skinnyrecipes Chicken and Spinach Stuffed Sweet Potatoes

One of the best dinners I’ve had in a while and it’s totally clean eating! If you’re vegan or vegetarian, the chicken in this dish can easily be subbed for quinoa or tofu. This dinner is filling and the sweet potatoes make it finally taste like Fall! 
Ingredients:
- 1 lb of chicken
- 2 handfuls of spinach
- 3 sweet potatoes
- 2 1/2 tbsp of olive oil
- 2 tsp of chipotle seasoning - 1 tbsp of fresh garlic - Salt and pepper to taste
- Optional shredded mozzarella to top

Directions:
There’s two options for cooking these. The long way takes longer but I think makes everything taste a little yummier if you plan on eating these right away!

1. Prick sweet potatoes with fork and bake in the oven at 425 degrees for 40 min (stick in microwave for 8-10 min if choosing the short way)
2. Add chicken, spices, garlic and 1 tbsp of olive oil to a baking dish (make sure chicken is coated evenly) and bake for 20 min in oven while sweet potatoes are cooking. For the short way you can cook the chicken on the stove.
3. While sweet potatoes and chicken are cooking in the oven, add spinach to stovetop with 1 tbsp of olive oil and an additional 1/2 tsp of salt and 1/2 tsp of pepper. Sauté until spinach is wilted.
4. Remove chicken from oven once cooked through and shred using two forks. Add chicken and spinach together
5. Remove sweet potatoes from oven once soft. Cut lengthwise and scoop out sweet potatoes flesh, leaving a thick layer around the skin. 
6. Drizzle 1/2 tbsp of olive oil on skins and stick back in the oven for an additional 7-8 minutes. 
7. Remove sweet potato skins from oven and stuff with chicken and spinach mixture. Top with additional mozzarella cheese for bonus flavor.
8. Bake an additional 10-12 minutes then remove from oven and enjoy!

All you do is dip the chicken into egg whites and then the crushed cornflakes. (I used a 1 cup  of crushed cornflakes with 1.5 pounds of chicken tenders.) Cornflake Chicken Tenders for the win tonight. Everyone needs to try this recipe by @drizzlemeskinny! My kids and husband approve. All you do is dip the chicken into egg whites and then the crushed cornflakes. (I used a 1 cup of crushed cornflakes with 1.5 pounds of chicken tenders.) skinnyrecipes One Sheet Chicken Fajitas

Made these for dinner last night and ate them again on top of my salad for lunch today because they were so delicious and fresh! Plus they're easy to make and only require one baking sheet. I heated up some @califlourfoods cauliflower flatbreads in the oven while my chicken was cooking and used them as tortilla shells! I also topped my fajitas with salsa and avocado. So yummy!

Ingredients:
- 1.5 lbs of chicken
- 3-4 bell peppers
- 1 tsp of chipotle seasoning
- 1 tsp of paprika - 1/2 tsp of cumin
- 1.5 tsp of salt
- 2 tbsp of olive oil

Optional:
- tortilla shells or a healthy substitute (@califlourfoods - avocado
- salsa

Directions: 
1. Mix everything together in one large bowl

2. Lay seasoned bell peppers and chicken out on a baking sheet and bake @ 425 degrees for 20 mins

3. Remove from oven, take chicken off of the sheet, turn the oven to broil, and cook the bell peppers for another 4-5 minutes for extra flavor. 
4. Serve in tortilla shells or over a salad

I made this last week and posted about it on my stories and OMG it was SO delicious the whole family was in LOVE. And with today being the first day of Fall and the weather will be cooling down soon this is the perfect comfort food dinner! So here it is below!⠀

