1 lb Chicken Breast into small pieces
1 Tbsp Olive Oil
4 Cups Greens
¼ Small Red Onion sliced
¾ Cup Cherry tomatoes halved
½ English Cucumber sliced
1 Avocado sliced
⅓ Cup Corn Fresh or canned
1 Cup Plain non-fat Greek yogurt
2-3 Cloves Garlic minced
2 Tsp Lemon Juice
2 Tbsp Onion finely chopped
1 Tbsp Dijon Mustard
2 Tbsp Fresh chives chopped
1 Tbsp Fresh chopped
1 Tbsp Fresh dill finely chopped
Sea salt and pepper

🥰👩🏻‍🍳Instructions
Start with making the homemade ranch dressing. Add all the ingredients to a small jar, place the lid on, then shake to emulsify.
Pour about 1/3 of the dressing over the chicken and allow it to marinate for at least 15 minutes. Refrigerate the remaining dressing until ready to use.
Next, heat oil in a large non-stick pan, and add in the chicken in a single layer. Cook until golden brown and cooked through about 5-7 minutes.
To assemble the salad, add green to a large bowl. Top with remaining ingredients. Just before serving toss with the dressing and enjoy!

healthyfoods Meal prep is more than just cooking lunches and diners,  it's also all the things in between. Got my fruits and veggies all washed, cut, and ready to grab.

I like to leave them on my counter after washing to let them dry for an hour or so then transfer them into tight sealed containers. I also put paper towels at the bottom so that it can catch the humidity coming off them keeping them fresh longer.  I freeze my peppers and mushrooms to use in my recipes. They can last quite a few months in the freezer.

BOYS WILL BE BOYS⠀ ⠀ I've shared on my personal profile, but not here yet.⠀ ⠀ A couple of wewks ago, Nick went diwn the slide with a bamboo stick in his hand. The gash on his cheek looked so bad that FB decided to censor it for "violent ir graphic content".⠀ ⠀ The doctors were unable to stitch it tjst night because it was so jagged & they didn't think the surrounding tissue would support the stitches.⠀ ⠀ So, we went back 2 nights later... they were too busy, so I took time off work to take him during the day on day 3.⠀ ⠀ Finally, they were able to sedate him (due to his age & the location of it) & stitch it. ⠀ ⠀ The first photo here is from when I took the stitches out. The second is today, a week later.⠀ ⠀ Nick heals well because of his age and all of the good food we eat, but we have also been applying doTERRA correctX, an ointment that contains essentials oils that are nourishing for the skin and assist in repair. ⠀ ⠀ He's still going to end up with a decent scar, but I'm happy with how well it is healing. ⠀ ⠀ Oh the stories he'll be able to invent as to how he got that scar....

8 cups greens such as arugula spinach, or spring mix
Fruity or lemon-flavored extra virgin olive oil
Juice of 1/2 lemon or 1/2 orange
1 avocado sliced or diced
1 shallot minced
4 ounces toasted sliced almonds
Kosher salt and freshly ground black pepper
Gently warm the leftover shrimp. Or, if you prefer, serve the shrimp chilled.
Toss the shrimp with the salad greens in a large bowl. Lightly drizzle with olive oil, and if desired, some of the sauce remaining from the shrimp with a generous squeeze of citrus, and toss lightly to coat. Add the avocado, shallots and sliced almonds and then season with kosher salt and freshly ground black pepper and serve.

Green tea is also a great source of polyphenols, antioxidants, and daily energy!

Hattet ihr einen angenehmen Tag oder fühlt ich euch einfach nur reif fürs Wochenende? 👀 ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ 🇺🇸🇬🇧Since I'm at home and have free time the whole day until I'll move out and start to study my day starts with lunch 😂 (regarding meals) 😂 So of course I am already awake for some hours before but I don't get hungry until 12 am 🤷 As I still had a few raspberries and blueberries left I got the idea to make the recipe of the wonderful @nini.fitfood for her "Mousse au fruits" again 😍 It was really delicious and filling 🤤 In die afternoon my parents came from work, we drank some coffee together and then I went with my mom to do the weekly food shopping 🙌🏼 As you may have noticed I've always had two of those small cinnamon rolls (@aldinord) with my evening snack since a few days 🤭 That's on the one hand because they are extremely tasty and on the other hand because I forgot about the pack and so they are over the expiration date 🤷🏽 What did you have for lunch or dinner today? And di you have a nice day or do I just feel extremely ready for the weekend now? 👀

Just wanted to apologise for not posting much on here lately, I had 2 weeks off plan a couple of weeks ago and gained 3.5lbs, which I was upset about, no excuses to being off plan just me being lazy and not wanting to follow the plan and just ate what i wanted for the whole 2 weeks, but after I got weighted last week it made me realsie how much i actually enjoyed being on slimming world, so i am back on plan, and i am smashing it this week, had an off plan dinner on Wednesday for my mum's birthday but other than that im smashing it 😊 I will try and post as much as I can on here, but i just wanna get back to routine and not have to worry about posting everything on here, I will still be active just won't be posting much💕 .

