healthybreakfastideas For the past 6 months, I have been working as a prep cook at a country club. Learning new knife skills in a fast-paced environment keeps me on my toes. It helps me improve my cooking speed and technique to be more of a professional chef. Honestly, since starting to cook for someone else, I lost a lot of my inspiration to cook for myself. I go out to eat more and it is greatly affecting my gut health. I am now taking responsibility for my health because the food you eat really does affect your mood. In order to ease my mind from negative thought patterns, eating at home keeps my cravings for carbs or sugar at bay.  I notice that when I eat sugar, I feel bloated and my mind begins racing with beliefs of “not good enough”. The less I eat sugar, the more energy I have to work towards my life goals. While at work, I was asked to make pico de gallo. I prepared some quinoa a few days prior and had some leftovers. I wasn’t sure how I was going to use it but didn’t want to throw it away. I never went grocery shopping and had some eggs in the fridge. A lightning bolt idea came through me, which this recipe became a reality. I love that I can eat something quick that’s easy to take with you anywhere. As a bonus, this meal provides leftovers, is easy to freeze, and keeps you full for hours. For someone 5’2, ~120 lbs, and is very active, 2 of these egg cups hits the sweet spot. Enjoy my delicious recipe below: 👇

That was me this morning, so I was all about this 🍑peaches & cream 🍑green smoothie (with protein!) ..
If you are a green smoothie fan, or even if your not 💁🏽‍♀️try this one out and let me know what you think! .. ..👉🏻what’s in it:
1/4 - 1/2 frozen banana, chopped
1/4 cup chopped frozen peaches (I buy fresh and freeze)
1/4 c. raw nuts (I used a mix of cashews, walnuts and macadamia) or 1 T. nut butter, (optional, adds to the creaminess)
1-1.5 c. non dairy milk (I suggest 1/4 cup full fat coconut milk and 3/4-1c. unsweetened almond milk if you have both!)
1 t. vanilla
1 -2 c. frozen spinach
1-2 T. ground flax (optional)
1 scoop collagen peptides (see my blog “favorites” section for the kind I use) 
Chia seeds and/or crushed nuts, optional

healthybreakfastideas I picked up these @birchbenders mixes yesterday from @target and made a waffle today... it was awesome! I ate the suggested serving size which is bout 1/3cup of mix. I topped the cereal with a sliced baby banana , chopped walnuts and shredded coconut and drizzled a little Raw Agave on top.

To be honest I pretty much only ate grits and never ate hot oatmeal, I always hated it as a kid 😩🤷🏽‍♀️ I still don’t eat oatmeal, but I have broadened my palate even more. • 1 cup @betterbodyfoods coconut sugar
• 1 egg
• 1/2 cup of coconut oil
• 1 cup of mashed banana (between 2-3 large bananas) • 2 tsp of vanilla extract
• 1 tsp of almond extract
• 1/2 tsp of baking powder
• 1/2 tsp of baking soda
• pinch of salt
• 1 1/2 cups of whole wheat flour
• 1 cup of shredded zucchini (after shredded I mix with 1 tbsp of coconut sugar and let sit for a few minutes then squeeze out all of the excess water from zucchini) • 1 tsp of cinnamon
• As many chocolate chips as your heart desires ❤️
Mix together all wet ingredients. Mix all dry ingredients together. Combine wet and dry together and add shredded zucchini and chocolate chips. Place mixture in lined bread tin and top with more chocolate chips. Bake at 350 for 40-50 minutes. I’d say let it cool completely but we know that’s not gonna happen. 😘 HAPPY MONDAY FRIENDS!

🌞1/2 cup oats
🌞100ml almond milk (more if necessary)
🌞dash of cinnamon (however much you like)
🌞vanilla powder/paste/extract
🌞1-3 tbsp cacao nibs (i just eyeballed it)
🌞1/2 mashed banana or ~1 tbsp maple syrup
✨ stir everything together and leave in the fridge overnight, in the morning, you will need to add a splash more of almond milk when you give it a stir !

