Blend 1 package of @lovebeets organic whole beets (make sure it's this brand cuz others taste like dirt haha - but these are sweet!) and 1 cup of unsweetened pure chocolate, melted (I used @santabarbarachocolate’s 1 ingredient wafers). Transfer batter into a small container and refrigerate at least 3 hours or until firm. Slice into cubes and enjoy!

One of our favourite Christmas desserts. This bundt cake is incredibly moist and full of the flavor of molasses and spices. Perfect Christmas cake for the Festive Season! 🤗 .

2 1/2 cups all purpose flour
1 1/4 cups cake flour
1 1/2 cups sugar
3 tsp baking powder
2 tsp baking soda
1 1/2 tsp ground ginger
1 1/2 tsp ground cinnamon
1/4 tsp ground cloves
1/4 tsp sea salt
2 cups plant-based milk (soy/almond/oat)
2/3 cup molasses
1/3 cup dairy free yogurt
1 cup canola oil
2 tsp vanilla extract .
Preheat oven to 180c. Grease a @nordicwareusa classic sized bundt pan. Set aside.
In a large bowl, whisk the dry ingredients together until combined. Set aside. In a separate bowl or whisk the molasses, room temperature milk, yogurt,980 and vanilla together. Add in half of the flour mixture and gently fold the mixture with a spatula to incorporate. Add in the remaining flour mixture, and fold the mixture with a spatula until smooth.
Slowly pour the batter into prepared pan. Tap gently against the counter to release air bubbles.
Bake for 55mins to 1 hour or until a toothpick inserted into the center comes out clean. Remove pan from the oven and let cool in pan for 10 minutes on a wire rack. Invert cake onto a rack with parchment paper and cool completely. .

Recipe (yields 2 servings)
~ 2 servings ramen (fresh/dried) - cooked based on package's instructions
~ 2 tablespoons red chili/laksa paste or sambal
~ 3 cups vegetable stock
~ ¼ cup coconut milk
~ 1 teaspoon coconut sugar (optional, adjust based on the chili paste's sweetness)
~ a handful of fresh curry leaves (optional)
~ oil & salt to taste
~ ¼ cup King oyster mushrooms – peeled into thin strips
~ ¼ cup long beans - cut into 2" length (used white long beans), blanched
~ ½ cup mung bean sprouts, blanched
~ ¼ cup pan-fried eggplant
~ ¼ cup tofu puffs
~ lime wedges, red chilis
~ fried veggie wontons
✅In a heated pan with a drizzle of oil, lightly pan fry mushrooms strips & eggplant until fully cooked & set aside. Using the same pan, add water & quickly blanch green beans & mung bean sprouts, then drain well. Soak tofu puffs in hot water for 5 mins & squeeze out the water to remove excess oil.
✅To make the curry, sauté red chili paste/sambal with oil in a tall pot (deep enough for at least 5 cups of liquid) for 1 minute. Then, add the vegetable stock, tofu puffs, curry leaves, coconut sugar (if using) & bring it to boil. Reduce heat to simmer & add coconut milk, then cook long beans & eggplants in soup for about 30 seconds. Turn off the heat.
✅To serve, place cooked ramen in a bowl, ladle soup with veggies over & top with mung bean sprouts, fried wontons, mushrooms strips, red chili & a squeeze of lime juice. Enjoy.
Spicy Roasted Squash bowl by @anna.culina 🧡 served with sweet potato, caramelized king oyster mushrooms, fresh curly kale, pomegranate with a pumpkin seed, and yoghurt dip! How to:
½ Hokkaido squash
1 small sweet potato
1 Tbsp olive oil
Method: Preheat the oven to 180*C. Cut Hokkaido in 2 cm thick slices, toss in olive oil and sprinkle with herbs and salt. Bake for 25 minutes. Mushrooms
2 handful small king oyster mushroom
1 Tbsp tamari
1 Tbsp maple syrup
1 Tbsp apple cider
1 garlic clove
1 pinch of pepper
1 Tbsp sesame oil
Method: Mince garlic and mix with all ingredients except mushrooms. Toss mushrooms in the mixture and marinate for 15 minutes. Heat up sesame oil in a pan, add in the mushrooms and the marinade and fry for 5-8 minutes until the mushroom are caramelized.
Take as many curly kale leaves as you like and massage them with a little salt for 1 minute. This makes the kale tender and perfect to enjoy raw.
1 Tbsp pumpkin seed butter
3 Tbsp soy yogurt, unsweetened
1 Tbsp lemon juice
1 tsp maple syrup
Salt & pepper
Method: Obviously mix all ingredients and add salt and pepper to taste. Adjust thickness with a little water.

