¾ cup milk, of your preference (180 mL)⠀
½ teaspoon salt⠀

½ teaspoon garlic powder⠀
2 cups broccoli floret, chopped (300 g)⠀
½ red onion, diced⠀
1 red bell pepper, diced⠀
2 slices turkey bacon, or of your preference, cut in half⠀
4 slices deli meat, of your preference⠀
6 whole grain english muffins, sliced⠀
6 slices cheese, of your preference⠀

Preparation⠀
Preheat oven to 375ºF (190ºC).⠀
Spray a 9x13-inch (23x33 cm) baking dish with cooking spray.⠀
In the baking dish, whisk the eggs, milk, salt, pepper, and garlic powder.⠀
Mix in broccoli, red onion, and bell pepper.⠀
Bake until the top starts to get golden brown, about 25 minutes.⠀
Place the deli meat and bacon on a 9x13-inch (23x33 cm) nonstick sheet pan.⠀
Bake 5-10 minutes, or until they reach desired doneness.⠀
Arrange the sliced English muffins on another sheet pan.⠀

the temptation is everywhere.
I go to a restaurant, I’m presented with the happy hour drink specials.
I hang out with my family, they drink.
I go to an event/concert, alcohol.
I do my grocery shopping, “how are you doing ma’am? Would you like to sample this wine?”.
No kidding.
But if there is anything I know it’s this.
•My willpower and determination is off the chain 😎 so i knew it was just one more thing I’d have to fight through.
•If your circle doesn’t support you and your decisions, it’s time for a new circle.
And honestly, as harsh as that sounds..
It’s life.
Everyone has their season in your life.
And as we grow, and change, its completely normal to want to surround yourself with people who support you & cheer you on!

I always get asked if I plan on drinking again.
And I don’t know the answer to that 🤷🏼‍♀️
but what I do know is that I have come this far,
and I’m proud of that.
And I have shown myself that I can overcome and rise above something that was trying to control and destroy me.
I am in control now, and I’ve never been happier ♥️

proteinrich Chickpea & Aubergine balls

These protein rich vegan bites are a perfect addition to any festive meal.The chickpea and aubergine come together perfectly and can be served as an appetiser or as a side.

Ingredients (Makes 15)

2 large aubergines- cut in half
Olive oil
4- Garlic cloves peeled
2 tsp - Coriander
1 tsp- Cumin seeds
400gm Boiled chickpea
2 tbsp gram flour (chickpea flour)
1 lime
5 tbsp- bread crumbs (whole wheat)

Method:

1. Season the aubergine with olive oil, crushed garlic, coriander and cumin seeds and roast in a preheated oven at 200C for 40 minutes. Set aside to cool.

2. Scoop the aubergine flesh and discard the skin. Blend the chickpeas until it forms a smooth mixture and mix with the aubergine.

3. Add the gram flour, lime juice, salt and pepper. Shape the mixture into small balls and place on a baking tray (with parchment paper) in the fridge for at least 60 minutes.

4. Coat the aubergine balls with dried bread crumbs and place it back on the baking tray. Drizzle with a little olive oil and roast for 20 minutes until crisp.

Chickpea & Aubergine balls These protein rich vegan bites are a perfect addition to any festive meal.The chickpea and aubergine come together perfectly and can be served as an appetiser or as a side. Ingredients (Makes 15) 2 large aubergines- cut in half Olive oil 4- Garlic cloves peeled 2 tsp - Coriander 1 tsp- Cumin seeds 400gm Boiled chickpea 2 tbsp gram flour (chickpea flour) 1 lime 5 tbsp- bread crumbs (whole wheat) Method: 1. Season the aubergine with olive oil, crushed garlic, coriander and cumin seeds and roast in a preheated oven at 200C for 40 minutes. Set aside to cool. 2. Scoop the aubergine flesh and discard the skin. Blend the chickpeas until it forms a smooth mixture and mix with the aubergine. 3. Add the gram flour, lime juice, salt and pepper. Shape the mixture into small balls and place on a baking tray (with parchment paper) in the fridge for at least 60 minutes. 4. Coat the aubergine balls with dried bread crumbs and place it back on the baking tray.
