INGREDIENTS:
For the chicken
4 chicken breasts
1 teaspoon Italian seasoning optional
1 teaspoon paprika optional
1/2 teaspoon garlic powder
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon olive oil
For the filling
2 cups broccoli florets
1/4 cup bell pepper minced
1/2 cup cheddar cheese or melting cheese of choice
4 ounces cream cheese softened
¼ cup grated Parmesan
2 cloves garlic minced
salt and pepper

Here’s how to make everything:⁠
1. For the shrimp, I pat them down with a paper towel then tossed them with some olive oil, pink Himalayan salt, ground pepper, smoked paprika, smoked chili, and garlic powder. You can get creative and use whatever you want. Don’t be afraid to experiment.⁠

2. Cook the shrimp for 60-75 seconds on each side. Don’t over do it as it will become rubbery.⁠

3. For the “noodles” I spiralized 1 zucchini and tossed in some spicy cashew cheese sauce. Warmed it up for a couple of minutes on medium heat. You can use any type of pasta or cheese sauce you’d like.⁠

I love these vegan brownies because they’re simple, delicious, and the batter can be made in one blender. 🙌🏼 These brownies also rely on chickpeas as the base, which lends some more protein, fiber, and iron to the mix. I have a blog post coming that will discuss more about how to eat intuitively throughout the holidays, but we may as well touch on it here ✨.

From my professional perspective as a Registered Dietitian, as well as my personal perspective, I see nothing wrong with the 'healthified' versions of certain foods, so long as they're not seen as a direct, all-the-time replacement as the original food itself ✨ What do I mean by this? The bottom line is that these vegan brownies are delicious. They're chocolatey, gooey, pepperminty, and have an amazing texture. But they're not a replacement for regular brownies to me. I eat these 'healthified' brownies because they're delicious, and sure, I like that there's added protein and fiber in them. But I don't use these as a replacement for regular brownies (vegan for me personally). I don't feel deprived after eating them. And I don't feel 'good' for eating these and 'bad' for eating regular vegan brownies 🤷‍♀️ I will be sharing holiday recipes this year that are both 'healthified' and 'regular vegan' and I love them all the same, and I hope you will too ☺️.

mealprep EASY FISH PIE! 🐟⁠ Fish is so good for little ones as it's an excellent source of omega 3 fats which help to build healthy brains. This is a great way to introduce fish to babies - it's nice and mild (not too fishy), is easy to make and kid and adult friendly too. ⁠⠀

This is a staple in our house, although unfortunately my toddler has become fish-phobic in recent months! But he used to love this as a baby so I'm hoping that he'll come full circle at some point 😬⁠⠀

RECIPE⁠⠀
Ingredients (makes one medium sized dish)⁠⠀
2 large potatoes, peeled and cut into chunks⁠⠀
1 skinless, boneless salmon fillet⁠⠀
1 skinless, boneless white fish fillet⁠⠀
200ml milk⁠⠀
1 bay leaf ⁠⠀
50g butter⁠⠀
1/3 cup flour⁠⠀
½ cup frozen peas⁠⠀
1/3 cup milk, extra⁠⠀
1/3 cup grated cheese ⁠⠀
⁠⠀
Method: ⁠⠀
•  Preheat oven to 170C⁠⠀
•  Boil potatoes for 20 minutes or until very soft. ⁠⠀
•  Meanwhile, place fish in a small baking dish and cover with milk. Add bay leaf and cover with foil. Bake for 15-20 minutes or until fish is cooked through and flakes off with a fork. Drain fish, reserving milk. Flake fish. ⁠⠀
•  Melt butter in a saucepan and stir in flour. Add 1/3 of the reserved milk and whisk until smooth. Add remaining milk and continue to whisk until sauce thickens. Add flaked fish and peas. Return to baking dish. ⁠⠀
•  Mash potato and stir through milk and cheese. ⁠⠀
•  Spoon mashed potato over fish mixture and bake for 20 minutes or until potato is lightly browned. ⁠⠀

Fibre!! The best way to get enough fibre in is to increase the amount of vegetables you are eating. Including legumes, like chickpeas. I have added loads of fresh dill, coriander and basil, plus garlic, salt and EVO. Tuesdays are normally my meal prep days as Sundays are really hectic and the last thing I want to do is be in the kitchen for two hours whilst everyone else is taking it easy! So my advice with meal prep is this:⠀⠀⠀⠀⠀⠀⠀⠀⠀
1. Start small, even if its just salads that you prepare to accompany your main meals⠀⠀⠀⠀⠀⠀⠀⠀⠀
2. Use what you have or you may end up with more than you need⠀⠀⠀⠀⠀⠀⠀⠀⠀
3. Block out an hour or two of uninterrupted time during the week when you can get it all done in one go⠀⠀⠀⠀⠀⠀⠀⠀⠀
4. If it helps you can use recipes or keep things super simple, steaming, baking, grilling are all great options.⠀⠀⠀⠀⠀⠀⠀⠀⠀
5. If you fail to prep, what can be done on the go? Have a bank of recipes and meals you can make on the spot with minimal effort and allow you to eat well.⠀⠀⠀⠀⠀⠀⠀⠀⠀

