Marinade/Dressing:⁠⠀
2 tablespoons olive oil⁠⠀
juice of 1 lemon (1/4 cup fresh squeezed lemon juice)⁠⠀
2 tablespoons water⁠⠀
2 tablespoons red wine vinegar⁠⠀
2 tablespoons fresh chopped parsley⁠⠀
2 teaspoons dried basil⁠⠀
2 teaspoons garlic , minced⁠⠀
1 teaspoon dried oregano⁠⠀
1 teaspoon salt⁠⠀
cracked pepper , to taste⁠⠀
(1 pound | 500 g) 4 skinless, boneless chicken thigh fillets (or chicken breasts)⁠⠀

Salad:⁠⠀
4 cups Romaine (or Cos) lettuce leaves, washed and dried⁠⠀
1 large cucumber , diced⁠⠀
2 Roma tomatoes , diced⁠⠀
1 red onion , sliced⁠⠀
1 avocado , sliced⁠⠀
1/3 cup pitted Kalamata olives (or black olives), sliced (optional)⁠⠀
Lemon wedges , to serve⁠⠀

Instructions:⁠⠀
Whisk together all of the marinade/dressing ingredients in a large jug. Pour out half of the marinade into a large, shallow dish. Refrigerate the remaining marinade to use as the dressing later.⁠⠀
Add the chicken to the marinade in the bowl; marinade chicken for 15-30 minutes (or up to two hours in the refrigerator if time allows). While waiting for the chicken, prepare all of the salad ingredients and mix in a large salad bowl.⁠⠀
Once chicken is ready, heat 1 tablespoon of oil in a grill pan or a grill plate over medium-high heat. Grill chicken on both sides until browned and completely cooked through.⁠⠀
Allow chicken to rest for 5 minutes; slice and arrange over salad. Drizzle salad with the remaining UNTOUCHED dressing. Serve with lemon wedges.

Ingredients (for 4 servings)
1 lb ground beef (455 g)
½ cup seasoned bread crumbs (55 g)
½ onion, finely minced
1 egg
1 tablespoon kosher salt, divided, or to taste
1 tablespoon pepper, divided
2 tablespoons canola oil
2 cups beef broth (480 mL)
2 cups milk (480 mL)
1 tablespoon worcestershire sauce
4 cups egg noodle (400 g)
1 cup shredded parmesan cheese (110 g)
½ cup fresh parsley (15 g), chopped

Preparation
In a large bowl, combine the ground beef, breadcrumbs, onion, egg, ½ tablespoon salt, and ½ tablespoon pepper, mixing until evenly combined.
Heat the canola oil in a pot over medium-high heat. Take about a golf-ball size of the meatball mixture and roll it into balls. Place the meatballs into the pot, cooking for one minute. Flip the meatballs.
Add the beef broth, milk, remaining ½ tablespoon salt, remaining ½ tablespoon pepper, and Worcestershire sauce and give it a stir.
Bring the liquid to a boil, then add the egg noodles. Stir constantly until the pasta is cooked and the liquid has reduced to a sauce that coats the noodles, about seven to eight minutes.
Add the parmesan and the parsley, stirring until the cheese is melted.

One-Pan Teriyaki Salmon Dinner 🍽 
Full recipe below, send it to a friend who’d love this!⁣ Ingredients (for 2 servings)
2 cups broccoli florets (500 g)
2 cups carrot (245 g), sliced
2 tablespoons olive oil
2 teaspoons kosher salt
2 teaspoons freshly ground black pepper
2 boneless salmon fillets
¾ cup brown sugar (165 g), packed
3 tablespoons soy sauce
½ cup honey (170 g)
2 tablespoons sesame seed

Preparation
Preheat oven to 400°F (200°C).
On a baking sheet, combine broccoli, carrots, oil, salt, and pepper.
Mix thoroughly to make sure all vegetables are coated, and then arrange them in the center of the tray in a flat layer.
Lay the two salmon fillets on the vegetables.
In a medium bowl, combine brown sugar, soy sauce, honey, and sesame seeds. Mix until there are no lumps.
Spread the glaze evenly on top of the two salmon fillets.
Bake for 12 minutes.
Take the salmon fillets off the vegetables and set aside. Toss the vegetables in the roasting juices.
Glaze the salmon with any remaining juices. Serve!