There wasn't any more room for more sunflower seeds. The bottom and top were thoroughly covered with all the seeds my heavy handedness would allow me 😂😂🤫 That's the beauty of home cooking. One can go overboard with ingredients of choice without any cause for concern.  Which was the case with the sunflower seeds.

I try not to consume as much bread, but when I do, seeded ones are definitely on top of list.

The pies were an incredible find from Elf Foods...Love me ma veg!

Tonight over dinner, we talked about a skiing trip we plan to take back to France for hubby's 40th... Anyway the point being when we've been before we would eat all the fondue, steak and frois grois we could get our mitts on... Its what the restaurants there are known for...
It raised the question... 'well what would we eat, they don't really do vegan options in France'
Thinking about it I will literally eat potatoes and veg for the whole trip... There's not a chance I'll ever knowingly eat meat or dairy ever again.  The change in my health, mentally and physically since giving up dairy, then meat and fish has been phenomenal.  I've literally eaten myself happy... And the best thing about eating a plantbased diet, of mainly wholefoods, is that you can eat as much as you like and not worry about counting calories. You will always be at a healthy bmi when eating a wholefoods plantbased diet.

Cook time: 10 minutes⁠
Servings: 4-6⁠
Ingredients⁠
2 bunches of scallions�3/4 pounds of carrots, trimmed and peeled�1 cup walnuts, lightly toasted�3/4 cups dried cranberries (my addition)�2 anchovy fillets, finely chopped�1/2 cup lightly packed chopped fresh parsley�1/4 cup fresh lemon juice�1/2 tsp dried chili flakes�salt + pepper�olive oil�1 ball burrata or fresh mozzarella⁠

Heat a cast iron skillet to medium-high heat. Cut the scallions in half so they fit in the skillet, then pop them in the pan dry – no oil. Turn them frequently until they are lightly blackened, about 8-10 minutes. Remove and chop into 1/2 inch pieces and set aside.⁠

The recipe suggests grating the carrots on the large holes of a box grater, but you can use the shredder blade on a food processor and it worked great, so either way.⁠
⁠
Once the carrots are grated or shredded, put them in a large bowl and add the scallions, cranberries, walnuts, anchovies, parsley, lemon juice, chili flakes, 1/2 tsp salt and 20 twists of black pepper. Toss together and let the salad sit for a few minutes so that the dressing really sinks in. Then add 1/4 cup of olive oil, toss, taste and add more seasoning if needed.⁠

Carrot salad you say? Don't knock it until you try it, you will be surprised how amazing it is. ⁠ .⁠ Credit: JOSHUA MCFADDEN Cookbook Six Seasons a new way with vegetables⁠ ⁠ Cook time: 10 minutes⁠ Servings: 4-6⁠ Ingredients⁠ 2 bunches of scallions�3/4 pounds of carrots, trimmed and peeled�1 cup walnuts, lightly toasted�3/4 cups dried cranberries (my addition)�2 anchovy fillets, finely chopped�1/2 cup lightly packed chopped fresh parsley�1/4 cup fresh lemon juice�1/2 tsp dried chili flakes�salt + pepper�olive oil�1 ball burrata or fresh mozzarella⁠ ⁠ Heat a cast iron skillet to medium-high heat. Cut the scallions in half so they fit in the skillet, then pop them in the pan dry – no oil. Turn them frequently until they are lightly blackened, about 8-10 minutes. Remove and chop into 1/2 inch pieces and set aside.⁠ ⁠ The recipe suggests grating the carrots on the large holes of a box grater, but you can use the shredder blade on a food processor and it worked great, so either way.⁠ ⁠ Once the carrots are grated or shredded, put them in a large bowl and add the scallions, cranberries, walnuts, anchovies, parsley, lemon juice, chili flakes, 1/2 tsp salt and 20 twists of black pepper. Toss together and let the salad sit for a few minutes so that the dressing really sinks in.