Mit buntem Gemüse gegen den tristen Herbst! Und das könnt ihr euch megalecker ins Büro mitnehmen – mit Food-Prep-Rezepten wie diesem hier: Unsere Gemüsebox mit Hähnchenbruststreifen. Die gibt euch den ganzen Tag Energie und ist richtig gut für eure Konzentrationsfähigkeit. ⁠

Für 2 Personen braucht Ihr:⁠
• 1 Hähnchenbrustfilet (300–400 Gramm)⁠
• 50 g Pekanüsse⁠
• 100 g Brokkoli⁠
• 100 g Paprika⁠
• einige Salatblätter (z.B. Kopfsalat) ⁠
• 50 ml Gemüsebrühe⁠
• 2 rote Zwiebeln⁠
• 2 Karotten⁠
• 5 g frische Petersilie ⁠
• 1 Teelöffel Salz⁠
• 2 Teelöffel Sonnenblumen- oder Rapsöl (zum Braten)⁠
• 2 verschließbare Aufbewahrungsbehälter mit jeweils 0,5–0,75 L Fassungsvermögen⁠

So einfach geht’s⁠
Das Gemüse waschen, schneiden und mit der Brühe in einem Topf 15 Minuten lang andünsten. Die Filetscheiben in Öl 4 Minuten pro Seite braten, Pekanüsse anrösten und alles mit Salz abschmecken. Anschließend könnt ihr alles in verschließbaren Behältern portionieren und abgekühlt in den Kühlschrank stellen.⁠
Richtig lecker und ziemlich praktisch. ⁠

💚 #healthylicious Food-Prep-Idee⁠ Mit buntem Gemüse gegen den tristen Herbst! Und das könnt ihr euch megalecker ins Büro mitnehmen – mit Food-Prep-Rezepten wie diesem hier: Unsere Gemüsebox mit Hähnchenbruststreifen. Die gibt euch den ganzen Tag Energie und ist richtig gut für eure Konzentrationsfähigkeit. ⁠ ⁠ Für 2 Personen braucht Ihr:⁠ • 1 Hähnchenbrustfilet (300–400 Gramm)⁠ • 50 g Pekanüsse⁠ • 100 g Brokkoli⁠ • 100 g Paprika⁠ • einige Salatblätter (z.B. Kopfsalat) ⁠ • 50 ml Gemüsebrühe⁠ • 2 rote Zwiebeln⁠ • 2 Karotten⁠ • 5 g frische Petersilie ⁠ • 1 Teelöffel Salz⁠ • 2 Teelöffel Sonnenblumen- oder Rapsöl (zum Braten)⁠ • 2 verschließbare Aufbewahrungsbehälter mit jeweils 0,5–0,75 L Fassungsvermögen⁠ ⁠ So einfach geht’s⁠ Das Gemüse waschen, schneiden und mit der Brühe in einem Topf 15 Minuten lang andünsten. Back on my maintenance calories now after my 8-week "diet" My goals weren't to lose weight, but to sort out some of the terrible eating habits I had gotten into - and as a result I did lose 2kg in weight but it appeared to mostly be water weight/hormonal fluffiness/puffiness from consuming a lot of refined sugars and not enough real carbohydrates. Eating proper foods that fill me up, feels so much better than drinking a can of Redbull! mealprep Wir hoffen, ihr hattet einen stressfreien Arbeitstag! Heute Abend gibt es bei uns Spaghetti Bolognese mit Gemüsebeilage 🍝😊.

Man nehme Vollkornspaghetti und koche diese nach Anleitung al dente.
Die Bolognese haben wir am Vortag zubereitet, weil diese ca. 2 Stunden köcheln muss und am nächsten Tag noch besser schmeckt.

So wird unsere Lieblings-Bolognese im Schmorbräter gemacht:
~ 1 kg gemischtes Hackfleisch in Öl anbraten
~ 2 TL Tomatenmark und 2 TL Paprikamark dazugeben, alles auf mittlerer Hitzestufe köcheln lassen
~ nach 5 Min 300 ml Rinderbrühe beigeben und 10 min köcheln lassen
~ in der Zwischenzeit 100 g gewürfelte Möhren, 100 g gewürfelten Staudensellerie, 2 Knoblauchzehen, 1 große Zwiebel und 500 ml passierte Tomaten im Mixer zerkleinern
~ alle Zutaten in den Bräter geben und würzen:
~ Salz, Pfeffer, 7 Lorbeerblätter, eine Prise Zucker, Chilli, Ingwer, Oregano, Thymian, Kümmel, Dill und Maggikraut
~ alles auf niedriger Stufe ca. 2 Stufen köcheln lassen, zwischendurch umrühren

Die Beilage besteht aus:
~ Cocktailtomaten
~ eingelegtem Weißkohl, bekommt man in russischen oder türkischen Supermärkten oder macht es selbst. Wir haben eine liebe Kollegin, die das selbst einlegt, super gesund!

Geriebener Parmesankäse rundet das Gericht ab.
