As easy as making a dressing for the veggies: mix 2 tbsp balsamic vinegar + 1 lemon juice + 1 tbsp olive oil + sea salt + 1 tsp raw sugar + fresh pepper + fresh thyme. Add this dressing to the veggies and roast them at 350F for 20 minutes. Once ready, peel de garlic and mix everything in the blender until the sauce is ready. If necessary add 1 tsp of raw sugar. This time I used tomatoes, garlic, onions, sweet peppers and chilly peppers

Tan fácil como hacer un aderezo: Mezcla 2 cdtas vinagre balsámico + jugo de 1 limón + 1 cdta aceite de oliva + sal marina+ pimienta fresca + romero fresco. Baña los vegetales con este dressing y hornéalos por 20 minutos a 350F. Una vez listos, agrega todo en la licuadora y listo. De ser necesario agrega 1 cdta de azúcar cruda. I am really enjoying lakes in here, they are safe and so clean... ‘cause honestly in my hometown of Costa Rica I can’t swim in any lake, probably I will be hunted by a crocodile! 😂😣🙅🏽‍♀️🐊 •
So, I have been doing some research and yesterday I discovered this place! Such a nice water to swim in here! 🙌🏼 But as usual I get hungry pretty quickly so I made this very convenient SALAD IN A JAR to munch on •
I like “salads in a jar”, they are so easy to carry around. To make them you just need to put layers of your favorite food contemplating to include lots of colors 🌈 For example, this time I did it this way:
Carbs: brown rice
Protein: sprouted raw lentils 
Colors: purple onion, yellow pepper, tomatoes, arugula and cilantro
Healthy fats: dressing: mixing tahini + honey mustard + lemon juice + little water + garlic, salt and pepper 
You can carry it around anywhere and when it is time to eat, spread the dressing and shake it spreading the dressing all over. You can eat in the jar or put it in a plate

rameliving Guys I just moved to a new home! Can you believe it?! I feel so happy to be settling in a place for at least some months. It really feels good. Honestly, been a full time traveler is amazing in so many levels and I feel blessed of this stage of my life, non the less been moving so much was starting to make me feel a little unground too. For me is things like having my own kitchen to prepare all the food I love to eat to nourish my body and soul 🥰 is a simple way to feel very homie, grounded and well balance. So, as my first breakfast at my new home I did this vegan carrot pancakes, here the recipe in case someone wants to try it (they are amazing!): -makes 2 portions-

Ingredients:
1 banana 
3/4 cup oatmeal 
1/2 + cup unsweetened almond milk
1 tsp pumpkin spice (or cinnamon)
1 tbsp flaxseed meal 
pinch of salt 
1/2 cup grated carrot

Toppings:
2 tbsp chopped walnuts
2 tbsp creamy almond butter
2 tbsp Maple syrup 
Preparation:
1. Blend everything except the carrot
2. Pass it to a bowl and add the carrot
3. Make small pancakes in the pan
4. In another pan sauté the walnuts until crunchy
5. Once ready, make a 🥞 towel, add 1 tsp of creamy almond butter and a tiny bit of maple syrup ... have a beautiful day everyone’ 😘 ... ••• ESPAÑOL ••• Pancakes veganos de zanahoria

4. En otro sartén saltea los nueves hasta que estén doraditas (max 2 minutos)

Guys I just moved to a new home! Can you believe it?! I feel so happy to be settling in a place for at least some months. It really feels good. Honestly, been a full time traveler is amazing in so many levels and I feel blessed of this stage of my life, non the less been moving so much was starting to make me feel a little unground too. This is a lady who is a giver and shares whatever she has to offer, anytime: sometimes is food, other time is money or mostly what she gives is her time. She is the one who is constantly concerned about other’s people needs and well-being trying to do her best to lift them up

I have seen her putting a roof in other family’s house; taking a trip with a terminal patient just to fulfilled this person’s dream of traveling; dedicating her life to teach people with special needs and doing an amazing job at it. And the most beautiful thing to observe is that she do all of these things with a completely open heart, with no expectations or strings attached .

I have the blessing to meet this extraordinary person as the role of her daughter in this life and what a beautiful ride it has been. Why I talked about her today? Because yesterday was Mother’s Day in my home country of Costa Rica. I find that this days help remind us about the important things in life and for me celebrating such a warm and compassionate heart is what life is all about

Muy importante en esta parte hacer solamente una capa de chips. Los hornie por 20 minutos en total, pero a los 15 minutos les di vuelta. Listo! Quedan doraditos y crujientes. Los podes comer solitos o con alguna salsa como tahini 😊 •

This is one on my favorite dishes from my country and now that I am here my mom made it for me 🥰 .