R E C I P E
• 1 frozen banana
• 1 cup frozen raspberries
• 1/2 cup dairy-free milk or protein shake
• 1/4 cup frozen honeydew melon
• 1 1/2 teaspoon rose water
• Coconut or other plain yogurt (to swirl in after blending) — optional

1. Blend all ingredients EXCEPT YOGURT in a blender until well combined.
2. Pour into bowl and swirl with yogurt if using.
3. Top as desired — I used dried and fresh edible rose petals, coconut flakes, frozen raspberry crumbles, and melted coconut oil mixed with pitaya powder.

Easy Cherry Crisp is a fun and simple dessert that uses canned pie filling!  The quick homemade topping for this crisp is flavorful and comforting!

Ingredients
2 21 Ounce Cans Cherry Pie Filling
1/2 Cup Quick Cooking Rolled Oats
1/2 Cup All-Purpose Flour
1/2 Cup Packed Brown Sugar
1/2 Teaspoon Cinnamon
1/4 Teaspoon Baking Powder
1/4 Teaspoon Salt
5 Tablespoons Butter, Melted

Instructions
1. Preheat oven to 350 degrees. Grease a 10-12 inch cast iron skillet or 9x9 inch baking dish with butter.
2. Open both cans of pie filling and pour into the prepared pan, spreading out evenly.
3. In a large bowl stir together the oats, flour, brown sugar, cinnamon, baking powder, salt, and butter.
4. Sprinkle the topping evenly over the filling.
5. Place in preheated oven and bake for 15-20 minutes until bubbly and golden.

Krásné upršené pondělí! Nevím jak vy, ale já jsem prostě klasická sova, nejvíc aktivní v noci a ranní vstávání mi dělá sakra problém.😴 Proto miluju snídaně, který si připravím den předem a ráno, když nestíhám, už nemusím ztrácet čas kuchtěním.
Taková rychlá snídaně je chia pudding, chia semínka zalijete kokosovým mlékem, přihodíte ovoce, oříšky, čokoládu, prostě to, co máte rádi, necháte přes noc v ledničce a ráno máte jistotu, že nepůjdete do práce hladoví. 💼
A jaký je ideální poměr chia ku mléku? Mně se osvědčily 2 PL chia semínek 🥄 (cca 30 g) + 130 ml mléka 🥛 A pokud chceme snídani bohatou i na bílkoviny, jednoduše přimícháme skyr.

Cooking process:
1. Preheat the oven to 350F (180C).
2. Mix together eggs, melted coconut oil, and honey, then add whole wheat flour, almond flour, baking powder, cinnamon, and walnuts
3. Stir in shredded carrots. Mix well. 
4. Pour the mixture into a prepared baking dish.
5. Bake for about 40 minutes. 
6. Let cool for another 20-30 minutes. 
7. If desired, add frosting: combine greek yogurt, sour cream and honey. Serve with berries.

There is still plenty of goodness hiding in that jar just waiting to be incorporated into some overnight chia oats! 
When I saw this trick I was like WHOA, game changer! Cause you know how there is always leftover peanut butter, almond butter, whatever butter, left in the jar that you just can't get out? Such a trajedy...until now! 
Making your overnight oats in these leftover jars allows the oats to soak up all those pockets of unused butter until it becomes breakfast perfection!
Sharing my method below if y'all wanna try. If we work together we can all stop the unused nut butter madness! 😉 #coconutkate

Overnight chia oats in nut butter jar:
1 cup of @bobsredmill gluten-free oats
1 1/2 TBLS of chia seeds
1 cup of almond milk or other plant based milk
1 tsp vanilla
1/2 tsp cinnamon
Pinch of sea salt
1/2 cup water
Other optional add-ins: shredded zucchini, coconut flakes, flax meal, whatever you like!
Method: 
In your not so finished nut butter container (mine was @wholefoods cashew!) add in all your ingredients. Stir with a spoon until combined. Put the lid on the jar and shake it vigorously! Place in fridge overnight. Next morning open jar and stir again. Top with your favorite things. I chose bananas and blueberries!
