To make the salted dark chocolate peanut butter & jelly cups, you will need:
• 1 cup @navitasorganics cacao powder
• ½ cup organic virgin coconut oil, melted
• ¼ cup 100% pure maple syrup
• 1/2 cup creamy organic peanut butter (can also do almond or sunflower butter)
• 1/3 cup raspberry chia jam
• @redmondrealsalt unrefined sea salt
• Large or small baking cups (for muffins/cupcakes)

Combine cacao powder, melted coconut oil, and maple syrup in a medium mixing bowl and stir until consistency is smooth.

Line a muffin pan with parchment baking cups and evenly divide chocolate mixture into the base of each baking cup.

Note: Make sure the mixture is warm/hot when pouring into baking cups since cooled chocolate mixture will be thick and hard to pour.

Next, add peanut butter to a small bowl and mix with ~2 tbsp almond flour to thicken it up (should have consistency of watered down play-doh). It also helps to refrigerate the peanut butter before hand so it’s not as runny and holds shape (in this case, add half amount of almond flour). Add peanut butter on top of bottom chocolate layer.

Next, add a dollop of raspberry jam atop the peanut butter and spread evenly. Fill the rest of the cups with remaining melted chocolate (may need to reheat so pours over easily). Top with a sprinkle of sea salt. Freeze for 2 hours and then store in the refrigerator. Enjoy!

I wanted to clear up some of the misconceptions around switching to a more nutritious diet. While healthy eating looks different for everyone, I can safely say incorporating more whole foods in our diet will benefit almost anyone. Now, I do find when I’m encouraging people to upgrade their food, these misconceptions can block them from making the switch. Let’s breakdown each misconception below:

Lie “You have to eat the same foods at almost every meal.” ▶️ Truth “You can eat a wide variety of healthy foods.” In fact, switching up your food on a daily or weekly basis can ensure you’re getting a variety of nutrients & minerals. Eating seasonally, trying new exotic fruits and veggies and switching up your protein sources are just some of the ways to keep your diet exciting!

Lie “I have to cut out all complex carbs.” ▶️ Truth “Find the right amount of carbs for you and your activity level.” While a lot of people can benefit for going low carb for a period of time, going too low carb for too long can also be detrimental to your hormones and energy levels. As an active person, I find I feel my best when I make sure I’m getting at least one serving of fruit post workout and I’m incorporating some whole food carbs into meals like potatoes or rice.

Lie “No fun foods allowed.” ▶️ “A healthy balance looks different for everyone.” I know I love incorporating planned treats into my healthy lifestyle! Now, how many treats you incorporate into your diet depends on your needs, wants and goals. I’m more of an 90% healthy foods, 10% fun foods kind of girl but many people flourish on more of an 80%/20% split so find what balance works for you!

🌡  Fats protect and insulate your body. The layer of fat under your skin help regulate internal body temp. Vital organs, like your kidneys, have a layer of fat around them that acts as bubble wrap to protect them.

✨ When it comes to creating new cells, fats are used in the production of phospholipid cell membranes and hormones. Communication between cells is also dependent upon lipids.

meals One of my fav foods are FRENCH FRIES 🍟 💁‍♀️One of my favorite treats of all time is a french Fry! Even so much that I include some form of a French Fry in my diet, atleast twice a week!
❌Unlike traditional versions, I don’t deep fry! But instead i oven bake or air fry. When baking in the oven, I like to spray the fries with some olive oil spray and spices. 
Here are 6 of my favorite French fries! 🍟 
1. 🍠 Sweet potato: I like to sprinkle mine with some cinnamon, olive oil and sea salt
2. 🥕 Carrot: these are absolutely delicious! Even yummier with some sesame seed sprinkled on top, Cajun spice and sea salt!
3. 🥔 Potato: enough said. Potato fries have gotten a bad rep in the past, but potatoes can be healthy if it’s not deep fried! I like to air fry mine with some onion powder and sea salt. 
4. 🥒 Zucchini: I like these extra crispy with zaatar, olive oil and lemon! 
5. ⭐️Parsnip: probably my favorite! I like to oven bake them with some rosemary, olive oil and sea salt 
6. 🧡Butternut: delicious with some paprika, cinnamon and sea salt! *calories are for 100g of each. If using oil spray calories are not included .

