Let's talk wedding diets for a second. Did you or would you follow a wedding diet? If so, what would it look like?

A wedding diet can mean something different to everyone. For some, a restrictive diet may come to mind. For others, it may just be being a little more attentive to what you put in your body.

I've said it many times before, but I don't believe in diets. I truly believe we should nourish our bodies in a way that feels good to us - treats and all. However, I won't say that there's anything wrong about wanting to look and feel your best on your wedding day. As long as it feels good to you and your body.

That being said, I don't think going to any extreme is good, physically or mentally. I also think it's important to be careful about the way you think about your body. There's definitely pressure to look a certain way on your wedding day and if you ask me, one day is not worth sacrificing your mental and physical health.

I'm sharing the details on the blog today (with more to come after the wedding), but in summary, I'm eating the same way I always do. Because that's what feels good to me (and that may be different for you). There are however, a few things I'm changing for the next month: I'm avoiding dairy (as it causes me to breakout), I'm avoiding foods I know bother my gut (some vegetables) and I'm making it a point to move daily. Okay, that last one is nothing new, but I'm just a little more motivated. WHAT YOU NEED:
🍓 2 really ripe bananas (mashed), 4 eggs, 1/4 cup coconut oil (melted), 1 and 1/2 tsp vanilla extract, 1/2 cup coconut flour, 1 and 3/4 cup all-purpose flour, 1/8 tsp salt, 1/4 tsp baking soda, 1 and 1/2 tsp baking powder, 1/2 tsp Ceylon cinnamon, and 1 cup fresh strawberries (chopped)
🍓 *Optional: 1/4 cup walnuts (chopped)

HOW YOU MAKE THEM:
🍓 Preheat oven to 350 degrees and line a 12-well muffin pan with paper liners.
🍓 In a mixing bowl combine bananas, eggs, coconut oil and vanilla extract.
🍓 In a separate mixing bowl combine flours, salt, baking soda, baking powder and cinnamon.
🍓 Next, add dry ingredients to the wet and mix until just combined.
🍓 Slowly fold in strawberry pieces, being careful not to over mix. If using walnuts add them here as well.
🍓 Fill prepared muffin wells approx. 3/4 of the way full and bake for 23- 28 minutes until toothpick comes out clean/muffin tops are golden brown.
🍓 Make these ahead of time and enjoy throughout the week!

Intrinsic sugars are sugars found naturally in fruit and vegetables and provide valuable nutrients.

Free sugars refer to all added sugars, plus the sugars naturally present in honey, syrups (agave, rice malt and maple) and fruit juice.

fruit juice is regularly marketed as containing ‘no added sugar’ which isn’t incorrect... BUT it does still contain free sugar. (Which is what we are left with once the fibre from the fruit is removed).

The ‘no added sugar or refined sugar free’ claim usually means:

No refined or white sugar has been added. Or
none of the sugars listed in the FSANZ (Food Standards Australia and New Zealand) definition of sugar have been added. It does not mean there is no sugar naturally occurring in the product (as with fruit juice), or that other forms of sugar, such as honey or rice malt syrup haven’t been added.

Our pancreas does not discriminate between the sugar naturally found in juice and any that may be added!

The World Health Organisation recommends that we limit our intake of added sugar to 6 teaspoons for adults and 3 teaspoons for children per day. noaddedsugar HI-FIBER CUTLETS

✔️protein + fiber rich
Another yummy, plant-based meal rich in fiber and protein! These vegan cutlets feature red lentils, buckwheat, and white rice. You can sub in any sort of lentils, omit the buckwheat, or add in a different grain. I made this using white rice since the fiber-full legumes can be a lot on the tummy! Otherwise, feel free to use brown. The best part of this is that you can tailor it to your likes.

