Precision is the key. 😃Don’t want to lose even a tiny bit of the salmon filling that’s inside this hand pie.
In this round of hand pie making, I went for store bought puff pastry dough and made my usual no recipe filling with leftover fish – this time wild king salmon. Once I flaked the fish, I mixed in some light cream cheese, a little bit of Greek yoghurt, chopped leeks, capers and lemon juice and salt and pepper to taste. I rolled the puff pastry to about 1/8” thick and cut out cirles that are about 4”in diameter. And then I recruited help for the filling, vent cutting, sealing of the hand pies as well as for brushing them with egg wash. •
For me, baking is a way to relax and de-stress so I usually do it alone, but for big batch baking like making these hand pies (I think we made more than 50 of them), nothing beats having another baker in the kitchen. And a glass of 🍷 •
The pies take about 15 minutes at 425F to become nice and golden. They taste great cold the next day.

The no recipe green pea/spinach curry with some chickpeas thrown in because those were pretty much the ingredients that were past their prime and needed to be used. Plus some coconut milk, garlic, ginger, yellowThai curry paste and cilantro and voila: dinner’s made.

Building a meal. We rarely use recipes at home. Instead, we combine the ingredients we have on hand to build a healthy meal, step by step.
1. I usually start with the STARCH. What is my base? The calorie-dense, fill-you-up, satisfying foundation. I'm talking whole grains, potatoes, pasta or bread. For this meal, it was wheat berries with a tomato sauce.
2. Then add the VEGGIES. What do I have that would pair well with my starch? Always at least one, preferably 2-3 at lunch and dinner. Tonight we had roasted zucchini.
3. Never miss a chance to add GREENS! Finely chopped greens are easy for toddlers to handle and rarely change the flavor. Try adding them to your whole grains and sauces...even oatmeal! There's at least 2 cups of finely chopped spinach in this tomato sauce. This is not the same as 'hiding', which I generally don't recommend and can backfire. The kids can see it, I even point it out, we talk about it, they know what they're eating. At this point, they're used to seeing little green bits in all of their food 😉
4. Include BEANS or legumes at least once a day. Pinto, black, banzo, kidney, navy, soy - we use them all! Lentils and peas too! And don't forget the hummus! My kids would live on hummus if I let them. This time it was green peas (yes, they're a legume, not a vegetable) - straight from the freezer - just defrost and serve!
5. Double check you have included some healthy FATS for the kiddos. I used a little EVOO for the zucchini and there's miso in the tomato sauce, but I felt like this meal needed a more so I topped the wheat berries with pine nuts. For kids under 4-5y/o, you will want to crush or blend whole nuts to avoid a choking hazard. I will admit, this is much harder with the second kid...watching big sister eat her nuts, the little guy won't have it any other way. To minimize risk, we insist that they stay seated while eating and monitor them.
6. FRUIT - on the plate or for dessert! My kids usually have seconds or thirds 😉. Tonight it was raspberries...enough for each finger, of course!

Clean out the fridge Paella 🥘 peeled roughly a pound of shell on shrimp and sautéed a finely diced onion with a boatload of garlic in olive oil until translucent. Added roughly 1/4 cup tomato paste, thyme, fennel seeds, smoked paprika, and a hefty pinch of saffron and cooked until brick red. I stirred in the rice (~1 cup dry) and deglazed with 1/4 cup white wine. Slowly added ~2-3 cups chicken stock and 2 cups of frozen peas, along with the shrimp peels (tied up in a cheesecloth so I could remove it easily). Cooked until the rice was tender, removed the shells and stirred in the shrimp until cooked through. I just wing-it when it comes to spaghetti. My family isn’t picky. I’ve never been the type to follow a spaghetti sauce recipe. Ground beef, one diced onion, one diced red pepper, a tsp minced garlic, salt & pepper. Cook until need is done and veggies are softened. Add one small can of tomato paste, a can of diced tomato, a can of tomato sauce, and a can of sliced mushrooms. A couple tbsp Italian seasoning, a bag of spinach that I chopped up and a handful of fresh Parmesan. when your pasta is done take 3/4 cup of the pasta water and add to your sauce. Miałam wiśnie w lodowce i nie wiem co mam zrobić z nimi. Wymyśliłam sobie ciasto. (Koszyczek wiśni, kubek cukru, 2 kubki mąki, 5 jajek, 150g masła, troszczkę kakao) bo tyle miałam w domu😂 chyba powinnam dodała proszek do pieczenia, ale nie miałam🤣

STRAWBERRY MILK!!!! So, one time i got stumbled on insta video about this thing, and i crave for it. Luckily, i have litres of milk and some strawberries in the fridge. And the best thing i did was stirring some strawberries and sugar, then sip a glass of strawberry milk! (Yes, i made the jam myself, no recipe. I would love to share how i make it but i wont guarantee that it would be succeed. Ask me if someone wants to know how! :-) )
Fun Friday menu was homemade pizzas and mini garlic breads. We had supreme (half no olives for me) and BBQ meatlovers. The garlic bread was made using leftover dinner rolls with with homemade garlic and parsley butter, wrapped in foil and baked in the oven, crisp on the outside and soft on the inside. The pizzas were delicious - jac used pre-made thin and crispy bases from the supermarket and added the toppings. We have several slices leftover in the freezer ready to make a reappearance in future.

Ever since I updated my phone, my photo transfer app (camera to iPhone) has stopped working. No word from Fujifilm so far on a fix (not that I have found). So my photos in the recent couple of weeks and for the next while are all phone photos. Hoping to get it all sorted in time for the next planned holiday (more info to come in time, it’s more than a month away)
