rdapproved I came home yesterday from colorado- where magic mushrooms aka psilocybin mushrooms aka shrooms have been decriminalized. sales are still illegal and you have to be at least 21 to be let off the hook. but hey we’re moving in a good direction!! this post is actually about regular mushrooms- the ones we eat. they used to be my favorite vegetable until I realized that they aren’t even vegetables! technically mushrooms aren't even plants. they are a special type of fungus. they belong to an entirely different biological classification and may contain nutrients (like ergothioneine) not made anywhere in the plant kingdom.

a nutrition label might just say mushrooms have some carbs, some protein, some b vitamins... but that’s about it. what’s not being said is that mushrooms contain a large array of myconutrients that may boost immune functions, fight inflammation and increase antibody production. not to mention they make (organic, wild varieties)vitamin D which a lot of people are neglecting these days.

lately i’ve noticed a super positive shift in my digestion with this variety my sister got from @mile_high_fungi at the farmers market in Denver. it has mushrooms we usually see as powders or coffees like lions mane, maitake, shiitake, and others like phoenix oyster, pioppini, nebrodini, and king trumpets

i’m already missing the fresh air and green EVERYWHERE of Colorado. and the sunday farmers market. and of course my running crying laughing hyper moody nieces and nephews. i’ll be back soon!! (swipe to see what was in my bowl 👉🏽👉🏽)

Take FAT for example 💁‍♀️ It’s debatable how much fat adults need but recommendations are between 20-35% of intake. Adults on whole foods, plant-based diets are typically on the lower end of this range or even below it as whole plant foods are usually low in fat 📉 Babies however need to get 35-40% of their calories from fat for proper growth and neurodevelopment 🧠 Children also need a higher fat intake, in the range of 30-35% of calories. However, 28% of toddlers (regardless of diet) do not get enough fat. This number may be even higher in plant-based kids, again, do to the low-fat nature of a plant-based diet. ——————————————————————
We recommend parents focus on including good sources of fat at every meal. Our favorites include nut butters, seeds, olive oil, avocado, olives, coconut, açaí, and soy foods 🥑  Need meal ideas? 1 pm - Lunch: kiwi, leftover (non-spicy) potato vindaloo from @testkitchen + toast with sunflower butter 🌻 Ate most of the toast, all the kiwi, a bite or two of the vindaloo.
4:45 pm - Snack: blueberries + @cascadianfarms purely Os.
6:30 pm - Dinner: @tolerant green lentil spirals with tomato sauce, avocado, roasted beets + tomatoes. Sprinkled on a little vegan parm 🧀 after I snapped the pic. He ate ~1/3 of the pasta, all of the avocado and tomatoes, and spit out the beets 😝

rdapproved I escaped the hustle and bustle of normal life for my (hopefully) yearly trip to visit my sister and her family in Colorado. i’m staying at her place and the last thing I want to do is make it harder on their family just cause I eat plant-based. if you’re not vegan but have a family member who’s vegan and frequently freak out because you don’t know what to serve your vegan loved one, hopefully this can give you some relief.

I don’t ask my sister (or anyone, actually) to make anything specially vegan for me. that’s the first thing. if u have vegan guests who demand you make them something especially vegan at YOUR home, there’s a bigger issue here lol. if she wants to be the only one in the kitchen to make a special dinner for the family that’s not vegan, she’ll just leave the sides out for me to put together or she’ll prepare the same dish as she does for everyone else but just not put the meat dish she made on top.

i just asked her what advice she would give to meat-eating hosts of plant-eating guests and she said: “just treat it like it’s an allergy and don’t make a big deal about it. offer them anything that you are serving but you don’t have to bend over backwards to make them food. i’ll ask ‘this is what we’re having, is there something you can eat? if not can I get you something else?’” for example, this was basically the same as what everyone else was having minus the meat that she cooked. rice, tomatoes, bell peppers, beans (on the bottom), avocado, lemon juice (later I threw on some nutritional yeast I bought to have here haha). delicious, nutritionally rounded, and not a stretch from what was already in the kitchen! thank you @breitenbach_babies for being the best host ever all the time ❤️❤️

💪🏼 1/2 cup of rolled oats + 3 ounces of egg whites cooked together (microwave in increments of 30 seconds, stirring in between), + I stirred in @pb2foods to oats, topped with a scoop of my currrent favorite nut butter @kweenandco + fruit of choice = full for hours ✅ ⁣

Recognizing resistance in my life has been significant (in aspects other than food). I'm learning to reintroduce foods I was previously averse to and approaching them with a NEUTRAL mentality which allows me to truly taste and potentially enjoy the food.