Vegan Macros 101 by @davidclearyveganpt 😉⁠ ⁠ Macronutrients are the three main compounds that make up all foods, it’s what gives us energy and they’re split into protein, carbohydrates and fats 🙌⁠ ⁠ What you’ll see is that most foods aren’t 100% protein nor 100% carbs as many people think!⁠ ⁠ Food is made up of different percentages of each macro, some more prevalent than others. You need to ensure you’re eating a variety of whole foods to get sufficient calories coming from all three macronutrients 🌮🍌🥑 ⁠ ⁠ Some examples for macros for vegans⁠ 💪 Protein - black beans, broccoli, garbanzo beans, lentils, nutritional yeast, peas, seitan, tempeh, tofu⁠ 💪 Carbohydrates - apples, bananas, berries, brown rice, carrots, dates, oats, quinoa, sweet potatoes ⁠ 💪 Fats - avocado, cashews, dark chocolate, flax seeds, hemp seeds, nut butters, olives, tahini⁠ ⁠ What you’ll find is that most protein sources for vegans are also rich in carbohydrates, such as beans or legumes. INGREDIENTS 
2 cups watermelon cubes
2 cups cantaloupe cubes
1 cup cherry tomatoes halved
1 -2 seedless cucumbers, peeled and cut into cubes
1-2 avocados, chopped
1 8 oz block feta, cut into cubes
salt & pepper
2 TBS fresh herbs, like mint, basil and chives

HOT HONEY VINAIGRETTE
2 TBS champagne vinegar
2 TBS freshly squeezed lemon juice
2 TBS hot honey
1 garlic clove, freshly grated
1/4 tsp salt
1/4 tsp pepper
1/2 cup olive oil

DIRECTIONS
If you’re chopping everything yourself, be sure to chop the cubes roughly the same size. If you’re buying something pre-chopped, use that as the guide to size & chop everything else to size. Use the most of what you love! For instance, I like to use watermelon & cantaloupe the most, then cucumber, then fill in with avocado & tomato.

As a note, you can also crumble the feta or do smaller cubes. You can also leave the cherry tomatoes whole and not slice them.

Assemble the cantaloupe, watermelon, cucumber and feta cubes on a dish. Make the dressing as directed. 👇(see below) Chop the tomatoes and the avocado, stick them in between a few of the cubes. There is no right way to do this! You can throw everything in a bowl, spread it out on a plate or layer it. Whatever you’d like.

Sprinkle everything with salt and pepper. Drizzle with the dressing and cover with the fresh herbs. Serve!

Leftovers of this are delicious.

HOT HONEY VINAIGRETTE
Whisk together the vinegar, lemon juice, hot honey, garlic, salt and pepper until combined. Stream in the olive oil while whisking the entire time. This dressing stays great in the fridge for up to a week.

TIP 💥 The other great thing?! You can make this ahead of time and marinate it all. I actually threw the chunks in a bag to marinate them with the dressing while testing this. It also makes it easily transportable! I would just skip the avocado and add it once you’re ready to serve the whole thing. 💥 You can also serve as kabobs

 Tortilini has proven to be such a great lunchbox item when you’re on the go because it can be eaten hot or cold. We recently found @giovanniranausa  and have really loved it. Pesto is one of my favorite sauces lately because of the great color and fresh taste! Edamame is another  favorite of mine, especially because it can be a great source of plant protein. It is also fun to eat for the little ones, sometimes I will take the beans out for her, and sometimes I let her take them out of the pod. The best part is that it can also be good for fine motor and independence for the little ones.

I’m sure it’s not easy having a health coach for a wife but I do my best to keep him eating well and also enjoying his food. 
Meal prep is important to any healthy eating plan, not just for weight loss but everyday life. We are busy people and it’s easy to grab something from the kids snacks or anything you can get your hands on. We’re all in survival mode and that can take a toll on our health. 
Remember even just taking a little time to plan out a few days can make a huge difference.

My all time favorite meal prepping hack is to make one big batch of soup every week.

It provides quick and easy lunches or a side dish, packs a powerful veggie punch, and best of all incorporates bone broth which has a whole host of benefits.

It is also endlessly adjustable.

This weeks creation?

Creamed cauliflower

For lunch we simply added a slice of sourdough batter bread and called it a day.

The older kids added shredded cheddar to theirs to make “cheese” soup. 👉🏻swipe left to see the lovely golden color.

And because we salt and pepper our food at the table so everyone can adjust their intake according to their taste the baby could enjoy a preloaded spoon of her own. ☝🏻check out my stories to see how she took to it.

Every morning, I’m faced with the same choice of either sticking to my plan and feeling in control or making excuses and feeling chaotic. It helps me prioritize my day, put myself first, remove the guess work and decrease the anxiety of trying to do it all.

This plan works and continues to work for me because I have -A virtual workout schedule to follow regardless of what program I’m doing that tells me what to do each day and has a trainer guiding me through each workout. The gym never worked for me because I didn’t know what to do to get the results I wanted. -A nutrition plan that is balanced, sustainable and EASY. I know what I should be eating, how much and have recipes and meal prep help at my finger tips. My nutrition fails when I go through the day grabbing what I can when I can, which leads to poor choices and too much thought. -Accountability and support from my community every single day whenever I need it. Doing things alone isn’t fun and you have a greater chance at quitting if you’re not committed.

How much better would you feel if you had a plan and created a routine that works for you instead of just letting days pass and making excuses?