Bringing this curry back because it was super yummy and comforting. 🥣 I am a huge fan of slow cooked or pressure cooked meals in the winter. 🥶 They are generally super easy to make (just dump and go), can be loaded with a ridiculous amount of veggies and cheap. Recipe for this one is listed below, but definitely feel free to add your own spin to this. I always change it up with different things depending on what I have on hand. 🥣
1 can chickpeas, rinsed and drained
1 can coconut milk
1 can diced tomatoes
1/2 can tomato paste
3 Yukon gold potatoes or sweet potato
1 red bell pepper, diced
1 green bell pepper, diced
1 red onion, diced
1 inch ginger, minced
3 cloves garlic, minced
1 tbsp curry powder
2 tsp cumin
2 tsp smoked paprika
2 tsp crushed coriander
2 bay leaves
3 cups veggie broth
Salt to taste 💫
Placed it all in my instant pot and set to manual for 15 minutes with a natural release. I let it sit for 20 mins before serving to thicken up and cool. If cooking on the stove top, start by sautéing the onion and green bell pepper until both soften (about 3 mins). Add in garlic and ginger, sautéing until fragrant, another 2-3 minutes. Add remaining spices and stir to combine allowing spices to become fragrant, 1-2 minutes. Add remaining ingredients, and bring to a boil then reduce heat to a simmer. Allow curry to cook at a simmer for 30-40 minutes, allowing curry to thicken. When ready to serve, feel free to enjoy it with some rice (I used a mix of brown and white basmati rice from @lotusfoods), avocado and cilantro. 🙏🏽

Green Goddess Burritos (oil & gluten free)🌯💚🌯Do you notice anything different about my burritos?Yup, they’re green. I swapped my soft tortilla for a cabbage leaf.If you haven’t already heard cabbage is the new “IT” veggie for 2020. Whatever the case 😂I think all you really need to know is that these burritos taste delicious & crispy cabbage is a great way to get your green on.Enjoy!!! Recipe inspired by @forksoverkives magazine winter 2020 issue 💚
What you need: 8 Savoy cabbage leaves( the outer large leaves) , 1 small/med red onion finely chopped, 2 cups sweet potato finely chopped (about 1 large potato), 2 garlic cloves minced, 2tsp chili powder, 1 tsp cumin 1/2 tsp smoked paprika, 1 cup frozen corn defrosted, 1 15 oz can of black beans rinsed/drained, 1/4 cup store bought salsa, 1 cup cooked quinoa, s/p to taste, juice of 1/2 lime
1️⃣ Prepare the cabbage leaves. Bring a pan of salted water to a rolling boil. Plunge the cabbage & cook for 2 minutes. Run under cold water. Pat the leaves dry with a kitchen towel, and trim hard stem at the base of the leaf which will make it easier to roll. Set aside
2️⃣For filling: heat a large skillet over medium, test heat with droplets of water until it sizzles Add a couple tbls water, potatoes, onion, garlic, & spices. Reduce heat to med/low adding 1 tbl of water at a time when needed to prevent sticking, scraping up brown bits in pan for more flavor. Cook and stir 20-25 min until potatoes are cooked through. Add corn, quinoa, black beans, salsa, heat through. Add salt/pepper to taste & lime juice. Adjust seasonings
3️⃣To assemble burritos: I used 2 leaves to form one burrito. First, lay one cabbage leaf down with bottom stem facing you. Next, lay another leaf down, overlapping 1/2 length of the first leaf. Spoon 3/4-1 cup of mixture in the center. Tuck left & right sides in then tightly roll from bottom to top into a tight cylinder. Place on wire rack seam side down on a parchment lined baking sheet.Repeat. Makes about 4 large burritos. Or use one leaf with 1/4-1/2 cup filling to make smaller burritos.
5️⃣ Roast in the oven at 400 F till cabbage gets crispy 15-25 min. I served my cabbage burrito with homemade quac

Quedaron deliciosos. (Y como sobraron, esta semana fueron un éxito para la colación).
- 2 tazas de avena sin gluten molida como harina @thepower_offood - 1 taza de harina de garbanzos (la encuentran a granel en @lanacionalgranel )
- 3/4 taza azúcar de caña, panela o azúcar de coco
- 1/3 taza aceite de oliva o de coco (derretido)
- 1 taza de leche vegetal
- 2 cucharaditas de polvos de hornear
- 3 cucharadas de chia hidratada en 9 cucharadas de agua (al menos unos 30’) o 3 huevos de campo
- 1/3 a 1/2 taza de chips de cacao 70% (a granel en @lanacionalgranel@porlojusto y @almacenfibra )
- ralladura de naranja o limón
- 1 cucharadita de canela en polvo
Precalentar el horno y aceitar los moldes (a mi me salieron 18 quequitos, moldes de 6 cms de diámetro).
Mezclar todos los ingredientes en un bol (si lo hacen con huevo, separen las claras para batirlas a nieve y agregarlas al final a la mezcla). La leche vegetal yo recomiendo añadirla de a poco, hasta dar con la consistencia de la masa, para que no se les pase y luego tengan que agregar más harina.
Hornear por aprox 20’ o hasta que los queques estén firmes y cocidos por dentro (al enterrarles un cuchillo delgado, este debiera salir limpio).
Dejar enfriar y desmoldar.

