simplerecipe Banana Bread w/ Chocolate Chips by @vegaliciously ❤️ how easy this recipe is to make. Vegan magic. .
INGREDIENTS:
• 1 1/2 cups bananas (the riper the better)
• 1/2 cup maple syrup
•4 tbsp coconut oil
•4 tbsp plant based milk
•1 tbsp apple vinegar
—
•3/4 cup oats
• 1 1/3 cups whole-wheat flour
•4 teaspoon black sesame seeds
•2 tbsp crushed cashew nuts
•1 tsp baking soda
•1/2 teaspoon baking powder
•1/2 teaspoon cinnamon
• a pinch of salt
—
•1 banana
METHOD:
1. preheat the oven at 180 degrees C/ 350F. 
2. With a mixer process all the wet ingredients until well mixed.
3. Whisk all the dry ingredients and add to the wet mixture.
4. With a spatula whisk until perfectly combined. 
5. Oil a cake pan and pour the banana bred into it.
6. Cut in half the banana and press it on the top.
7. Bake in the middle of the oven the first 30 minutes at 180C /350F and the remaining 20 minutes at 150C/300F.

I’ve been meaning to share this super moist, super easy to make loaf for a while now! I whipped these up to share with grandma over tea & she LOVED it 😍 - so it receives granny’s thumbs up 👍🏼 There’s just something magical about the simple combination of lemon, coconut & blueberry that make this loaf so so delicious! 🤤 ⁣

I baked these in my Ninja Foodi machine using the bake function & it turned out fabulously golden on the outside & super soft on the inside! I’ve also tried making this in the oven & it works as well so take your pick ☺️⁣

Here is the recipe ➡️⁣
⁣
EASY 5-INGREDIENT LEMON BLUEBERRY COCONUT LOAF (vegan, oil-free) ⁣
⁣
MAKES: 2 mini loaves or 1 medium loaf⁣
⁣
INGREDIENTS:⁣
✅1 ¼ cups self raising flour⁣
✅ ¾ cup sugar⁣
✅ ¾ cup full-fat coconut milk⁣
✅ Juice of 1 lemon (~ 2 tablespoons)⁣
✅ ½ cup frozen blueberries⁣
⁣
**Optional: zest of 1 lemon, 1 tsp vanilla essence ⁣
⁣
METHOD:⁣
1. Line two mini loaf tins or one large loaf tin with non-stick paper. If using an oven, preheat the oven to 160 degrees Celsius, fanforced⁣
2. WET MIXTURE: In a bowl, combine the coconut milk and lemon juice – set aside to let the coconut milk “curdle” for a few minutes⁣
3. DRY MIXTURE: In a separate bowl, combine the flour & sugar until mixed.⁣
4. Pour in the wet mixture into the dry and fold gently until combined⁣
5. Gently fold in the frozen blueberries⁣
6. Transfer the batter into the prepared tins⁣
7. Bake in the oven for 20 minutes or 35 minutes if using a bigger tin. Otherwise I cooked mine on bake setting in my Ninja Foodi for 15 minutes at 160 degrees.⁣
8. Allow the loaf to fully cool before serving ⁣

First, steam napa cabbage for 5 minutes. Then, in a food processor, combine:
1/2 cup pecans
1/2 cup carrots
1/2 cup zucchini 
1 cup tomatoes 
Half of a jalapeño (or to taste)
Handful of cilantro 
1/3 cup red onion 
1 tbsp lemon juice 
Seasoned with: pepper, 2 garlic cloves, pinch of cumin, .5 tsp paprika, 1/4 tsp turmeric, 1/2 tbsp agave and .5 tbsp tamari sauce.
To make the dip, combine in a blender: 1 tbsp tahini, .5tbsp peanut butter, 1/2 cup red cabbage to make it purple, 1tbsp lime juice, pinch of ginger powder, garlic and onion powder. Salt and pepper to taste, 1tbsp water if needed.

this recipe is  amazing--super moist and spongy. I can guarantee you cannot stop at 1 slice.
I make them as mini loafs but the recipe  can be doubled to make a 6 inch cake.
(check out my very technical boomerang to see how spongy the cake is😂😂)
Recipe
1/4 cup +2 tbsp oil
1/2 cup brown sugar(add more if you like it sweet)
1 egg🥚
1/2 tsp bicarbonate of soda
1/2 tsp baking powder
1/2 cup plain flour
1 cup carrot grated (1 used 3 small carrots)
1/4 cup walnuts chopped
Optional-- 1/2 tsp cinnamon pwd
Method
Beat the oil and sugar together.
Add egg while mixing.
Sift the dry ingredients, mix
Then add carrots and walnuts.
Give a proper mix.
Bake at 180C (fan forced) for 30 to 40 minutes
Cool and enjoy.