Creamy Garlic Chicken⠀
⠀
Ingredients: ⠀
3 large chicken breasts cut into thin cutlets making about 6 pieces ⠀
⠀
For the breading:⠀
1/4 cup brown rice flour⠀
1/4 cup Parmesan cheese⠀
1/4 tsp black pepper⠀
1/4 tsp garlic powder⠀
1/2 tsp onion powder⠀
⠀
3 Tbsp extra virgin olive oil⠀
⠀
Sauce ingredients:⠀
1 yellow onion, chopped ⠀
1 head of garlic, roasted *instructions below*⠀
4 garlic cloves, minced⠀
1 1/2 cup chicken stock⠀
1 1/2 cup 2% milk⠀
2 Tbsp light margarine ⠀
1/4 cup Parmesan cheese⠀
2 Tbsp cream cheese⠀
⠀
Mix together breading ingredients in a shallow dish, add chicken pieces in a few at a time coating each completely in the flour mixture, repeat with remaining chicken and set aside.⠀
⠀
Heat oil in a wide pan on medium-high heat. Add chicken pieces as many as you can for at a time without overlapping or overcrowding the pan. Cook until golden brown and flip to finish cooking on the other side. Working in batches, until all chicken is done. Set aside.⠀
⠀
Now, add in onions, garlic, and roasted garlic. Reduce heat to medium and cook until onions are beginning to caramelize. Then add in the chicken stock and milk, bring to a simmer and scrape the bottom of the pan with a wooden spoon. Add in butter, cream cheese and Parmesan cheese and whisk until they are completely melted in. Adjust seasoning if needed and carefully place all of the chicken pieces into the sauce. Reduce heat to low and cover for 10 minutes to let the sauce thicken.⠀
Serve over cauliflower rice, pasta, or mashed potatoes.⠀

With a sharp knife, cut the root end of the garlic head exposing he individual cloves. skinnyrecipes Chicken and Broccoli Stuffed Bell Peppers

Whether you’re meal prepping for the week or looking for a clean-eating dinner recipe, stuffed bell peppers are always my go-to recipe! Whatever you choose to fill them with, they’re easy to make and a great way of avoiding carbs. Bell peppers offer a variety vitamins and make the dish a little more satisfying instead of just a chicken and veg dish. I mixed quinoa in with my filling and added cheese on top for a little extra, but both of these are unnecessary and can easily be made without! 
Ingredients:
1 lb of chicken, diced
1 tsp of salt
1 tsp of garlic
4 tbsp of olive oil
1 juice of a lemon (or less depending on flavor
1 tsp of pepper
2 cups of broccoli
3 bell peppers
1/2 cup of quinoa
Handful of shredded mozzarella

1. Add 1/2 cup of quinoa and 1 cup of water to saucepan and heat on high until it comes to a boil. At a boil, remove from heat and cover for 10 min.

2. Slice the bell peppers length wise (removing the center stem) and place in baking dish, drizzling 2 tbsp olive oil over the tops and in the dish

3. Add diced chicken, 2 tbsp of olive oil, salt, pepper and garlic to a pan and cook over medium heat until chicken is cooked all the way through

4. Add in broccoli florets and lemon juice to a separate pan and cook over medium heat for 5-7 min

5. Combine cooked chicken, broccoli and quinoa to one pan and mix

6. Scoop mixture into bell pepper shells and top with a sprinkle of shredded mozzarella

7. Bake @ 350 for 20 min

skinnyrecipes Healthy Sweet Potato Breakfast Sandwich 
A nutritious breakfast is essential to a healthy and balanced diet, especially if you’re like me and morning workouts are apart of your daily routine. I love breakfast sandwiches, however they’re not always the healthiest and the same thing everyday can get a little boring. In the spirit of subbing vegetables for bread in my recipes lately, I tried out this breakfast sandwich that uses sweet potato as the bun instead of bread! See below why this sandwich is a great option to get the day started. 
Egg Whites: If you’re trying to cut calories, or go for the healthiest option then egg whites should always be your choice. Egg whites contain over 60% of the protein found in eggs and they’re MUCH lower in calories and cholesterol (only about 20 calories per egg white). Sweet Potatoes: These are extremely rich in beta-carotene which is converted into Vitamin A. Also, this recipe only calls for one sweet potato, whereas a normal breakfast sandwich would use 2 slices of bread, so you’re only consuming 12g of carbs to the typical 40g you would for 2 slices of whole-wheat bread 
Kale: Although it’s purpose is more for flavor and a crunch on this sandwich, kale is one of the most nutrient-rich foods and can give an extra kick of a variety of vitamins and minerals by including it in your diet. 
Ingredients:
- One sweet potato
- 4 egg whites
- 1 tsp salt
- 1 tsp pepper
- 1/2 tbsp olive oil
- 1/2 tsp of minced garlic
- small Handful of kale

1. Grate the sweet potato and add it to a bowl with 1 egg white, half of the salt, half the pepper and garlic (if desired). Mix in the bowl and coat all of the sweet potato shavings.