It’s so yummy, the combination of sweet and salty make it so nice 👌🏼 to make it you just have to boil in water 3 large ripe plantains until they are completely cook and soft. Mashed them and set aside. On another pan cook 1/4 chopped onions + 1/4 chopped sweet peppers, add 1 cup cooked beans plus salt, pepper and a little cumin. Mashed them with a fork. Now in a Pyrex put one layer of the mashed plantain, one layer of the beans and last one layer of the plantains. Bake it for 10-12 minutes or until it turn a little golden

En un sartén saltear 1/4 cebolla + 1/4 chile dulce, agregar 1 tz de frijoles más sal, pimienta y una pizca de comino. Majarlos con un tenedor. En un Pyrex colocar una capa de plátano, seguida por otra de frijol y por último una más de plátano. Hornear por 10-12 minutos o hasta que se dore

1. Cook black beans until they are soft
2. Blend the beans with the water and salt
3. Pour in the pot and add cilantro 
4. When it’s ready to eat add the side dishes: rice, tomato, avocado and a little more cilantro .

I LOVE to use beans in my food preparations ‘cause they are sooo healthy! They are source of fiber, protein, iron and folic acid. Studies shows that the regular intake of beans is associated with a decrease in overall cholesterol, a decrease in blood sugar levels & a Increase in healthy gut bacteria 🦠👍🏼

Esto es un plato típico de Costa Rica llamado Sopa Negra y está hecho solamente de frijoles con especies. Es extremadamente fácil de hacer y súper rico! Perfecto para días de lluvia 🌧 
1. Cocina los frijoles hasta que estén suaves

3. Agrégalo de nuevo en la olla y agrega culantro 
4. Cuando esté listo agrégale los acompañamientos: arroz, tomate picado, aguacate y un poquito más de culantro .

rameliving ALOHA everyone! 🌺  Last Saturday I made this healthy version of banana muffins for the Meditation Workshop students and everybody loved them! So you might like them too 🥰 They are so easy to make! Vegan (egg free) & Oil Free .

Ingredients:
* 4 riped bananas
* 1/2 cup brown (unrefined) sugar * 4 tablespoons of water
* 1 teaspoon natural vainilla extract * 2 cup whole wheat flour
* 1 teaspoon baking powder
* 1/2 teaspoon salt 
Preparation 
1. In a bowl mix: mashed bananas + sugar + water + vainilla
2. In another bowl mix: wheat flour + baking powder + salt
3. Mix both

ALOHA! 🌺  Este sábado pasado que tuve el Taller de Meditación hice para mis alumnos esta versión de muffins de banano saludables y les encantó! Así que te podrían gustan a vos también 🥰 son veganos (sin huevo) y no contienen aceite! .

Ingredientes:
* 4 bananos maduros * 1/2 taza de azúcar Moreno o crudo
* 4 cdas de agua
* 1 cdta de extracto natural de vainilla
* 2 tz de harina integral * 1 cdta de polvo de hornear * 1/2 cdta de sal

Preparación 
1. En un bowl mezcle: los bananos hechos en puré (majados) + azúcar + agua + vainilla
2. En otro bowl mezclar: harina + polvo de hornear + sal 
3. Mezclar ambos 
4. Engrase una bandeja para hornear muffins y hornear a 350C: 12 min bandeja pequeña, 20 minutos mediana o 45 minutos bandeja de queque/pastel .

Yesterday was such a beautiful day at the Meditation For Beginners Workshop. I’m so grateful for each person that came and open their mind to this life changing practice. rameliving Yesterday I made this quinoa red salad for mom and she loved it, so you might like it too ❤️ Here is how I did it:
Quinoa Salad:
* 3 cups of red quinoa (you can use any color) * 1 cup chopped sweet pepper * 1/2 cup chopped red onion (I had only white) * 1 cup shredded carrots
* 1cup shredded raw beetroot * 1 tbsp ginger
* 2 tbsp fresh parsley 
Dressing:
* 2 oranges juice
* 1/2 lemon juice
* 2 tsp sesame oil
* 2 tbsp sesame seeds
* Salt & pepper 
Put a bed of organic lettuce, add the quinoa salad, add dressing and finish up with beautiful sprouts if you might have available. This salad is super high in #veganprotein, its super healthy, easy to digest and you can do it in just 10 min (add 15 minutes if the quinoa is not already cooked). Eating healthy is sooo easy & yummy! Enjoy your beautiful day!! _____________________________________

Ayer le hice esta ensalada roja de quinoa a mami y le encantó! Así que a vos también te podría gustar ❤️
* 3 ta de quino roja cocida (podes usar cualquier color)
* 1 tz de chile dulce picado * 1/2 tz de cebolla roja picada * 1 tz de zanahoria rallada
* 1 tz de remolacha rallada * 1 cda de jengibre fresco * 2 vdas de perejil fresco 
Aderezo:
* 2 naranjas dulces en jugo * 1/2 limón en jugo
* 2 cdtas de aceite de ajonjolí * 2 cdas de semillas de ajonjolí * Sal & pimienta

Pone una cama de lechugas orgánicas, coloca la ensalada de quinoa encima, agrega aderezo y termina con un poquito de alfalfa si tenes disponible. Amo porque esta ensalada es muy alta en proteína vegana y además se hace en 10 minutos (agrega 15 minutos más si tenes que cocinar la quinoa). Comer saludable es taaan fácil y rico!! Que tengas un lindo día!! .

