Happy Wednesday! Lunching today on a juicy Grilled Basil Chicken, paired with Caprese Salad (tomatoes, fresh basil, mozzarella cheese, black pepper, salt, olive oil and balsamic vinegar), avocado and microgreens 👏🏻👏🏻👏🏻😍💥 Grilled Basil Chicken (I used 2 breasts): wash and towel dry the chicken. Coat it with extra virgin olive oil & season with black pepper, pink salt, garlic powder, oregano, and lots of dried basil. I suggest you marinate the chicken for at least 15 minutes, preferably 30 minutes to an hour. Preheat a lightly oiled grill pan over high heat. Lower heat to medium and cook the chicken for 4 minutes on each side, then transfer into the oven and bake at 400F for 7-8 minutes or until ready. enjoy!

“SPANAKOPITA” aka CHEESY SPINACH PIE QUESADILLAS and CREAMY DILL KETCHUP DIP! Because 15 minute meals are my jam 🙃 These babies were inspired by my mom’s spinach pie recipe growing up...they can be made dairy free if you’d prefer! I have made them with dairy free cheese and regular. This dip was a quick one I made and it goes well, but they are good with a tzatziki too! Made these for dinner last night because I needed something quick and they were BOMB! Happy Tuesday loves! What’s your favorite quesadilla filling?⠀
•⠀
Deets: combine 1/4 cup feta (or vegan feta, 1/4 cup Parmesan (or vegan Parmesan), 1 egg, salt/pepper, 1 teaspoon coconut aminos and 1 tablespoon chopped dill in a bowl. Sauté 1/4 chopped onion and 1 minced clove of garlic in 2 teaspoons oil on medium high until onions are soft, then add 6 cups of chopped spinach and allow spinach to wilt. Put spinach mixture in a bowl and drain of excess liquid, then add the spinach mixture to the cheese mixture. Heat cast iron pan on medium high and spray with oil. Place four @sietefoods almond flour tortillas (cut in half) on the pan and divide mixture amongst four of the halved tortillas. After about two minutes, place the empty half tortillas on top of the spinach and press down lightly. Allow to cook for another minute. Remove, cut up and enjoy! Sauce: 2 tablespoons Greek yogurt (dairy free or regular), 2 tablespoons organic ketchup, a squeeze of lemon, salt/pepper to taste, fresh chopped dill).

.⠀ ZAATAR LEMON SEARED CHICKEN and crispy ROSEMARY GARLIC POTATOES. This is whole30 for those of you doing the September While 30. This chicken method from @cookinglight makes the JUICIEST chicken! Sharing this method below. Made these potatoes last night...one of my faves! Hope you all had a fabulous week. I feel like I got a lot accomplished for my upcoming cookbook, even though it was a short one! Any big plans this weekend?⠀

Deets: CHICKEN: pat breasts dry, season with salt and pepper then place in the fridge on a rack uncovered for 30 + mins. Remove, pat dry again, season with zaatar seasoning (I get mine from @nomadsmarketplace) and some lemon zest. Heat cast iron over medium low with some coconut oil and place chicken breast side down and cook for 9 minutes. Lift the chicken and add a little ghee or butter and let it cook for one minute before flipping and cook for another 5 mins on the other side. Potatoes: (see method in my stories) coat with a little olive oil, season with salt, pepper, garlic powder and fresh rosemary and bake for about 20 minutes in a pan on 425, flipping a couple times. Broccolini blanched then sautéed.

mealplans This is my May through September cutting progress, left to right. What has been extremely helpful was not doing too much too soon. Being able to lift heavy and enjoy my workouts has been a priority, while also keeping my calories at a healthy level. This has allowed me to consume my body’s micro and macronutrient needs, thus keeping my hormones and overall health stable. Sure, this approach takes longer, but it is easier to stay committed to something that doesn’t kill you along the way. The damage from extreme dieting and extreme binging is NEVER worth it.

Christine has been very brave and shared with us why she has taken the leap & signed up for the ASN 60 Day Challenge 👇🏽⁣ ​⁣⁣ ⁣ ​"I’ve spent a lot of time this week reflecting on the past few weeks. I’ve been completely overwhelmed with ‘life’ and all it has thrown at me. Our toddler has been really sick, the application to buy our very first home fell through, broke the saucer from my favourite teacup, sliced my finger open- generally one of ‘those weeks’ where it felt everything was against me, and most importantly, I let it. After canceling my plans this weekend to catch up with friends out of town, I have taken some time out for me. This has involved beach walks, going out for a cuppa solo, clearing my boys wardrobe & generally decluttering both physically & mentally. It’s made me realise just how important it is to have that time to yourself. Self-care is a real thing! I’ve also been thinking a lot about the upcoming ASN Challenge- I’m so ready for it now- after having baby no. 2 last Aug, it’s really time to claim 'me' back and I’m so ready to be the best version of myself that I’ve ever been! I just wanted to write this as a reminder to everyone, if you have one of those days/weeks/months, it won’t be like that forever. Things will get better, you’ve just got to let it 💜 Pics are from Jan & June this year. Healthy fats also help us absorb more nutrients through the small intestine like the abundance of vitamin C and antioxidants in strawberries & blue berries. Add a little crunch and extra vitamin B-6 with the pistachios and this is a great breakfast to start your day without being weighed down on carbohydrates. 🙌🏻 🍓

Hummus not only tastes amazingly great, but it’s packed with protein, healthy fats and fibre! 
If your a foodie like us here at Cloud 9, a great go to snack is hummus. Its mega tasty and packed with protein, healthy fats and fibre.

This is all you need to make it!

Ingredients

240g drained chick peas 
20g tahini
100g low fat natural/plain yoghurt
2 crushed garlic cloves
2 tbsp lemon juice
1/2 tsp salt 
1 tsp cumin
1 tsp paprika
1 tbsp olive oil
1 roasted red pepper

Method

Put the chickpeas, tahini, yoghurt, garlic, salt, lemon juice, spices and roasted pepper into a blender and BLEND!

Blend! And if you would like a smoother hummus then add 1-2 tbsp of the drainer chickpea water at a time until you reach your a smoother consistency.

Serve with raw carrot batons or toasted pitta bread and enjoy!

Per serving (this recipe serves 6) below are the nutritional values:

66 calories
3g fat
6g carbohydrates 
4g protein .

ONE BAND ! ABs-olutely (🤣 I’m so funny) !!! but seriously you positively can strengthen your core without dropping to the floor and crunching your guts or drawing your knees to your forehead 😩😭. (Diet and Caloric deficiencies play a major part as well) ———————————————————————————
Balancing while performing a exercise engages the core ! 🔥. So you can tighten strengthen and tone while practicing a controlled and steady motion so remember to 🗣TAKE YOUR TIME ! ⏰ when preforming a stabilizing or balancing workout take your time feel each muscle contracting as you attempt to remain in place ! ... and most importantly remember to breathe 😙 💨 ———————————————————————————
