1 tsp salt
2 tbsp olive oil
2 garlic cloves, minced
1/4 cup pesto
4 tbsp cream cheese
3/4 cup mozzarella cheese

You are creating a "pocket" for all the filling to bake in. Season the chicken with salt, inside and out. In a small bowl, mix the garlic, pesto, cream cheese and mozzarella. Set aside. Layer the inside pockets of your chicken with the cream cheese mixture, sun-dried tomatoes and spinach. Secure the opening with toothpicks if desired. Heat the olive oil in a cast iron pan, or oven proof skillet over medium heat. Sear the chicken on both sides for 3-4 minutes each, until golden brown. Place all four breasts back into the pan (or on a baking sheet if you are bot using an oven proof skillet) and place them in the oven until the internal temperature of the chicken breast is 165°F. CHICKEN DETAILS: I cut a slit in the side of a chicken breast and stuffed it with 1 oz @kitehillfoods chive cream cheese spread (2sp). I generously coated all sides of the chicken with everything bagel seasoning (I didn’t add anything to get it to stick - does just fine on its own 👌🏻). I put the chicken on a baking tray and misted the top with @chosenfoods avocado oil. Baked at 400F until the inside reached 165F. Usually 20-30 min just depending on the size of your chicken breast - use a meat thermometer to check!

Most nights in the summer it’s 9pm and I realize there is nothing in the house for Dave to take to work the next day. He’s got major food sensitivities so eating out is not an option.

Needless to say these 10 minute skillet chicken recipes and the instant pot get used a lot in these situations.

I’m guessing that you find yourself in the same boat as well. Short on time but really wanting to make something healthy but tasty. I gotchu! 
This recipe could not be easier:
- cube chicken (I use sharp kitchen shears)
- add taco seasoning, red wine vinegar and garlic olive oil (or olive oil and garlic powder)
- stir well
- cook in a hot skillet 7-10 minutes until chicken has reached 165F and is crispy!

You can serve this chicken in tacos, burrito bowls, taco salad, on pizza or simply with some beans and rice. It’s versatile and really tasty!

2 almond tortillas heated up on medium high in a pan sprayed with avocado oil, (I heated the spinach in the same pan while the tortillas were cooking). Mash some black beans onto one side of the tortilla and add a sprinkle of cumin, then top the beans with vegan Gouda (or any cheese of your choice). Once the cheese starts melting add some of the wilted spinach and some mashed avocado and fold over. Cook for another 30 seconds or so. Mango Chipotle sauce: 1/2 ripe mango blended with 1-2 tablespoons chipotle sauce (or any hot sauce if your choice)

healthyrecipes It’s been a while I cooked this lovely dish. Simple pasta with olive oil and season with garlic powder, salt and grind pepper for taste. Next I baked Sea bass and season with salt and pepper for 30 mins slow baked. On the other hand, I prepare the lemon butter sauce with tomatoes. Heat the butter with medium heat and the colour turned to brown and lower the heat and add the freshly squeezed lemon 🍋. Add in the sliced shallots, fresh parsley and tomatoes which I had cut them into halves. Mixed well and medium heat and off while the fish had rested enough for 5mins in the oven. Removed the fish and poured in the lemon butter tomatoes over the fish. Yes it’s so tasty 😋

One of my all time fave meals to throw together in a pinch: cauliflower fried rice💥 Packed full of colorful vegetables and look at that perfect pasture-raised egg!!! Enjoyed with sockeye salmon and roasted purple & japanese sweet potatoes. Easy, nourishing, delish✔️✔️✔️

ingredients:
➳ iceberg mix salad
➳ salad dressing or oil by choice
➳ 40 g firm tofu
➳ mixed vegetables (green beans, carrots, zucchini's..)
➳ sojacreme cuisine or any other cooking cream

how to:
➳ heat the 1-2 tbsp olive oil in a pan and then add a little bit of onion
➳ add 40g of firm tofu cut to smaller pieces and then add a little bit of healthy maple syrup over them
➳ cook tofu for 2 minutes and flip them on every side
➳ add vegetables by choice (green beans, zucchini's, green peas..)
and stir fry them for 5 minutes
➳ add sojacreme cuisine (or any other cream for cooking)
➳ add a pinch of salt and cook for 2 minutes
➳ in a large bowl prepare iceberg mix salad
➳ add vegetables with tofu to salad
➳ add salad dressing or oil by choice (I added 1 tbsp of pumpkin oil and 1tsp of aceto balsamico)
