healthyfats 🍗Cajun Chicken with Coriander & Lime Rice😋😋. Credit @kitchensanctuary

150g (3/4 cup) dried long grain rice
1 and ½ tbsp Cajun seasoning
2 skinless chicken breasts
1 and ½ tbsp olive oil
½ red bell pepper, deseeded and sliced
½ yellow bell pepper, deseeded and sliced
½ green bell pepper, deseeded and sliced
1 small brown onion, peeled and sliced
Small bunch coriander (cilantro) roughly torn
Zest of 1 lime
1 avocado, peeled, de-stoned and chopped
Instructions
Boil a large pan of water, add the rice and simmer for 15 minutes until the rice is tender. Pour into a sieve and leave to drain.
Whilst the rice is cooking, heat a cast iron griddle pan on a high heat and brush on a little oil.
Sprinkle the Cajun seasoning and pour half the oil on the chicken breasts and rub it in using your hands. Flatten the chicken breasts slightly with your hands and place on the hot griddle. Cook for 7-10 minutes, turning once, until the chicken is charred and no longer pink in the middle. Place on a chopping board to rest whilst you cook the vegetables.
Brush the rest of the oil on the griddle and place the peppers and onion on in a single layer. Cook for 5-6 minutes, turning a couple of times, until lightly charred.
By now the rice should be cooked and drained. Fluff it up with a fork and stir through the coriander and lime zest.
Divide the rice between two bowls. Cut the chicken breasts into slices and place on top of the rice. Add the char-grilled peppers and onion and top with the chopped avocado.

To make the omelette beat two eggs with a splash of milk in a bowl. Melt a little butter in a GOOD oven safe non-stick pan on the stove top. Add chopped tomatoes and let cook for 30 seconds. Add a handful of spinach and stir the veggies in the pan until the spinach wilts. Spread veggies evenly around the pan. Make sure heat is set to medium then add the eggs over the veggies, crumble feta on top and sprinkle with fresh chopped dill. Let the eggs sit for 2-3 minutes until eggs are mostly set then transfer to an oven set to broil and finish cooking the top about 2-3 minutes. Makes a fail proof omelette every single time! What you need: 1 lb cauliflower small florets, 1 can of chickpeas drained, rinsed, & dried, 1 tsp each of cumin, garlic powder, smoked paprika, turmeric, coriander, 1/2 tsp of salt, 1/4 tsp each of cinnamon, ginger powder, black pepper, 1/8 tsp of cayenne, 1/4 cup olive oil, juice of 1/2 lemon Tzatziki Sauce: 1 cup non dairy plain yogurt, juice of 1/2 lemon, 2 garlic cloves minced, 1 tbl of fresh dill ( sub dried dill weed to taste), 1 mini cucumber grated with water squeezed out using kitchen towel, s/p to taste
1️⃣ In a medium bowl combine chickpeas & cauliflower. 
2️⃣ In a small bowl combine spices, oil, and lemon mix well
3️⃣ Pour mix over veggies till everything is coated
4️⃣ On a parchment lined large baking sheet, roast chickpeas & cauliflower at 425 F for 25-30 Rotating and flipping half way through
6️⃣ Meanwhile, make tzatziki sauce, combine all ingredients, mix well
7️⃣ Wrap up in your favorite wrap style bread (I used pita) drizzle with tzatziki sauce. I also added pickled red onions, cucumbers, pickles, hummus, & some parsley 😋😋😋💚💚💚 __________

Recipe
Ingredients:
~ 2 lbs of bok choy, washed and julienned
~ 1 package of wonton/dumpling wrapper
~ 1 box of firm tofu, drained & mashed
~ 1/4 cup of saute mushrooms
~ 1 tablespoon black bean sauce
~ 1 tablespoon corn starch
~ salt to taste
~ oil
Spicy sauce (whisk all ingredients in a bowl until sugar dissolves):
~ 3 tablespoons soy sauce
~ 2 tablespoon chili oil with chili crumbs
~ 1 tablespoon sesame oil
~ 1 teaspoon Chinese black vinegar
~ 1 teaspoon grated ginger
~ 1 teaspoon sugar

Place julienned bok choy in a large bowl with 2 tsp salt, using your hands, gently massage salt into veggies. Set aside for 15-20mins. In a heated pan with 1 tsp oil, sauté mushrooms until lightly brown, add black bean sauce and stir until well combined, set aside and pan fry mashed tofu for 2 minutes (or until brown), season with salt. Place both ingredients in a big bowl.

Using a cheesecloth or just with your palms, squeeze as much liquid out as possible from your bok choy. Add tofu mixture, cornstarch, combine well & season if needed.