I used to be SO resistant to these cruciferous devils. I grew up hating asparagus and honestly closed myself off to them. . Recognizing resistance in my life has been significant (in aspects other than food). I hear this phrase being tossed around so casually, “I EARNED this meal” or “you earned it!” I’ve  probably even said these phrases when my relationship with food was rocky. As much as there’s a sense of pride in that statement, there’s equally a sense that eating that food eaten at other times may not be “deserved.”

. 🌿Now this doesn’t sit well with me. The concept of “earning” food we eat, tells me it’s conditional on the rest of our behaviors for that day.

. 🌿This message also tells me there’s a transaction that has to happen before we eat. The message I hear is “In order for me to eat_____ at my next meal, I must exert _______amount of: [energy/discipline/focus/consistency etc]

. 🌿This isn’t how biology works. Our body has systems in place to keep us alive, even if we are acting transactional with food. “Calories in, calories out” is lazy science, and doesn’t actually represent the complexity of human biology. Our bodies may slow or increase our metabolism, it may store or excrete nutrients when needed, or it may have hormonal imbalances that change body composition. I could keep going, but what I want to note is: all of it, is the gift of being alive.

🌿Imagine if we said that about another basic need, breathing. Say we are making our way up a hill, do we hold our breath until we get to the top? Then once we are at the top take a bunch of huge breaths and say “I’ve EARNED this breath.” No, because that’s ridiculous, and also because breathing isn’t socially associated with the size of our bodies.

. 🌿We have to fuel ourselves ALWAYS. Even when we are resting. Even when we don’t like what our body looks like. Even when we are accepting and okay with how our body looks. Even if we are being transactional with our bodies.

Making a healthy dinner bowl can make dinner super easy! This week we actually had some kind of simple “bowl” for dinner each night⁣ (and we didn’t even mean to do that haha)
Monday: rotisserie chicken with @traderjoes chimichurri rice, cauliflower rice, peppers, onions and salsa verde⁣
Tuesday: Greek bowls⁣
Wednesday: Taco bowls⁣

rdapproved COLD BREW FROYO POPS ☕️ Totally acceptable way to get in some caffeine off the morning, right? I made these using @siggisdairy NEW coffee flavored yogurt, which is naturally flavored with cold brew and has all the right ingredients 💯(13g of protein and only 5g of added sugar!) Full recipe below 👇🏼
Recipe:
Two 4.4 oz containers @siggisdairy coffee yogurt 
2 tbsp @siggisdairy vanilla yogurt 
1 tbsp cashew butter 
1/2 cup coffee (1 tbsp instant coffee with boiling water)
3 tbsp pure maple syrup
Optional: melted dark chocolate to top 
Whisk everything except the chocolate until smooth. Pour evenly into 5 ice cream molds and shake well so there are no bubbles. Freeze for at least 5 hours. Remove from molds and drizzle with melted dark chocolate.

Last nights quick week night dinner is salmon!! I always recommend consuming a portion of fish (3-4 oz) a couple times a week because it’s an excellent source of high quality protein and full of heart healthy fats otherwise knows as omega-3s. It also cooks very quickly and is easy to prepare. My palms would become sweaty. My heart rate would skyrocket and sometimes I wondered if I was still breathing or not. 😨⁣

Growing up I was always known as the “shy guy”. The one who never wanted to speak out in public. The guy who always stayed quiet and sat in the back of the class. The kid who had that squeaky voice and would look like a ghost if he had to give a presentation. 🙈⁣

Believe it or not that was me. I struggled with my confidence growing up. I actually envied others who always looked so natural and calm when public speaking. 😐⁣
⁣
I knew things had to change and the only way for me to get better was to actually work on it! So over the years I worked on overcoming this fear on my own, but nothing was like what I experienced the past two days! 🤗⁣
⁣
I was in a room full of lawyers and I was the only healthcare professional in there! We were all there to work on our public speaking skills. Can you imagine how I must’ve felt? 😵⁣
⁣
I was terrified! When I first went up I looked like a deer caught in headlights. 😳 I got roasted, but so did everyone else. I realized that if you aren’t willing to fall then you aren’t trying hard enough. 💯 ⁣
⁣
We were all individually coached by a world class internationally acclaimed speaker and it was unlike no other experience! ⁣
⁣
I realize that we all need coaches in our lives. Even pro athletes have coaches and that’s what separates the major leagues from the minor leagues. 👌🏼⁣
⁣
I’m so glad I attended this event because I’m much more confident now than I have ever been. Let your faith be greater than your fear! 🙌🏼⁣

