This is not a meal prep dish, just something you can make for a quick dinner. Here in the future I plan to do some more recipes (like a couple a month) that aren’t necessarily great meal prep dishes but standard dinners.  I used store bought corn tortillas here but whenever I make tacos I try to use instant masa and make the tortilla myself. Store bought corn tortillas are always dry as shit and they ruin everything but they are so much easier, especially if you don’t have a tortilla press. ⁣

This dish, like just about any cooking, is not an exact science. I don’t measure stuff when I’m just throwing together meals. Just get close and you’ll be fine. Here’s the recipe. It made 4 Tacos. Roughly 222 Cals each. If you need an exact calorie total, weigh and measure for yourself. ⁣

INGREDIENTS⁣
1/2lb red snapper⁣
Blackening seasoning (roughly 1/4-1/2 tsp of chili powder, salt, pepper, cumin, and cayenne mixed together)⁣
1 tbsp olive oil⁣
1/4 cup plain Greek yogurt ⁣
1 tsp Adobo sauce ⁣
Lime juice⁣
Mango⁣
Jalapeño ⁣
Cilantro⁣
Red onion⁣
1 tbsp Cotija cheese⁣
Avocado⁣
Corn tortilla shells⁣
⁣
PREPARATION ⁣
1. Preheat the oven to 400F. -Mix the spices together and drizzle olive oil over the fish. Rub seasoning on the flesh. -Bake until it’s done. I don’t know how long. I never time it because it doesn’t matter. It’s done when it flakes⁣
3. Cut up the mango, jalapeño, cilantro, and red onion into a salsa. -Mix the yogurt with adobo sauce and lime juice. ⁣
4. Construct Tacos. Top with Cotija cheese, avocado, and salsa⁣

❓What can I swap the snapper for?⁣
❗️Literally anything you want. I’m not stopping you from doing anything. Any other white fish. Crab. Lobster. Salmon. Chicken. Steak. Tofu. Tempeh. Sodium hypochlorite (for legal reasons that’s a joke). Pork. Eggplant. I couldn’t care any less. ⁣

mealprep Celebrating Taco Tuesday with this throwback LOADED CAJUN SCALLOP tacos with avocado, veggies, mango and CHIPOTLE YOGURT sauce. I firmly believe in stuffing tortillas to the brim 🙃 which is why I often have to tie them up to keep them together 🙈 Happy Tuesday loves! Sorry I accidentally deleted my other post and didn’t want to retype everything!👌 Used a few spices to create a simple Cajun mix for the scallops. I also dried the scallops out a bit extra before seasoning them and it made the sear absolutely perfect. (See below) Loaded with my favorite local @lef_farms smooth greens (local to New England and processed in a HANDS-FREE facility) and veggies. What is your favorite kind of taco? Typically mine is shrimp, but this one is a close tie. •

Deets: paleo cassava and coconut flour tortillas heated for about one minute per side in a skillet. @lef_farms greens, sautéed asparagus, fresh sliced baby tomatoes, mango chunks, avocado, red cabbage, scallions, cilantro, scallops and this chipotle yogurt sauce. Scallops: patted dry and salted then put back in fridge for about 30 minutes on a plate. Take them out and season with salt, pepper, chipotle chili powder (or red chili powder, garlic powder, onion powder, paprika, and a dash of cayenne. Heat cast iron to medium high and melt ghee, butter or coconut oil. Sear for two minutes per side. Make sure they are spread out to get nice and crisp. Chipotle yogurt sauce: 1/4 cup almond milk yogurt, 1 tablespoon lime juice, 1-2 tablespoons chipotle hot sauce and 1 tablespoon coconut aminos. •

Tonight our Homemade Fettuccine Alfredo with Chicken and Broccoli was served- and we didn’t break thr bank either. Using chicken from our freezer, some had-seen-better-days broccoli from our fridge, 🤣 and other staples we had on hand- we did it (all we had to get from the store was buttermilk). 🎉 Yay!

Emincez votre oignon et faites le revenir dans un peu d'huile d'olive.
Ajoutez les épices et l'ail (j'ai mis du paprika et des epices chili)
Une fois que les oignons sont translucides, ajoutez la boites de tomates concassées et les haricots rouges.(ajoutez de l'eau si le mélange vous semble un peu secos)
Une fois que les haricots sont bien cuits (je ne donne pas de temps car selon si vos haricots sont congelés ou pas... ça change tout!) ajoutez le maïs et laissez mijoter 5 min.
Profitez de ce temps pour cuire votre riz et coupez vos poivrons en deux.

Une fois que le riz est cuit, versez le sur la farce et mélangez. 
Il ne vous reste plus qu'à remplir vos poivrons ( parsemez de fromage rapé :) )et à enfournez les tout une demi heure à 180.

mealprep I love it when my hubby is on the gym game and food game 😬 It’s hard him working away a lot. Shopping and tea for one is much harder than buying and eating when there’s 2 of you. He’s properly back on the waggon though he fell off a good while 😂 (thankgod 🙏🏻) when he’s got his mojo back I get mine back and we make a good team 🤗 If it wasn’t for my hubbies skills with food I’d probably of died of starvation by now and be in a dark ditch somewhere 😂 We’ve been trying to eat well a good month or so now😂🤦🏻‍♀️ have smaller portions. Eat cleaner with the small treat/treats in-between not killing ourselves. Usually we make tea for us two and it could feed a small village 🤦🏻‍♀️. So we’ve dropped the carbs and controlling our food intake. Not a diet just good choices. Mainly eating chicken, lean beef mince, turkey mince and veggies. And having two protein shakes a day, porridge always pre training and a boat load of water ...and egg whites👌🏻😍 •