Place a dollop of mixture in the middle of your wrapper, moisten side with water and pleat to seal. Place wontons on a steamer basket and steam for 15mins in high heat. Remove and serve warm with spicy sauce. You can serve sauce on the side or as pictured.

healthyfats I’m totally nutty over nuts 🥜! They are my “go to” for a snack and I tend to add them to everything! Blitz them, grind them, sprinkle them, crunch them, muesli them... sooo tasty 😋. But I have to really control my portions otherwise I would end up eating a kilo at a time! Warning ⚠️ portion size around a golf sized ball (30g). .

healthyfats 😍🍃🍅 Grilled Teriyaki Chicken Salad -

Ingredients:
½ cup teriyaki sauce, (see note)
4 boneless skinless chicken breasts, pounded to even thickness
8 cups chopped romaine or green leaf lettuce
½ cup cherry tomatoes, halved
¼ red onion, thinly sliced
2 avocados, sliced
1 15-ounce can pineapple rings, with juice (juice divided between marinade and dressing, see instructions)
cilantro, roughly chopped

Dressing:
½ cup teriyaki sauce
⅓ cup rice vinegar or apple cider vinegar
⅓ cup olive oil
pineapple juice (from the can of pineapple rings)

Instructions:
Combine chicken, ½ cup teriyaki sauce, and half of the pineapple juice from your can of pineapple slices in a large resealable bag. Press the extra air out of the bag, seal, and chill for 15 minutes.
In a small-medium bowl combine all dressing ingredients, whisk to combine, then cover and chill until ready to use.
Grease and preheat your grill. Place chicken on grill and discard bag with marinade. Place chicken and pineapple rings on the grill. Grill pineapple rings just until hot and tender and grill marks start to form. Grill chicken 6-10 minutes on each side until browned and cooked all the way through (completely white inside, no pink). Transfer to cutting board and slice into strips or chop into 1-inch pieces.
Assemble salads with chopped lettuce on the bottom, then top with chicken, tomatoes, onions, avocado slices, grilled pineapple slices and cilantro. Serve with prepared dressing (stir or shake immediately before serving). Top with sesame seeds if desired.

The thicker the teriyaki sauce, the better. Use can use a homemade version you like, or if you want to go with a store-bought, my absolute favorite is this one.

The other afternoon I was craving something sweet so I create the healthy cookie version of one of my fav snacks in argentina “coconut havanette” and I promise they taste delicious! 
They are plantbased, gluten-free and refined sugar free ♥️ You will need:
1 cup of coconut
1/2 cup of almond meal or any nut meal
1 tbsp maple syrup or honey (not vegan)
1 tbsp of coconut oil
Mix everything and make the cookies with the help of your hands. You will see that the dough doesn’t stick together pretty well but don’t worry cause it will after baking.
Bake until golden and wait until they cool down to eat!

La otra tarde queria algo dulce y cree la version saludable en galletitas de una de mis golosinas preferidas havanette de coco!
Les prometo estan deliciosas y son veganas, sin gluten no azucar refinada.
Vas a necesitar:
1 taza de coco rallado
1/2 taza de harina de almendras o cualquier harina de fruto seco
1 cda de syrup de arroz o miel ( no vegan)
1 cda de aceite de coco.
Mezclar todos los ingredientes y luego formar las galletitas con la ayuda de las manos armando bolitas y aplastandolas. Puede que la masa parezca que se desgrana pero luego de cocinarlas quedan unidas.
Hornear hasta que esten doradas y esperar a que se enfrien para comer!

A healthy recipe with plenty of veggies, the smoky chorizo stands out and fills this dish with flavor. It will be a new go-to Whole30 and low-carb recipe! Paleo, Whole30 + Keto. ⁣

Ingredients⁣
1 lb boneless chicken thighs, cut into cubes (can sub breasts)⁣
1 head cauliflower, riced (about 6 cups)⁣
2 cups broccoli florets, diced⁣
1 cup hemp seed hearts⁣
1 tbsp avocado oil⁣
1/4 cup coconut aminos⁣
1 lime, juice of⁣
1 tbsp chili powder⁣
2 tsp smoked paprika⁣
1 tsp ground pepper⁣
1 lb ground chorizo⁣
chopped green onions (optional topping)⁣
⁣
Instructions⁣
1- Preheat oven to 400° Fahrenheit. Prep chicken, cauliflower and broccoli as noted and place in a large sheet pan. ⁣
2- Add hemp seed hearts to the sheet pan and drizzle everything with avocado oil. Mix to coat. ⁣
3- Add coconut aminos, lime juice, chili powder, smoked paprika and pepper to the other ingredients. Stir and mix everything together. Spread everything out in an even, thin layer on the sheet pan. ⁣
4- Break the ground chorizo into small pieces and place them out on top of the cauliflower mixture. Make sure the chorizo pieces are small and spread them out evenly so they are across the entire pan and not touching.⁣
5- Place the sheet pan in the oven and bake for 20-25 minutes. Watch the oven carefully at the end and remove if the cauliflower mixture starts to brown/burn too much around the edges. ⁣
6- After removing the pan, scrape up any bits from the bottom of the pan and mix everything well. Serve with chopped green onions if desired. ⁣