2. Form sweet potato patties with your hands and place on stovetop over medium heat. Cook until browned on both sides (about 6 min each side)

3. Whisk remaining 3 egg whites in bowl with rest of the salt and pepper. Pour over med-low heat and either scramble or fold like a frittata. 
4. Add kale to stovetop with olive oil and a little salt and pepper to taste if desired

5. Add sandwich components together and pair with a glass of fresh squeezed OJ for an extra kick of Vitamin C!

I love Mexican food, but a lot of times when you order from a restaurant, or even most recipes add in a lot of extra ingredients (heaps of cheese/sour cream) that leave you with a stomach ache an hour later. This recipe is simple and tastes fresh, and can be very low in calories depending on the type of tortilla/how much cheese you use. - 1 lb of chicken (shredded or diced)
- 1/2 onion diced or 1/2 tbsp of onion powder - 1 can of black beans
- 1/2 cup of corn (frozen or canned)
- 1 1/2 cup of tomato puree
- 3/4 cup of chicken stock (more or less depending on how runny you like the sauce)
- 1 tsp of paprika
- 1 tsp of oregano
- 10 whole wheat tortillas (I found some that were only 90 calories per tortilla)
- shredded cheese (optional)

1. Preheat oven to 350 degrees
2. Cook the chicken on a stovetop with onion, a little bit of olive oil and garlic if you want (i baked my chicken in the oven @ 350 until it was tender and just slightly pink in the middle then shredded it and cooked the rest on the stovetop). Using two forks shred the chicken and add in the paprika, oregano and salt/pepper to taste.
3. Once the chicken is cooked and shredded, add in the tomato puree, chicken stock, beans and corn. Stir throughout. 
4. Pour filling into strainer to separate liquid from chicken filling. (The sauce won't be completely gone from the filling)
5. Fold filling into tortillas and wrap like a burrito and place in baking dish.
6. Pour remaining sauce over enchiladas and top with cheese (as much as desired)
7. Bake for 20 minutes

These should be an essential part of your diet because they help with everything from lowering blood pressure to reducing inflammation. Salmon is a low calorie source for a filling meal that’s rich in nutrients.

Quinoa: This gluten-free grain is high in fiber, magnesium and iron. All things essential for a healthy and functional diet. Magnesium and iron are harder to find in most regular diets, but they are necessary for building strong, healthy bones and collagen production. Quinoa is great for people with diabetes because these minerals also help to regulate blood pressure and blood sugar. - 1 cup of quinoa
- 1 lb of salmon cut into 4 portions
- 1 tsp of salt
- 1 tsp of pepper
- 1 tbsp minced garlic (+extra to season)
- 1/4 cup of lemon juice (I use 3 lemons typically)

4. Mix garlic and lemon juice together and pour into the pan and let sizzle for another 3 minutes. (I usually squeeze and extra lemon slice or two over the tops of the salmon)

You guys! This is so freaking easy AND delicious I’m going to add this into my regular rotation! The chicken on it’s own is amazing and flavorful, this would be awesome for meal prepping! 
3 chicken breasts⠀
1 yellow onion, diced⠀
4oz can diced green chiles⠀
4 oz cream cheese⠀
Desired seasonings⠀
⠀
🌶 Dump everything into the pressure cooker and cook on poultry setting. If using a slow cooker cook on high for 3-4 hours or on low for 6-8 hours depending on your slow cooker.⠀
⠀
🌶 Once the chicken is ready, shred with forks and stir everything together. ⠀
You can eat it now as is or you can make taquitos as seen above. Recipe below 😊⠀

🌮  Next, lightly spray a piece of aluminum foil with olive oil spray and place it inside of the air fryer. Add 2 tablespoons of chicken to a tortilla and sprinkle with a little cheese, roll tightly and place seam side down into the air fryer. ⠀
🌮 Repeat and arrange taquitos so they are not crowded in the air fryer. ⠀
🌮 Cook on 400F for 6 minutes. Add a few extra minutes if you want them extra crispy.⠀
⠀
Serve with your favorite salsa and dig in!⠀