Ingredients
• 1c red lentils
• 1/2c buckwheat
• 1/2c rice
• 2 flax eggs
• salt, pepper
• dried herbs, optional
• paprika, optional
• 1 onion, optional

Optional soak: Soak the lentils, preferably overnight, in triple the amount of filtered water and 1/2tsp baking soda or white vinegar (optional, but helps to ease digestion). Prep the flax eggs by mixing 2 tbsp of flax seeds with 6 tbsp of water. Let stand at least 30m if using whole flax seeds and 15m if using ground. You want the mixture to be very gooey.

Cook the lentils, rice, and buckwheat separately until very tender (I add about double water to amount of ingredient). If choosing to add in onion, in a sauce pan, caramelize an onion with about a tbsp of olive oil.

Combine all in a mixing bowl. Add salt, pepper, and other species to taste. I added dried herbs, dried mint, and paprika. Mash the mixture very well so that there’s very minimal large grainy bits.

Fill a small bowl with water and wet hands. Grab a small spoonful of the mixture and pat into a circular shape. Place onto a non-stick frying pan (or if not available, just add a bit of oil to the bottom of the pan). Cool the cutler on each side until golden brown.

Supa mea preferata este facuta cu rosii pe care le gatesc mai intai in cuptor. O tava mare cu rosii din toate soiurile si culorile. Le adaug ceapa verde sau rosie, apio, usturoi, fire de cimbru, busuioc, sare si neaparat ulei de masline. 
Dupa ce le tin in cuptor cam 40 de minute, le las sa se raceasca, scot cojile si pun legumele in blender. La inceput fara zeama, apoi completez pe masura ce imi dau seama care este consistenta potrivita. Nu imi place zeama lunga, deci nu ma arunc sa pun prea mult lichid ramas in tava. Depinde de cat de zemoase au fost rosiile. 
Ca optiuni de topping astazi am folosit putin pecorino, busuioc grecesc si inca un strop mic de ulei de masline. Rosiei ii sta bine cu sursa de grasime alaturi pentru a ne bucura de beneficiile ei.

Muy buen día!! Sabes que es lo mejor de los polos y helados🍦 caseros, lo divertido y sano que pueden llegar a ser y siempre tener a mano unos cuantos de varios sabores para combatir el calor☀️ pero además una manera bien rica de también consumir frutas. 
Hace tiempo @javiicasadoo me invitó a participar en un reto en el que debía representar mi postre favorito en helado, pues bien, aquí está, he roto un poco las normas del reto, ya lo sé🤦, pero estos polos me representan a mi tal como soy 😊, y me trasladan con cada sabor a mi tierra tropical 🇨🇺, pues están llenos de frutas típicas de mi tierra, sabrosas y dulces por naturaleza como la piña, la naranja, el plátano.
Hubiesen sido lo máximo si tuvieran mango pero no encontré 🤷 unos que valieran la pena y me tuve que conformar, pero os puedo asegurar que están igualmente sabrosos.
Para los polos no tengo receta, pues básicamente he puesto 🍌un plátano bien maduro
🍍piña
🍊el zumo de una naranja
🍶un yogurt natural de soja o de coco
⭐una pizca de cúrcuma
🥄una cucharadita de aceite de coco
Para el glaseado
🍫 chocolate sin azúcar 70%

Todo triturado y a los moldes, que yo he reutilizado unos vasitos plásticos que tenía hacía quinientos ⌛ años guardados y mira, después de todo no han salido tan mal 😅, jjajaa, además, en Cuba, cuando era niña y mi madre me hacía polos también, los ponía en vasitos, así que doblemente me representan estos polos tan afrutados, saludables y bien sabrosos.

WHAT YOU NEED:
🍓 2 really ripe bananas (mashed), 4 eggs, 1/4 cup coconut oil (melted), 1 and 1/2 tsp vanilla extract, 1/2 cup coconut flour, 1 and 3/4 cup all-purpose flour, 1/8 tsp salt, 1/4 tsp baking soda, 1 and 1/2 tsp baking powder, 1/2 tsp Ceylon cinnamon, and 1 cup fresh strawberries (chopped)
🍓 *Optional: 1/4 cup walnuts (chopped)

