This is super easy to whip together. Today I used some Josie’s arugula, fresh watercress, sliced cucumber (they are in there somewhere), diced avocado, fresh jalapeño peppers, added some shrimp and tossed it in the tahini sauce. A nice light + refreshing summer salad that keeps the mind + muscles happy.

Here is how I made it:
.
1.Start with some wild deveined shrimp and toss with some olive oil, sea salt, fresh pepper, garlic powder, a little paprika. Experiment & have fun with what you like though. Mix everything well & let sit.

2.Take a large pan and add 1 or 2 tablespoons olive oil + 1 tbsp minced garlic. After a few seconds, add the shrimp and cook for about 1-1.5 minutes on each side. Don’t overcook as it turns rubbery. Set aside.
.
3.In a large bowl, add your greens + veggies. I used a big base of arugula and added fresh watercress, 🥑, sliced jalapeños (deseed these if you dont like it super spicy), some cucumbers. You can add anything you have on hand.

4.Next is the dressing. I used 2 tablespoons high quality velvety tahini, 1 tablespoon olive oil, juice from 1/2 large lemon, sea salt, 1 tsp freshly minced garlic, and about 1 tablespoon of finely chipped fresh cilantro. Mix everything together, then taste.  You’ll have to add more tahini/oil/lemon/salt/herbs based on your preference if you’d like. Everyone is a bit different.

5.Add the shrimp, add your desired amount of dressing, and mix everything well. I then topped with some sesame seeds.  You can also use hemp seeds or anything else you fancy.

healthymeals I made the corn chowder using the recipe by @drpamela.rd & it was wonderful & very easy to make! 😍 I just used frozen corn instead of corn from the cob because that's what I had. I couldn't find a GF veggie sausage, so I left it out of my bowl & added it to my family's. I did add a little salt & pepper to mine but my family liked it as is. I also left out the red pepper flakes mainly because I didn't have any, although I would've only been able to add them to my bowl because my family doesn't like that extra pizzazz. 😂 Anyways, everyone enjoyed it (which is a BIG deal because my family doesn't typically like soup) so I will definitely be making it again! I'm so grateful for @drpamelard and all the wonderful vegan & family friendly recipes she shares. ❤👍 If anyone knows of a good GF vegan sausage PLEASE lmk as I have been looking but haven't found any. 😭 If you know of a good recipe for a GF vegan sausage that would be awesome too! .

Directions:
Place chicken breasts in the slow cooker. Cover with salsa and toss the chicken in the salsa. Cover and cook on high for 4 hours or low for 6-8 hours. Shred the chicken in the slow cooker and serve. Add lime if desired.

Dinner tonight is chicken tacos! This a super simple recipe that is great for a quick meal if you are busy all day. . . Ingredients: -4 boneless chicken breasts -2 cups of your favorite salsa -salt and pepper -limes . . Directions: Place chicken breasts in the slow cooker. Cover with salsa and toss the chicken in the salsa. Cover and cook on high for 4 hours or low for 6-8 hours. Shred the chicken in the slow cooker and serve. healthymeals what’s better, the sound of biting into a crunchy crust or birds chirping in the morning... the obvious answer is that CRUNCH. so if you want some music for your ears (+ taste buds) try out these mini pita pizzas 🤩 it took me 20 minutes and there’s an endless amount of combos for toppings!
-take mini pita bread rounds and lightly coat both sides in EVOO and lay them flat on a baking sheet
-cover in sauce and toppings of choice! i chose: pesto, white onion, white mushrooms, cherry tomatoes, and feta
-bake at 400 degrees for 15 minutes
**for an even crisper crunch all the way through, bake pita with EVOO alone for 3-5 minutes, then add sauce and toppings and continue to cook

this specific veggie combo would’ve been so good with goat cheese and a drizzle of balsamic glaze 🤤 + this would be so easy to make vegan! you could leave out the cheese or use vegan subs. but the question is: is there vegan feta or goat cheese? has anyone had it...is it good... and where can i get it? i love eating vegan but i really can’t ignore my love for cheese. there’s a lot of vegan cheeses that just do not cut it for me...i only have a few favs i can actually eat and be satisfied with 😫 feel free to drop your fav vegan cheeses/subs in my DMS/comments/etc! The avocados in the boxes will come firm, as we're not a 9-5 pm retail shop where they stay out and ripen in a warm shop. They have come straight from the market and the best way to ripen firm avocados is to place in a brown paper bag in a warm cupboard. I keep mine in the pantry and they can take up to a week. They slowly turn from green to dark. They are worth the wait!⁠

They have come straight from the market and the best way to ripen firm avocados is to place in a brown paper bag in a warm cupboard. I keep mine in the pantry and they can take up to a week. They slowly turn from green to dark. I sure love pesto and this dinner hit the spot! Pesto cauliflower gnocchi with shrimp and cherry tomatoes. Also took 10 minutes to make, no joke. Super satisfying meal after a tough work out! 👏🏼⁣