This time a made a super easy 5 ingredients complete vegan meal: 3 vegetables with different color (roasted sweet peppers, tomatoes & arugula) + quinoa. For flavor I add cilantro, hot chili and the quinoa is mix with a little of coconut milk, turmeric, salt and pepper 👌🏼 ____________________________________________

Langtang Valley is just Heaven on Earth! really guys it is one of the most beautiful places I ever travelled 💙 Some weeks ago I had the amazing opportunity to do an intense 5 days trek to this valley. Some ingredients that gives this effect are vegan milk, avocado, banana, mango or raw zucchini. ~ Add some fiber! This will make you feel fuller longer. Some examples to add are flaxseeds, chia seeds, hemp seeds or celery. 🥑 This time a made two for the day. The green one was compose by spinach and kale + banana + almond milk + flaxseeds and the second one was a simpler one made of watermelon juice + celery. •

rameliving I made this super creamy and delicious Baba Ganoush for snacking this afternoon. It’s amazing how easy this recipe is and it’s oil free! It only needs this six ingredientes in the blender:
1. One crushed garlic
2. Juice of 1/2 lime or 1 lemon
3. Especies: 1/2 tbsp cumin + 1/4 tbs paprika 
4. 2 full tbs of tahini 
5. 2 cooked eggplants 
And a pinch of salt! 🍆 To make the eggplant you can spread them with a little oil in top of the skin and grilled or baked them for 20 minutes or until you see that the skin dries up. Open in half and take all of their filling (eggplant meat) for the recipe. Enjoy!

3. Especies: 1/2 cdta comino + 1/4 cdta paprika
4. 2 cdas grandes de tahini
5. 2 berenjenas cocidas sin cáscara 🍆 Para realizar la berenjena solo agrégale un poquitín de aceite en la cáscara y ponerla a hornear o al grill por 20 minutos. Esta estará lista una vez que la piel se vea más seca (similar a una pasa). Disfrútala! .

This place 🙄, Bandipur is one hidden gem of Nepal! 💜 This super cute little town is full of really old colorful houses, with the most interesting woodcraft in their walls and windows. In the streets no cars are allowed or motorcycles which makes it so peaceful and pleasant to walk through. The streets are full of little cafes to eat traditional food and you can see locals everywhere, especially women wearing their Nepali dresses and children playing games. 💙 It’s so nice guys! I enjoyed my stay here so much. 💙 Anyway, one of my biggest dreams was to become a full time traveler - or at least for a while. When I took the decision that I was going to make this happen I new that I needed a plan. ✨
💚 After dedicating some time and strategy I did all the arrangements for leaving everything that attached me to my country, I sold and give up everything I owned, save some money and for six continuos months I worked and camped in the fields of foreign countryside, which allowed me to collect some cash.

🧡 At that moment I knew I needed to choose a place where I could live at a very low cost. When I started studying which places of the world I could live in, India was the one that resonated with my heart... I just felt that She was going to give me much of what I was looking for to learn about life.
✨
🖤 Spending one year here has become one of the greatest gifts of my life. Not only because it represent all the possibles challenges I could ever imagine to have but because this culture is so very old and wise, it works with your heart and with your spirit, it teaches you about simplicity, love and humbleness -every single day.

🌶 I made this tacos for lunch and they were soo tasty! They are filled with mashed sweet potatoes and sautéed onions. Plus I added a little of chili sauce :) ✨
🥬 To use this leaves you just have to peel them off from the cabbage (very carefully to not break them) & boiled them for 3 minutes

Ingredients:
Cooked quinoa (leftovers!)
Fruits (I used banana, strawberry, grapes and dates)
Vegan milk (I used unsweetened almond milk) 
Cinnamon 
Chia seeds or flaxseeds

Mix all the ingredients together and enjoy! 
A 100% natural cereal you can make for you and your whole family 💫

rameliving Exactly one year ago I was finishing a Yoga Teacher Training & Meditation Teacher Training in Rishikesh, India. During 8 weeks I was receiving multiple classes learning about topics I didn’t even have an idea they existed (+ trying to understand Hindi-English); I sat down for hours trying to calm my mind while I battle with my ego every second of all the reasons why I should stand up and leave; plus every morning and night I stretched every muscle of my body teaching it how to be align correctly again... I tell you, I was in completely mental and physical pain every day.