Today was insane therefore we modified our meal plan a little bit this week. Check out this super-fast and #healthydinner that is loaded with #protein and #fiber (#chickpeas #garbonzobeans thank you @eatbanza pasta)!! 🤤

Serves 3-4
-1 package Banza pasta (I used angel hair)
-2, 6-oz. cans canned wild salmon
-1 medium zucchini
-1 medium onion
-1 lemon
-3 cups fresh baby kale
-Parmesan cheese on top!
-Olive oil and avocado oil/butter
🍽 Boil pasta according to box directions, lightly toss in olive oil and set aside. In a large saucepan, sauté the sliced onion in avocado oil or butter under tender. Add zucchini and sauté on medium heat until veggies are cooked to your liking. Add cooked pasta, salmon, kale and juice from 1 lemon. Season with salt and pepper. Lightly mix together and cook 3 minutes. Drizzle olive oil and add shredded Parmesan on top. Enjoy!

rdapproved This bowl of Chickpea ‘Meatballs’ and Pasta was last night’s dinner and I’m sitting here wishing we had leftovers 🙃Easy to make and pairs perfectly with saucy pasta or zoodles 🍝 I used a whole wheat rotini with @raoshomemade marinara and grated parmesan, but you can swap nutritional yeast to make it vegan!🧀👇🏼
Chickpea meatballs:
1 can chickpeas, rinsed and drained
1/2 cup oat flour or bread crumbs
2-3 tbsp of water (enough to make the mixture sticky)
1 tsp garlic powder 
1 tsp dried parsley
1 tsp dried basil 
1/2 tsp crushed black pepper
1/4 tsp salt
2 tbsp olive oil, for cooking
Heat a cast iron skillet or non stick pan with about 2 tbsp olive oil. Blend the chickpeas until they reach a flour like consistency. Add to a bowl with the oat flour and spices and mix well. Add water by the tbsp until a sticky mixture forms. Roll into balls and cook on medium heat until brown on all sides- keep flipping every 2-3 minutes.

1/2 avocado 
1 small frozen banana
2 TBSP hemp seeds
2 TBSP collagen peptides

2 tsp cinnamon
1 tsp vanilla extract
1/2 tsp turmeric

rdapproved I came home yesterday from colorado- where magic mushrooms aka psilocybin mushrooms aka shrooms have been decriminalized. sales are still illegal and you have to be at least 21 to be let off the hook. but hey we’re moving in a good direction!! this post is actually about regular mushrooms- the ones we eat. they used to be my favorite vegetable until I realized that they aren’t even vegetables! technically mushrooms aren't even plants. they are a special type of fungus. they belong to an entirely different biological classification and may contain nutrients (like ergothioneine) not made anywhere in the plant kingdom.

a nutrition label might just say mushrooms have some carbs, some protein, some b vitamins... but that’s about it. what’s not being said is that mushrooms contain a large array of myconutrients that may boost immune functions, fight inflammation and increase antibody production. not to mention they make (organic, wild varieties)vitamin D which a lot of people are neglecting these days.

lately i’ve noticed a super positive shift in my digestion with this variety my sister got from @mile_high_fungi at the farmers market in Denver. it has mushrooms we usually see as powders or coffees like lions mane, maitake, shiitake, and others like phoenix oyster, pioppini, nebrodini, and king trumpets

i’m already missing the fresh air and green EVERYWHERE of Colorado. and the sunday farmers market. and of course my running crying laughing hyper moody nieces and nephews. i’ll be back soon!! (swipe to see what was in my bowl 👉🏽👉🏽)

Did you you know your lungs, kidneys, and liver take care of all detoxing that your body needs on a daily basis? Unless you are eating tide pods or inhaling exhaust fumes or something, you don't need to pay money to detoxify your body.

They make dinner fast and easy to make during the week. This dish has @traderjoes frozen shrimp and cauliflower gnocchi🍤. .

Serves 2
Directions: Defrost 10-15 shrimp in the refrigerator the night before cooking. In a large skillet, heat 1 tsp of olive oils with a couple cloves of minced garlic and a sprinkle of red pepper flakes. Once fragrant, add shrimp and season with salt and pepper. Add a splash of white wine to the skillet. Cook until shrimp turns pink. In another pan, heat 1 tsp olive oil. Add cauliflower gnocchi and 1 cup broccoli. Cook until browned on the outside. Add 1/2 a jar of marinara sauce. Heat until warm. Serve with fresh basil and more red pepper flakes.