Since I was young, my little not so little brothers use to say that my meals were strange looking 👀! Each time I would say hum taste it you’ll see. They would taste and boom 💥 🤭 They would make the recipe their own and eat the same damn thing every other day! I’ve always been that creative lazy cooking girl and I believe the quick meals are the best ! ( I used my meal prep mashed cauliflower so this took me literally 15 min)!

🌋INGREDIENTS : 
For the Mashed cauliflower (from my meal prep) 
2 medium head cauliflower
4 tbsp Heavy cream
Salt and pepper
2 -3 tbsp of butter
75g of parmesan (optional) (i add it sometimes but had to ease on the cheese this week)

📝DIRECTIONS:
1. put water to boil over high heat.
2. Clean and cut cauliflower into small pieces. 
3. Cook in boiling water for about 6 minutes, or until well done. (Tender but still a little bit firm) BIG TIP: drain well (dont let it cool down) & pat cooked cauliflower very dry between several layers of paper towels.
4. In a bowl with an immersion blender, or in a food processor, or potato masher,  blend  the hot cauliflower with the ingredient until desired texture.

👨‍🍳For the ground beef & sauce:
- seasoned salt - Garlic powder -pinch of crushed peppers - Olive oil
1. Pan fry the ground beef with spices until well cooked
2. 2 cups of tomato sauce (lowcarb)
3. 1/3 cup of heavy cream -
This plate has one cup of mashed cauliflower and 1 cup of beef!  1/4 cup of shredder mozza-cheeddar cheese on top ! Oh and I added a chopped tiny slice of avocado on the side. I went hard on my dinner since I only eat 2 meals a day! 🥘 🥘

healthyfats Back at it again with oats & persimmon🧡 This time with 2 white eggs because I'm trying to get #highprotein meals whenever I can. A few years ago I took a genetic test to know about my own body. And, long story short, I found out that I am categorized as what they call a 'banana type' which means my body is relatively a difficult to gain muscle nor keep it. So it's been a journey for me ever since to train myself properly and also take the 'right' kind of meal. Although sometimes I eat protein bars, I've actually never taken any protein supplement before. Yes I know it may sound strange but is it just me or most of it seems heavily processed and...simply put, don't look so good😅 If you have any recommendations though, please hit me up wit the list!  Also, the genetic test has been super popular in Tokyo for the past few years - has any of you done it before? Is it popular in your country as well? Let me know!

近年、美容&健康維持(&肩凝り予防)のために筋力アップに取り組んでいるのですが。
つきにくいし落ちやすいってんで、トレーニングだけじゃなくて、食事からたんぱく質の摂取も心がけてます。

食事以外でも、おやつとかでもたまにプロテインバー食べるのですが、いわゆるパウダーのプロテインとかは、なぜか抵抗があって未挑戦。。。
皆さん、たんぱく質ってどうやって摂取されてます?

Have you ever started off your day with granola, bread or cereal and feel as though you crash very shortly after?

Then to only find yourself losing focus, losing energy and get all sorts of cravings for sugar about an hour or so after your first meal?

Also protein and fats are very satiating which will keep you satisfied and fuller, then having let’s say a big bowl of cornflakes, coco pops or even a thick piece of toast or two.

You’ll feel light, satisfied, focused and study’s show that starting your day off this way, leads to making better food choices through out the rest of the day.

What ever your style of diet is, if you find that you crash quickly and tend to snack on foods you know you shouldn’t, then try having some sort of protein and fats for your first meal.

- Add in your preferred superfood powder (I used 1/2 tbsp spirulina powder)
- Stir & cover w foil or lid over night
- In the morning, un cover
- End result should be a thick-ish pudding consistency; the seeds will be jelly like

healthyfats I have been fighting low iron for over a year; not fun The weird thing is I’m not anemic at all. Supplementing can only go so far. Tonight, grass fed and finished 80/20 ground beef, mushrooms cooked in ghee and baby spinach wilted in the hamburger grease and added beef tallow. Using an old school cast iron skillet to see if that helps. Spinach just magically disappears when you cook it...
