strong taste. -

For the crêpe, I mixed 1 cup flour with 1 cup and 3 TBSP plant milk (I used almond milk.. so delicious!) Let this mixture thicken for about 10 minutes. if too thick add more milk or water. Pour on a medium-heated pan by spreading a thin layer around the pans surface to create a flat, thin crêpe! -

I made a strawberry-coconut cream filling by melting 2 cup frozen strawberries in a saucepan and adding 1 TBSP chia seeds. Then I put this mixture in the fridge until the crepes were finished cooking. This is a quick and easy recipe for morning crêpes! It took about 15 minutes, and it was definitely a win! 🙈🌿 - I cannot wait to make these again. I used Garbanzo bean flour, but i would recommend Buckwheat flour or any other gluten free flour that does not have a strong taste. - - For the crêpe, I mixed 1 cup flour with 1 cup and 3 TBSP plant milk (I used almond milk.. so delicious!) Let this mixture thicken for about 10 minutes. if too thick add more milk or water. Pour on a medium-heated pan by spreading a thin layer around the pans surface to create a flat, thin crêpe! - - I made a strawberry-coconut cream filling by melting 2 cup frozen strawberries in a saucepan and adding 1 TBSP chia seeds. Then I put this mixture in the fridge until the crepes were finished cooking. 3 tablespoons unseasoned rice vinegar
2 tablespoons soy sauce
1 teaspoon chili oil

RECIPE PREPARATION
Pancakes
Whisk 2½ cups flour and 1 tsp. salt in a large bowl. Mix in sesame oil and 1 cup boiling water with a wooden spoon until a shaggy dough forms.

Turn out dough onto a lightly floured surface and knead, adding flour as needed to prevent sticking, until dough is smooth, about 5 minutes. Cover with plastic wrap; let rest at room temperature 1 hour.

Vegan Mozzarella:⠀
1 can coconut milk (400 ml)⠀
1/4 cup almond milk⠀
1/3 cup nutritional yeast⠀
1/2 tsp garlic powder⠀
1/2 tsp onion powder⠀
½ tsp sea salt⠀
3 tbsp arrowroot powder⠀

In a blender add coconut milk, almond milk, nutritional yeast, garlic powder, onion powder, sea salt and arrowroot powder. Blend until smooth consistency. Transfer to saucepan and bring to medium-high heat. Warm mozzarella, stirring often, until thick and stringy in consistency (5-10 minutes).⠀

Vegan Grilled Cheese:⠀
4 tsp vegan butter, or coconut oil⠀
2 slices sourdough bread⠀
1/4 cup vegan mozzarella⠀
pinch sea salt and pepper⠀

1. Butter two slices of sourdough bread on both sides (i.e. butter all four sides) and sprinkle with sea salt. Bring a skillet to medium heat and toast the bread slices until golden in colour, then flip and toast the other side.⠀
2. Once it's ready, finish by lathering each toast with 2 heaping tablespoons of vegan mozzarella. Season with sea salt and pepper. Then flip one slice of bread onto the other to make a sandwich.⠀

Its a great source of protein for people who have cut meat out of their diet and is so simple to make! .

Recipe by: @hanacookz 
Ingredients:
1- 500 grms dry chickpeas/garbanzo beans - they must be dry!! Make sure they are not wet if you are using canned chickpeas. 
2- 1 small onion 
3- 1/4 cup fresh parsley (finely chopped) 
4- 4 garlic cloves (finely grated) 5- 1 1/2 tblspn chickpea flour
6- 1 tblspn cumin powder
7- 1 teaspn ground coriander powder
8 - 1/4 teaspn black pepper
9 - 1/2 teaspn cayenne pepper
10 - pinch of ground cinnamon
11 - pinch of ground cardamom
12 - 1/2 teaspn ground turmeric 
13- vegetable oil (for frying)

You will also need - food processor.

Method
-This recipe makes 36 falafel balls-
1. If you are using dried chickpeas, in a large bowl add chickpeas and 5 cups of cold water. Keep them aside for at least 8 hours until they become double in size. (Overnight preferable) 
2. Drain and pat them dry. Add them to the food processor along with all the spices and onion. 
3. Pulse all ingredients together until the texture is like a coarse paste. (If you have a small food processor add the mixture in batches) 
4. Scoop the falafel balls using your hands into small balls, (I used a falafel maker to make things easier)
5. Fill a skillet with 3 inches of oil to fry the falafel evenly. Fry the balls on medium flame. Each ball would take 2 minutes to turn golden brown. 
6. Serve with a choice of dip
(I like eating this with a mint/yogurt dip) 
Enjoy!!