simplerecipe I had absolutely no plan for dinner tonight, nothing thawed out, which usually defaults to burgers...but it’s raining here soooooooooo I decided to just wing it and make my own version of shrimp scampi. No recipe, just threw things together! I veered a little bit from a classic scampi recipe to incorporate the scallions I have to use up from my CSA, but otherwise kept the recipe very simple and traditional

I cooked some pasta, and while it was cooking I chopped up some scallions. I heated about 2 tsp of olive oil in a skillet and adding minced garlic and the white ends of all the scallions and sautéed until fragrant. Then I added about 1 Tbs of butter (I use Pureblends avocado butter...only 2 smartpoints per Tbs). Once that melted I added my shrimp, salt and pepper and some white wine (about 1/2 cup). I sautéed until shrimp turned pink on both sides (about 2 mins) then added the green parts of the scallions and some fresh chopped parsley. .

When my pasta finished cooking I drained it,  reserving some of the liquid. .

After pasta was drained I topped with the shrimp and scampi sauce, and added about a 1/4-1/2 cup of the leftover pasta water to stretch the sauce a little bit and help coat the pasta and prevent it from being dry. .

I topped with shaved Parmesan cheese and served!👌🏼

*2/3 cup your choice GEORGE’S®️ Bloody Mary Mix *2/3 bottle Mexican Lager Beer - approximately 4 ounces each cocktail
*lime for garnish

For the Micheladas •	Put Old Bay®️ Seasoning on a small, shallow plate. •	Run a lime wedge along the rim of each beer glass and immediately dip them into the Old Bay®️mixture to coat. •	Fill each glass with ice. simplerecipe Quesillo de auyama Ingredientes:
•1 lata de leche condensada •Misma cantidad de leche líquida •240gr de auyama cocida
•6 huevos
•1 cucharada de vainilla
•1 cucharada de canela
•150gr de azúcar para el caramelo.
Elaboracion:
Colocar el azúcar en el molde donde va a hacer el quesillo y ponerla a fuego medio para hacer el caramelo hasta que se disuelva. Luego dejarla reposar.
Poner todos los ingredientes en una licuadora y colar esa mezcla para eliminar las fibras de la auyama.
Poner esa mezcla en el molde y cocinar por 40 a 60 minutos a 170°C, pinchar con un palito si sale limpio esta listo, dejarlo reposar antes de desmoldar.

I used 1 cup frozen mango, 4 large fresh oranges, 1/2 lemon, 1 cup of water and 2 tbsp maple syrup. ⁣

Juice the oranges and lemon. Pour tinto a blender jug,  Add mango and maple syrup and blend until pureed. Add water if needed to thin out the mixture into a juice. Enjoy!⁣

Burrata seems to be made of cow's milk although traditional mozzarella is made of buffalo milk, which gives it that chewy stretchiness.  Burrata is however a treat and I make no apology for it.  A little of what you love is good for the soul, and this is dressed with healthy ingredients.

Buffalo Chicken Meatballs (stuffed with blue cheese!) | Makes 24

INGREDIENTS ➡️Meatballs:
▫️1lb / 500g Ground Chicken (if you can’t find ground chicken, pulse 500g boneless/skinless chicken thighs in a food processor to mimic mince)
▫️1 cup / 250ml Buffalo Sauce, or as needed (homemade buffalo sauce recipe on the blog, link in bio)
▫️5oz / 150g Firm Blue Cheese
▫️3/4 cup / 45g Panko Breadcrumbs
▫️1/2 cup / 35g Freshly Grated Parmesan
▫️1/4 cup Finely Chopped Fresh Parsley
▫️1 medium White Onion, grated
▫️1 clove of Garlic, grated or minced
▫️1 Egg
▫️1 tsp Worcestershire Sauce
▫️1 tsp Salt