HOW YOU MAKE THEM:
🍓 Preheat oven to 350 degrees and line a 12-well muffin pan with paper liners.
🍓 In a mixing bowl combine bananas, eggs, coconut oil and vanilla extract.
🍓 In a separate mixing bowl combine flours, salt, baking soda, baking powder and cinnamon.
🍓 Next, add dry ingredients to the wet and mix until just combined.
🍓 Slowly fold in strawberry pieces, being careful not to over mix. If using walnuts add them here as well.
🍓 Fill prepared muffin wells approx. 3/4 of the way full and bake for 23- 28 minutes until toothpick comes out clean/muffin tops are golden brown.
🍓 Make these ahead of time and enjoy throughout the week!

Nyt minulla ei ollut vehnäjauhojakaan, joten kokeilin korvata kaikki jauhot hiivaleipäjauhoilla, kun kerran ne perunarieskoihinkin sopii. Maku ei heikentynyt, mutta suutuntuma oli jokseenkin kuivempi. Se ei kuitenkaan ollut iso haitta, ja lapset tykkäsivät kovasti. Alla oma muunnokseni ohjeesta. Perunarieskasta nämä erottaa ennen kaikkea leivinjauheen käyttö. Perunarieskaan käytän myös kananmunaa, jota näihin ei tule.

Perunateeleivät
reilu 1 dl perunamuusia
2 dl täysmaitoa
3.5 dl vehnäjauhoja (tai hiivaleipäjauhoja, jos ei haittaa vähäsen kuivempi suutuntuma)
1-1.5 tl suolaa (alkuperäisessä reseptissä on 1-2 tl, mutta 2:lla tulee minun makuuni turhan suolainen)
2 tl leivinjauhetta
50 g voita sulatettuna
Sekoita kuivat aineet keskenään. Sekoita perunamuusi, maito ja voisula keskenään. Sekoita seokset toisiinsa. Muotoile voidellulle tai leivinpaperoidulle pellille jauhojen avulla neljä pyöreähköä litteähköä juttua. Pistele haarukalla reikiä. Paista 250 asteessa 12 min.

Itse käytin muotoiluun nyt riisijauhoja, kun vehnäjauhot oli loppu. Vähän mietin vaikuttiko se kuivempaan suutuntumaan, mutta tuskin, koska sitä oli vain pinnassa.

One of my favorite Armenian dishes! I love making this with mama 💕 I generally post recipes with few ingredients, but this is one dish where I don’t mind the extra bit of effort! Trust me, it’s worth it.

Ingredients
• red lentils
• green lentils
• chickpeas
• kidney beans
• pinto beans
• kurkut (farro)
• corn
• white rice
• dried & fresh herbs
• tomatoes, jarred & whole
• cabbage
• lemon
• onion
• carrot
• salt, pepper, cumin

Soaked green lentils, red lentils, split chickpeas, pinto beans, kidney beans, and kurkut (similar to farro) in warm filtered water overnight with a teaspoon of baking soda to help neutralize the anti-nutrients & remove phytic acid for easy digestion (really improves cook time and gas/bloating). Cooked each of them today along with some corn and white rice. About 30-45m for each (cook until tender). Combined all cooked ingredients.

Added in some spicy jarred tomatoes, real tomatoes (the insides—save the outside to stuff), salt, pepper, lemon, and lemon peel. Usually would add cumin as well but didn’t have any on hand.

Steamed some cabbage leaves to wrap the mixture with. Caramelized onion and carrot in olive oil.

After stirring the ingredients real well again, added in some fresh and dried herbs. And it’s ready for stuffing! You can stuff into any veggies, we had cabbage and tomatoes today but we also use bell peppers and eggplant normally.

Once packed tightly, added some boiling water and let steam until the cabbage leaves and veggies are tender.

This dish is more often prepared with ground meat. I personally love the plant-based version more. There’s so much flavor and full of nutrients!

The bean/legume/grain soaking and cooking can be time consuming, but feel free to use canned instead. Just make sure to give it a really good rinse. I love the whole, long process and making each bit of the dish my own way with mama.