Here are the dEATS:⁣
-Heat butter in two separate skillets⁣
-Spread out cauliflower gnocchi evenly in one and let cook for 2-3 mins undisturbed⁣
-In other skillet, cook shrimp for 2 mins on each side. These shrimp were soo little so did not take long at all to make! Be careful to not overcook!⁣
-Then begin to toss around gnocchi and add cherry tomatoes to skillet and cook for a couple more minutes ⁣
-Mix all together in a bowl with the good good aka pesto 😛😛⁣

Taco meat⁣
Ingredients: ⁣
- 1 lb lean ground beef (I use the leanest I can find)⁣
- 2 tbsp olive oil⁣
- Garlic powder⁣
- Cumin⁣
- Chili powder ⁣
- Pink Himalayan salt ⁣
⁣
Directions: ⁣
- heat olive oil in a large pan ⁣
- Add plain ground beef and begin to separate with a wooden spoon⁣
- Add desired amount of spices (I’m not really sure the exact amount I do, but I would say 2 tsp salt and 2 parts cumin + 1 part chili powder to your desired level of seasoning. This is a makeshift taco seasoning, tastes the same, and doesn’t have a ton of sodium) ⁣
- Sauté and continue to break apart crumbles until meat is completely brown ⁣

Peppers: ⁣
Ingredients: ⁣
- 1/2 red bell pepper⁣
- 1/2 green bell pepper ⁣
- Chili powder⁣
- Cumin⁣
- Salt ⁣
- 2 tbsp olive oil ⁣

Directions: ⁣
- Dice peppers⁣
- Heat oil in a medium pan and sauté peppers with seasoning (again, add desired amount) ⁣

Finally.. assemble that potato 🥔 ⁣

- 3 oz cup prepped taco meat⁣
- 1 russet potato ⁣
- Pre-made salsa of choice ⁣
- 1/4 avocado ⁣
- Diced tomatoes ⁣
- Cilantro ⁣
- Plain Greek yogurt ⁣
⁣
Directions: ⁣
- Poke some holes in your potato so it doesn’t POP in the microwave, and heat using the potato setting until it’s soft (cut open after one heating to see where you’re at)⁣
- Top potato w/ meat and peppers from fridge if cold, and heat one more minute ⁣
- Add cold toppings ⁣
⁣
MEAL PREP TIPS: ⁣
- buy one potato for each day you’re going to eat dinner at home that week⁣
- Make the meat, dice tomatoes, and cook peppers on a Sunday. Use throughout the rest of the week (only takes 7 minutes to make the potato, so it’s super quick) ⁣

Cauliflower Rice: ⁣
Ingredients: ⁣
- 1 large head cauliflower ⁣
- 2 tbsp olive oil⁣
- Garlic powder + pepper + Himalayan salt to taste ⁣
⁣
Directions: ⁣
- Cut cauliflower into very small pieces, pulse in blender or food processor ⁣
- Heat 2 tbsp olive oil in a large pan ⁣
- Season cauliflower rice and sauté for 8-12 minutes until tender ⁣
⁣
Meatballs:⁣
Ingredients: ⁣
- 1 lb ground chicken ⁣
- 2 tbsp olive oil ⁣
- 1/2 cup cilantro ⁣
- 1/2 tsp salt and 1/2 tsp pepper⁣
- As much garlic powder and Italian seasoning as desired ⁣
- 1/2 cup mozzarella cheese ⁣
⁣
Directions: ⁣
- mix all ingredients in a large bowl ⁣
- Heat olive oil in a large pan ⁣
- Ball meatballs with ya hands (it’s nasty it’s fine) & place them on the pan (not touching or else they’ll melt together)⁣
- Let simmer, flipping occasionally ⁣
⁣
Saucey sauce:⁣
ingredients: ⁣
- 2 tbsp Siracha ⁣
- 1/2 cup low sodium chicken stock ⁣
- Red pepper flakes to desired amount ⁣
- 3 tbsp cilantro⁣
- 1/2 lemon juiced⁣
⁣
Directions ⁣
- heat all ingredients over medium heat to simmer and pour over meatballs ⁣
⁣
Broccoli: ⁣
- It’s literally frozen broccoli bc I’m lazy ⁣

Mini Quiches (Aka baked egg muffins) 🍳 ⁣

Ingredients:⁣
- 12 eggs ⁣
- 1/2 red pepper⁣
- 1/2 green pepper⁣
- 3 handfuls of spinach ⁣
- Pink Himalayan salt ⁣
- Pepper ⁣
⁣
Directions:⁣
- Preheat oven to 350 and grease a 12-slot muffin tin ⁣
- Crack 12 eggs into large bowl⁣
- Chop peppers and remove stems from spinach & Rip spinach into smaller pieces ⁣
- Mix veggies into egg mixture and season with 1/2 tsp salt and 1/2 tsp pepper ⁣
- Bake in oven for 15-20 minutes (when muffins are done, there will be no liquid on top) ⁣
- Reheat before eating - microwave 45 seconds ⁣

Note: ⁣
- I do this with a bunch of combos of veggies, so just add what you want. Adding the eggs to the bowl first allows you to add a desirable amount of veggies, no matter what they are. ⁣
⁣
Serving: ⁣
- I usually eat 2 muffins topped with 1/2 avocado and Siracha. ⁣
- If you want more carbs, add a slice of bread (this week I’m adding 1 bagel thin w/ Greek yogurt cream cheese) ⁣