Place on top of meat. Once each scoop of meat has a blue cheese ball on top, roll each ball into a meatball shape, making sure the blue cheese is completely wrapped. 4️⃣Spray the meatballs and pop in the oven at 390f/200c for 15-20mins or until golden and the cheese just starts to leak out. 5️⃣Using a fork, dip the meatballs in the buffalo sauce or, combine all together in a bowl/saucepan. Rest on wire rack. Drizzle with sour cream, sprinkle with chives and pop in a celery stick. simplerecipe One of our favorite banchan dishes is the sweet and savory gamjajorim (braised potatoes). I love potatoes every which way but this is a must try at home! Here’s what I did:
.
Ingredients:
3 russet potatoes, peeled and cut into 1in chunks
1/2 onion, cut into 1x1in slices
2 garlic cloves, peeled whole
2 tbs soy sauce
1 tbs sugar 
1 tsp sesame oil 
1/2 c water
Cooking oil
Roasted sesame seeds for sprinkling .
1. Add cooking oil to wok or skillet and heat on medium high heat until hot.
2. Add garlic, onion, and potatoes and stir fry until edges get a little charred and potatoes get translucent 
3. Add water, soy sauce, and sugar. Turn heat down to medium, cover and let simmer for a few minutes until potatoes are cooked thru.
4. Open lid and cook off water and sauce slightly thickens. 
5. Turn off heat and add sesame oil. Mix well.
6. Plate and sprinkle sesame seeds on top.

simplerecipe Mini Turkey Meatloaf's w/Salsa & Cheese ...just 5 simple ingredients!

I made these 3 times this past week, they are just that good.  We always opt for a spicy salsa to give it an extra kick, but can be made to your preference.

1 lb. 97/3 Extra Lean Ground Turkey 
1/2 Cup Chopped Onion
12 Crushed Ritz Crackers
1/4 Cup Shredded Cheddar Cheese + extra for topping 
1 Cup Salsa (any kind) + extra for topping

Mix all ingredients (minus topping portions). Divide into equal portions & press into sprayed muffin pan.  Place on foil lined cookie sheet to avoid any spill over mess! 
Create a divot on the top of each with the back of spoon (toppings will go here after cooking). Bake @ 400° for 20-25 minutes.  Remove & place a dollop of salsa on each, sprinkle with cheese & return to oven for 2-3 minutes until cheese melts.

Serving Size: 3 Pieces
336 Calories, 44.4g Protein, 14.7g Fat, 7.5g Carbs

Tip 💡: Equal distribution is approx. 3 ounces.  Exact macros depend on exact ingredients.

simplerecipe Many think that I only help others with fitness. What I love about the company I partnered with is diving into nutrition. When I started my journey I often thought it was all about fitness that to restrict, eliminate and eat the same thing over and over. .
That was the experience I had over the years. It's what I learned but when I found this nutritional program it not only help me see that I don't need to eat the same thing, I also can have some wine or a brownie once in a while.

What I noticed when I started to see and track my nutrition I was over eating on certain macronutrients and I didn't balance it out. This system gives me a guideline for ALL the food groups and I can EAT. I determine what food I want to eat. .
So when the opportunity came to be certified I jumped on it! Why? 
Because I truly believe knowledge is important. You need to constantly be learning to grow. .
What does this mean? .
I'm not a nutritionist, and not a doctor but I am certified in understanding how to assist my clients with this nutrition program. Provide exceptional advice and get them to their goals. .
Health is 90% nutrition and no you can't workout a bad nutrition. .
This portion control, macronutrient dense, and a sustainable lifestyle of eating is truly a healthy approach.

The video based nutrition program is for adults, who want to learn to eat properly, to loose weight, to maintain, for kids to understand nutrition, pre and post natal because health starts right away, for older people that want to fuel their bodies. When I went to start blending my blender sparked and made this super loud popping noise. And that’s the end of my baby 😫😫 Anyone have any good blender recommendations?? •

For this bowl I took about 2 cups of spinach blended it with unsweetened almond milk ( + some ice). Then you mix it with desired greek yogurt amount!! I wish i had pineapple to make it more tropical, but the bananas and blueberries still did the trick. I chose to also add some natural @tedpeanutbutter with coconut flakes and some @fiberone cereal!! Soooo delicious. Have a great monday everyone 🤗🤗

These muffins are not “healthy” in the ground flaxseed - no flour - applesauce substituted for oil kind of way. But I did swap oats for some of the flour and added buttermilk for tenderness and flavor. And the blackberries add a nice anti-oxidant rich sweetness to the batch!⁣