I was looking for something to bring to a house-warming party and found this yummy recipe from @paleorunningmomma. Not only were the cookies healthy and delicious, but the homemade jam on top made them extra special and personal. These cookies take a little extra time but they’re worth it! 
Jam (make first and let cool while you make the cookies):
- 3 cups of fresh pitted cherries
- 3 tbsp of water
- 1/4 cup of fresh lemon juice
- 1/2 cup of maple syrup
- 3 tbsp of chia seeds

Heat/stir everything except the chia seeds in a sauce pan until ingredients come to a boil. Add chia seeds in last and turn the heat to medium. Stir for another 12 min. Remove from heat and add mixture to a blender to smooth out the jam. 
Lemon Almond Cookies
- 1/4 melted coconut oil
- 3 tbsp of almond butter
- 3 tbsp of fresh lemon juice
- 5 tbsp of maple syrup
- 3 tbsp of lemon zest
- 1/2 tsp of almond extract
- 1 cup of almond flour
- 1/4 cup of coconut flour
- 1/2 tsp of baking soda
- 1/4 tsp of salt

In one bowl combine dry ingredients (flours, soda, salt). Set aside and in another bowl combine the rest of the ingredients. Add the dry ingredients to the wet mixture and mix together until dough is formed. Refrigerate for 10 min. 
Remove from fridge, roll dough into small balls and place on a baking sheet. Flatten each dough ball lightly with your thumb so an imprint is formed. Add a small amount of jam to each cookie and bake @ 350 for 11 minutes.

Mix all the ingredients in a bowl and flatten out into a square baking dish. Bake for 10-12 min @ 350 degrees. - 1 1/4 cup of oats (gluten free optional)
- 1/2 cup vanilla protein powder
- 1/4 cup of maple syrup
- 1/4 cup of creamy almond butter
- 1 egg white
- 2 tbsp of coconut oil
- 1 cup raw cashews

skinnyrecipes Cauliflower Gnocchi Poppers

Cauliflower gnocchi is one of my favorite easy dinners to make on a weeknight, but it also can double as a great appetizer for parties or wine nights. When I'm feeling lazy I use the frozen bag of @traderjoes gnocchi! It gives the satisfaction of a pasta dish, but only counts for less than half the calories! 
By baking the gnocchi instead of cooking it regularly as pasta, they turn out to be perfect appetizer poppers. I am always making this dish differently and with a variety of sauces, so when serving them as an appetizer I figured it was best to give sauce options! 
Cauliflower Gnocchi: - purchased from @traderjoes and cooked on a baking sheet @ 450 for 25 min

Skinny Pesto Dipping Sauce:
- 2 1/2 cups of basil
- 2 tbsp of minced garlic
- 3 tbsp of lemon juice
- 1 tbsp of olive oil
- 1/2 tsp of salt
- 1/2 tsp of black pepper
- 4 tbsp of Parmesan cheese (optional)

Fresh Marinara Dipping Sauce:
- 3 1/2 cups of crushed tomato or tomato puree
- 3 tbsp of minced garlic
- 3 tsp of oregano
- 2 tsp of dried basil
- 2 tsp of salt
- 1/2 tsp of black pepper
- 2 tbsp of tomato paste
- 2 tbsp of olive oil
- rep pepper to taste

Tahini Mayo Dipping Sauce:
- 2 tbsp of tahini
- 2 tbsp of light mayo or veganase
- 2 tsp of hot sauce
- 1 tsp of salt
- 1 tbsp of lemon juice
- 1/2 tsp of Chipotle seasoning
- red pepper chili flakes to taste

As you may have noticed, I make a lot of recipes with cauliflower, which means I usually have a lot of leftovers! Something I’ll eat it cold with hummus, but there are plenty of recipes that utilize these cream colored veggies in inventive ways! 
Cauliflower breadsticks are great to make for dinner or as an appetizer, and, like many other of my recipes, they’re SO easy! Just throw 1 head of chopped cauliflower in a food processor (I usually just throw in all the cauliflower I have). Once it’s finely riced/chopped dump into a baking dish. Bake the cauliflower for about 20 min @ 450 degrees. After letting it cool, put the riced cauliflower onto a paper towel and ring out and excess water/moisture. Then add it to a bowl with egg whites, mozzarella cheese, breadcrumbs and seasonings. 
Next, flatten the mixture on parchment paper on a baking sheet and bake @ 450 for 25 min or until crispy. Midway through cooking I usually take out the sheet and sprinkle extra parmesan cheese on top for flavor. 
You can easily make this without the eggs (sub cornstarch and a little water) or with a cheese substitute depending on your dietary needs :) Serve with marinara on the side