So, why I even pay for receiving this pain? 
Now that one year had pass I realized how much I value the teaching this courses gave me. How many tools I’m using right now thanks to them. It’s beautiful how we can find so much graceful feelings after passing through periods of pain, how much we can learn about our own selfs, how much deep and true connections we can experience with all our surroundings & how much strength and vulnerability we can experience at the same time.

Let’s no be afraid of feel. Let’s not be afraid to open up to everything: the sweet and the bitter, the joy and the sadness, the comfortable and the uncomfortable, because the journey of experiencing self knowledge and self love is worthy all the way 💗

Exactly one year ago I was finishing a Yoga Teacher Training & Meditation Teacher Training in Rishikesh, India. rameliving 10 examples of healthy & really easy to make #vegan snacks options while your working on your computer are: 🥦 Savory:
1. Rice cakes with hummus spread + cucumber slices (with a little of lemon juice and sea salt make them super tasty!)
2. Rice cakes with 1/2 avocado + tomato slices (add a pinch of salt and black pepper) 
3. Vegetable sticks (ie. celery/broccoli/carrot/cucumber) with hummus (buy the already made one)
4. Edamame with sea salt (boiled the beans for 3 min) 
5. Boiled potato with marinara sauce (cut the potato in squares and boiled it with sea salt, once cooked add 2 tbs of marinara sauce on top) 🍌 Sweet:
6. One apple in slices with 1 tbs of almond butter (buy already made) + cinnamon 
7. Rice cakes with banana slices + 1 tbsp raw honey + cinnamon
8. 4 to 5 dates, remove the seed and replace it with one almond or walnut (this is one of my fav!) 9. 3 ingredients cookies 
10.  Power balls 
Ok I’m a carb lover and I follow a high carb diet, non the less I know that there is a lot of low carb followers out there! Sooo I have a bonus for you! 👉🏼 3 low carb ~ vegan options:
11. Vegetable sticks with tahini dressing (mix 1 tbs of tahini with 2 tbs of water + 1/2 lemon juice + pinch of salt and pepper) 
12. Celery sticks with almond butter

rameliving Well this snack came out good: Sweet potatoes “crackers” with sautéed kale and a little bit of yeast 👌🏽 Super easy to make!
1. Cut the sweet potato (or potato) in thick slides and boiled them for 10 min
2. In a hot pan with little coconut oil seared the sweet potatoes to make them a little more crunchy. This takes just two minutes each side.
3. Once ready, set them aside and on the same pan add two big handfuls of kale leaves and cook them for 2 minutes with sea salt. 
4. Last, form the crackers and sprinkle them with a little paprika and yeast for a queesy vegan flavor ☺️ Notice the kettlebells I’m having right now to use!! 💪🏼 I’m staying with this babies for the next couple of months, so my big goal is to learn new moves with them ... anyone interested in learning new techniques with me? 🙋🏽‍♀️🙋🏼‍♂️

These were our faces in our way to spot rhinos while we were riding on top of protected elephants in the National Park of Kaziranga. This amazing place in the North East of India is dedicated to the conservation and reproduction of the one horn rhinos in India, being home of near the 2/3 of the world population of this specie. rameliving If you are a pancake lover just like me, you can use this recipe to sum more vitamins to your diet by adding veggies on your pancake batter! In this case I did carrot pancakes on pic 1 and kale pancakes on pic 2, their recipe:

Put in the blender whole grain oatmeal (or any other flour) + water or milk + chia or flaxseeds + a little of bakery powder + cinnamon + optional 1 banana + pinch of salt and last but not least grated carrot or a big handful of kale leaves or spinach. Blend it and make the pancakes on a hot pan and voila! Healthy pancakes for a great breakfast or a snack ... I also added some extra topping like walnuts, grated coconut and some dates, yummy!!! 😋 ••• Convertí tus pancakes en un desayuno aún más saludable incluyendo así más vegetales en tu dieta. Estos son dos ejemplos que hice, uno le agregué zanahoria rallada y al otro le añadi hojas de kale. Para ello mezcla en una licuadora avena integral + agua o leche + polvo de hornear + semillas de chia o linaza + sal + opcional 1 banano + zanahoria rallada o un puño grande de kale. This World Heritage Site is just amazing, it’s 5 caves inside huge rocks with the most beautiful statues and paintings of Lord Buddha made in the 1st century BC.

Last January I climb it before the sunrise and it was such a beautiful and peaceful experience. In today’s Vlog I’ll show you all about it! Plus that same afternoon I took a bus and visit Dambulla Cave Temple.
