These would be a tun and easy a fun baking project this weekend because, you probably already have all of the ingredients in your cardboard? 👏 They're naturally sweetened with banana and maple syrup, gluten free and vegan! I've had many taste testers and they're a big hit all around! 👍😋
- 1 cup of oat flour
- 1/2 cup of oats
- 1 banana (smashed)
- 3/4 cup of peanut butter
- 1/4 cup of maple syrup
- 1 tsp of cinnamon
- 1 tsp of vanilla extract
- 1/4 cup of chocolate chips

Method:
1) Start by making oat flour: place a cup of oats in a blender and grind them until a fine flour has been produced.
2) Preheat the oven to 350° and line a baking sheet with parchment paper.
3) Mix the wet and dry ingredients separately then combine them in a large bowl. Mix everything well and fold in the chocolate chips.
4) Take a few tbsp of the mixture, roll it into a ball, place it on your baking sheet and flatten them out with your hand to form cookies.
5) Bake for 10 -15 mins. Allow cookies to cool and enjoy 🌱🍪

🎉 Happy Mealtime Monday fam! On the road this week but wanted to serve up a sexy snack recipe for when I get back —Double Chocolate Zucchini Muffins! 🤤⁣

🍫 If you’ve never tried baking zucchini in sweets before, you can’t taste it (I swear) and it makes the baked goods moist and just right.👌⁣

📌Save this to make your own in just a few steps!⁣
⁣
1️⃣ Preheat your oven to 350°F and spray your muffin tin with nonstick spray. Use a medium sized grated to shred a zucchini. Transfer to a paper towel and squeeze out all excess liquid (there’s more water than you’d expect).⁣
2️⃣ Mash a banana in a medium bowl. Add dry shredded zucchini, an egg, 2 tbsp coconut oil, 1/3c maple syrup, 1 tsp vanilla extract, 1/2c almond milk.⁣
3️⃣ Mix 1 1/4c oat flour, 1/3c cacao powder, 1 tsp baking soda, and 1/4 tsp salt in a separate bowl, then slowly stir these ingredients into the other bowl to create your batter.⁣
4️⃣ Add to a muffin tin, top with dark chocolate chips, then bake for 24min @ 350°F (Cool and enjoy)!⁣

I am allergic to nuts so I didn’t use any nuts, but if you want to sub nuts for seeds or raisins for mulberries or honey for maple syrup YOU CAN. keep the overall ratio of wet to dry the same and it will work out just fine!

ingredients:
• ½ cup old fashion oats
• ¼ cup pumpkin seeds
• ¼ cup sunflower seeds
• ¼ cup buckwheat groats
• ¼ cup unsweetened coconut flakes
• ¼ cup dried mulberries
• 2 tablespoons cacao nibs
• 2 tablespoons whole flax seeds
• 2 tablespoons chia seeds
• 2 tablespoons hemp seeds
• 1 tablespoon maca powder (optional)
• ¼ cup coconut oil
• 2 tablespoons + a little maple syrup
• a splash of vanilla extract
• a sprinkle of cinnamon
• a sprinkle of sea salt

🔸Preheat oven to 350 degrees. Spread the pumpkin seeds on a baking sheet. Bake for 10-12 minutes, until lightly golden. Cool for 15-20 minutes.
Put the pumpkin seeds in a food processor. Run the food processor for approximately 4-5 minutes, until the pumpkin seeds begin to have the texture of butter. If necessary, stop the food processor and scrape the sides. Continue running the food processor for another 2-5 minutes until the pumpkin seeds have the texture of butter. Add some of the oil, as needed, until the desired consistency is obtained.

Carbs from the oats, antioxidants from the cranberries, healthy fats from all the seeds, and protein from the egg whites and protein powder. These bars will DEFINITELY keep you healthy and strong. 💪🏼 Recipe:
2 dates, pitted 
1/2 cup oats 
1.5 tbsp honey 
1 egg white 
1 tsp coconut oil 
1/2 tsp vanilla extract 
2 tsp hemp seeds 
1 tsp chia seeds 
1/3 cup cranberry mix 
1/3 scoop coconut almond protein powder

Massa é ótimo e cai sempre bem, mas uma alternativa que nos lembre a massa e que saiba igual ou ainda melhor, não fica nada atrás! Depois de um fim de semana algo descuidado na dieta...🤭🍕🍦🍔🍰 ... aqui está uma das minhas formas de excelência para uma refeição com baixo nível de hidratos e que me sabe sempre tãoooo bem! Para não falar que é um ótima forma de incluir legumes na dieta e tem um baixo nível calórico - esta receita de zoodles deu-me para uma refeição e tem aproximadamente 170kcal. Depois podemos juntar alguma proteína, como neste caso, 1 ou 2 ovos cozidos. 🤤

ZOODLES DE TOMATE, CENOURA E ALHO FRANCÊS
⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
Ingredientes:
• 45g alho-francês (+\- 1/2);
• 1 alho;
• 1 tomate; • 150g de courgete espiralizada; • 1 cenoura;
• 2 c. sopa de polpa de tomate;
• Vinagre q.b.;
• Azeite q.b.;
• Salsa e outra especiarias a gosto; ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
Modo de fazer:
⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
Comecei por pegar na courgete e através de uma máquina que tenho em casa cortei-a para ficar como esparguete. No entanto, para quem não tem esta ferramenta existem há venda no supermercado sacos com a courgete já assim. Numa frigideira coloquei um pingo de azeite, o alho francês em rodelas, o alho picado e o tomate picado e deixei refogar até ficar dourado. Adicionei alguma especiarias (caril, pimenta preta...) e vinagre. Adoro a acidez que o vinagre dá ao prato! Depois, juntei a cenoura que cortei com uma lâmina para que ficasse tipo em raspas longas e deixei refogar mais um pouco. Finalmente e, quase de seguida, adicionei a courgete e mais umas pingas de vinagre, sal, e deixei cozinhar à volta de 5min, até ver que a courgete já estava cozida. Terminei com salsa e polvilhei com queijo ralado!

Eating some fast food, not drinking enough water, and drinking way too much too often. But this week I decided to get completely back on track, I have not drank for 4 going on 5 days (yaaayyy go me!) and just this week I have lost 2 pounds I was 230lbs a couple weeks ago got up to 235 and now I’m back down to 233. A little lovely (solo) snack when you feel your energy (blood sugar) dipping and lunch is not ready yet. Should I call it #aperitif? Something to definitely get your gastric juices going...with a balance of protein and healthy fats (from fish and cheese), and carbs from the veggies and sourdough bread. Super makkelijk en veeeeelste lekker. ✰80gram dadels
✰100gram cashewboter ongezoet @myproteinnl
✰30gram cashewmeel of amandelmeel
✰1tl vanillepasta
✰100gram extra pure chocolade (85%) @delicatachocolade 
Week de dadels 5 minuten in heet water. Doe ze daarna samen met de cashewboter, cashewmeel en vanillepasta in een keukenmachine en mix glad. Draai tot balletjes (ongeveer 10) en zet voor 30minuten in de koelkast of tot ze wat harder zijn. Smelt de chocolade. Leg de balletjes op bakpapier en giet de chocolade eroverheen. Kruimel eventueel nog wat noten erover en zet weer terug in de koelkast tot de chocolade hard is geworden! Klaar is Kees🥳❣️