The holiday season is upon us... and that means holiday baking! ⠀
I’m not going to lie to you... these turned out WAY better than I imagined.⠀
Vegan Sugar Cookies
1/2 cup vegan butter⠀
1/2 cup sugar⠀
1/4 cup brown sugar⠀
1/4 cup pumpkin purée⠀
1 tsp vanilla extract⠀
1 3/4 cups all purpose flour⠀
1/2 tbsp corn starch⠀
1 tsp baking powder ⠀
1/2 tsp baking soda⠀
1/4 tsp salt⠀
1-2 tbsp non dairy milk⠀
1/2 cup vegan butter⠀
2 1/2 cups powdered sugar⠀
Splash non-dairy milk⠀
Add softened butter into a large mixing bowl and cream with mixer. Add sugar, borne sugar, vanilla, pumpkin purée and beat for 1 minute.⠀ ⠀
In a separate bowl, mix dry ingredients. Sift over butter and sugar, mix. Add milk and mix until soft dough forms. Cover and freeze for 15 minutes. ⠀
Pre heat over to 350 degrees. ⠀
Roll out dough between two pieces of wax paper and lightly flour. Cut into shapes with your holiday cookie cutters. ⠀
Place on baking sheet. Bake 8-10 minutes.⠀ Remove from oven and let cool.⠀
For frosting : mix softened butter until light and fluffy. Add vanilla. Mix. Add powdered sugar, 1/2 cup at a time and continue mixing until thick and creamy. Add splash of milk (careful not too much). From here, I separated into a few bowls and mixed in some food colouring ⠀

Nothing like a little holiday baking! My nephew will have his second Christmas right after his first birthday... had to whip up his first experience of Christmas cookies! Here are some tasty gingerbread men! Best way to reduce the fat and naughtiness? Replace an egg with either ground flax seeds in water or EnerG egg replacer. Both when added to warm water make that oooey gooey suspension to baked goods. And for butter, try vegan butter. @earthbalance and @miyokoscreamery make excellent ones! The Earth Balance one even comes in sticks for easy measuring in baking! And presto... a plant based treat... all the flavor saved. And a bit less fatty... (don’t get me wrong cookies are still a cheat)! _

I’ll be honest, I know we have tons of nondairy products to choose from these days, but my favorite cheesy foods are still the old school nooch creations. Today I made the Philly potato chowder from Jo Stepaniak’s Ultimate Uncheese cookbook, and it was 😘 as always. I added carrots, corn, and chickpeas. #plantbased#vegetarian

Easy Korean Vegan Meals 🙌🙌🙌 Just add rice. It has been so nice to come home and throw these meals together on busy days.
1. Vegefood.com dumplings, seaweed soup (I added potobello mushrooms this time.😊🍄🍵) 2. Bibimmandu (mixed dumplings) - make a sauce of gochujang, vinegar, rice syrup, sesame seeds, sesame oil blended apple and garlic. Then pour it over your favorite raw veggies and dumplings and mix.
3. Fried zucchini - lightly coat in flour and fry. Serve with soy sauce.
4. Bindaedeok (mung bean pancake) - an easy way to make this is to make a batter from mung bean flour (or chickpea flour), water, chopped veggies, and a little salt or soy sauce. Gosari or bracken, mushrooms, and onions are great in this. The sauce is just soy sauce, vinegar, and onions. So good.
5. Fried tofu - lightly coat in flour and fry. Serve with soy sauce, kimchi, or roasted seaweed snack. A super easy side dish is fresh peppers dipped in ssamjang (easy to find at Korean grocery stores).
6. Kimchi bokkeumbap (fried rice) - this version has a cut up hot dop from vegefood.com
I made this perfect Korean comfort food just a bit healthier by adding some sprouts and chopped parsley.
7. Bibimbap (mixed rice) - put rice and whatever sides or veggies you have on hand in a bowl. Mix with gochujang for an instant meal. This bibimbap has soft tofu and sea vegetables for a new texture.

4. 빈대떡 - 쉬운 방법은 녹두콩가루 (아니면 병아리콩가루) 하고 물, 야채, 소금이나 간장으로 반죽을 만드세요.간장이랑 드세요. 고사리하고 버섯, 야파는 다 맛있어요. 소스는 그냥 간장하고 식초, 양파인데 맛있다.
5. 구운 두부 - 두부를 밀가루에 가볍게 넣고 튀기세요. 간장이나 김치나 구운 김이랑 드세요.아주 쉬운 반찬은 생 고추랑 쌈장입니다.
6. 김치볶음밥 - 이번에는 vegefood.com 핫도그를 넣었고 건강을 위에서 스프라우츠와 파슬리랑 섰었다.
7. 비빔밥 - 순두부랑 해초를 넣었는데 느낌이 싱기하고 맛있었다.