Makes 9 donuts
🍩 Preheat oven to 375 F⠀
🍩 Add the first 6 ingredients to a blender and blend until smooth. Stir in the chocolate chips with a spoon and pour 2 tablespoons of batter into each donut cavity.⠀
🍩 Bake for 15-17 minutes or until a toothpick comes out clean.⠀
Let cool for 10  minutes before removing them from the pan. Store in the refrigerator in an airtight container⠀

Low Carb Gluten Free Chocolate Chip Donuts! 😮 ⠀ ⠀ If you check my stories often then you know that I made these several days ago and posted about them there and well.. I got a TON of responses asking for this recipe. So, here it is! Oh and sorry it took me so long. I finally got Russie in his high chair and FINALLY had time to make these again to photograph and to type up the recipe. skinnyrecipes My healthier take on a classic Shepard’s pie: ground sirloin cooked in a braiser with spicy harissa, chopped mushrooms and split cherry tomatoes and topped with a creamy cauliflower mash.  Top the mash with a sprinkling of grated Parmesan and smoked paprika and bake under the broiler until caramelized and bubbly.  Spoon leftovers into individual glass containers that can be popped right back into the oven for easy reheating.

When I first tried the buffalo cauliflower from @gmweho I became obsessed, and have been trying to make my own ever since. It’s tough but I think I came pretty close by using the cashew nacho cheese from @traderjoes 
I just add some cauliflower to the stovetop with a little olive oil, salt and pepper and sauté until it turns brown on the edges, then add in the cashew nacho cheese and a little hot sauce and chipotle seasoning! The end result is SO delicious (I honestly surprised myself). It was so easy to make, and at only 30 calories per tbsp of the cashew nacho cheese, this dish is easily under 200 calories whether you want it for an appetizer or dinner!

skinnyrecipes Stuffed Spaghetti Squash

I’ve never attempted spaghetti squash before so this was a test run but I’m always looking for pasta substitutes and different ways to cook them so I was excited to try this out! 
Yellow squash offers a substantial dose of fiber (to assist with healthy digestion), magnesium (to help your bones), and Vitamin C, (to help your immunity). Not only is it a great alternative to pasta, but it offers so many nutritional benefits. I filled my spaghetti squash with quinoa and veggies which made for the perfect filling and nutritious dinner. 
The only thing to note is that yellow squash is extremely hard to cut in half. At first I thought maybe it just wasn’t ripe enough but my friend told me no, you just have to really work at it. While my squash cooked in the oven I cooked the quinoa and veggies on the stove. I tossed  cauliflower and zucchini in olive oil/salt and pepper and pan seared that until golden while also cooking corn, black beans and a bell pepper in a separate pan. 
This dish turned out so much tastier and more filling than I would’ve thought and I’m so excited to try it again! 
Squash: 
Cut in half and bake at 425 (face down on baking sheet) for 30 min

Filling: - Quinoa
- Pan-cooked cauliflower and broccoli
- Pan-cooked black beans, bell pepper and corn

Starbucks has already released their Pumpkin Spice Latte for the fall season! (Cue girl scream!) Fall is my favorite season, so anything pumpkin is fine with me and very encouraged! If you’re like me, you’ll want to eat and drink it alllllllll, but without the added waistline inches. Starbucks Pumpkin Spice Latte packs 380 calories into a grande cup. It also contains 14g fat (8g saturated) and 52g carbs (50g sugar) when made with whipped cream. Cut the cream and you save 70 calories and half the fat (but not the sugar). Here’s a version you can make yourself to help ease the guilt this fall season:

- 1 cup almond milk (to reduce the calories by half, use unsweetened almond milk)
- 2 tablespoons pumpkin puree
- 1 tablespoon coconut sugar (optional maple syrup or honey)
- 1/2 teaspoon pure vanilla
- 1/2 teaspoon pumpkin spice, more to taste
- 1/2 cup strong brewed coffee or 2 shots espresso
☕️Directions: 
1. Whisk together all ingredients in a blender and pulse until well combined.
2. Add to a pot over medium-low heat. Heat just until simmering.
3. Add hot coffee or espresso, stir to combine.
4. Serve with a sprinkle of nutmeg on top.