Ingredients
* 2 Boneless, Skinless Chicken Breasts
* 1 Cup Cooked Brown Rice
* 1 Tbsp Lime Juice
* 1 Small Avocado sliced
* 2 Cups Mixed Greens
* ½ Cup Black Beans
* ½ Cup Canned corn, drained or grilled
* ⅓ Cup Cherry Tomatoes cut into quarters
* 2 Tbsp Greek yogurt
* ½ Red onion diced
* 1 Jalapeno Pepper sliced
* Sea salt and freshly ground black pepper, to taste
* A small handful of chopped cilantro, plus more to garnish
For the Chicken Marinade
* 2 Tbsp Olive oil
* 1 Tbsp Fresh lime juice
* ½ tsp Paprika
* ½ tsp Ground Cumin
* ¼ tsp Chili Powder
* ¼ tsp Garlic Powder
* ¼ tsp Onion Powder
* ¼ tsp Dried Oregano
* A pinch of salt and pepper, or to taste

Instructions
1. In a ziploc bag, mix all marinade ingredients until smooth. Add chicken, seal the bag and shake until chicken is evenly coated.
2. Heat a grill pan or an outdoor grill over medium-high heat. Add chicken and cook for about 5-7 minutes on each side, or until cooked through and no longer pink in the inside.
3. Remove from the grill and let it rest for 5 minutes before slicing.
4. In a small bowl mix cooked rice with lime juice, chopped cilantro, sea salt, and freshly ground black pepper.
5. Toss to combine then set aside. To assemble the bowls, add the greens at the bottom of each one, then 1 sliced chicken breast.
6. Divide the remaining ingredients among the 2 bowls. Garnish with fresh cilantro and jalapeno and enjoy!

I want to keep you from making the same mistakes I did when I was younger. Starving yourself all day only to binge later at night won’t leave you feeling good! Not to mention all the hormonal issues and health issues that arise when we eat too little.

Losing weight the healthy way may take more time but it will leave you feeling so much better overall! Eating in a slight calorie deficit while paying attention to the quality of our food, getting movement in, hydrating and picking up healthy habits along the way is where the magic happens. Here are my tips on how to lose weight the healthy way:
.
1️⃣ Stop drinking your calories, aside from low sugar kombuchas, actually green green juices (mostly veggies), & high quality protein shakes. Aka get rid of the juices, fruit smoothies, sodas, sugary coffee drinks etc
2️⃣ Limit the processed foods you eat.
3️⃣ Add tons of veggies to your dishes! This will add loads of volume.
4️⃣ Make sure you’re getting an adequate amount of protein. This will help you feel full.
5️⃣ Add in some healthy fats. Fats are super important for the absorption of certain vitamins & important for overall health.
6️⃣ Find the right amount of whole food carbs for you. You definitely shouldn’t fear carbs either! Pick whole food ones like sweet potatoes, potatoes, fruit, rice & beans and you’re on the right track!

My Fitness, Weightloss & Wellbeing diaries  continue  this morning, after a little break to rest my knee and some physio..... The knee continues to be a concern, but I am out today, doing my thing and hoping for the bests.... I really missed my early morning workouts and am happy to be back on track....It’s amazing how habits are formed....If you are finding it difficult staying on any tasks, remember the more you push through and are consistent, the easier it becomes, the better you become at it and your results will be assured... So here’s me, just walking, no jogging, knee brace in place to help with support........and no weights for now....

For years the egg was considered a high risk food due to its high cholesterol content
The confusion here is that cholesterol in food could cause high blood cholesterol BUT with 25 years of study behind it, it has become evident that this isn’t the case and in fact it is saturated fat that has the biggest effect on blood cholesterol. 
Eggs contain the highest biological value (the gold standard) for protein - 1 egg is only 75 calories but contains 7g of protein.

The knee continues to be a concern, but I am out today, doing my thing and hoping for the bests.... I really missed my early morning workouts and am happy to be back on track....It’s amazing how habits are formed....If you are finding it difficult staying on any tasks, remember the more you push through and are consistent, the easier it becomes, the better you become at it and your results will be assured... So here’s me, just walking, no jogging, knee brace in place to help with support........and no weights for now....
