fuelyourbody starting monday with some pesto zoodle egg nests on extraaa toasted country bread!! 🥳 it started with wanting to make zoodle egg nests. then i realized i had leftover pesto in my fridge & found country bread in my freezer. just went with the flow on this & i’m pretty satisfied with how it turned out and tasted 😻

1 pack @cecesveggieco zucchini noodles
2 @vitalfarms pasture raised eggs
@fourthandheart ghee for cooking
2 slices country bread (or any bread)
pesto
red pepper flakes

1. preheat large pan to medium-high heat with ~2 tsp olive oil.
2. add spiralized zucchini and cook for 2-3 minutes until slightly softened.
3. separate into nests and leave a small hole in the middle.
4. gently, crack in eggs and turn to low-medium heat.
5. allow to cook

fuelyourbody fall at trader joes is literally my heaven! I was snapping pics all over the place (no shame 😂) and may have gone a little overboard! It did inspire me to bake with all the pumpkin I stocked up on 🎃 I made gluten free pumpkin tahini chocolate chip muffins 💛 i used the all purpose gluten free flour from @traderjoeslist , but almond flour would work great too. I also haven’t used tahini that much, but it’s a great alt to almond / peanut butter in baking! love it. Grab the full recipe in the link in my bio. fuelyourbody It’s been a busy week and it’s only Wednesday. I’m feeling a little drained and like I don’t want to work too hard on dinner tonight. This meal is a great option for days like today. Throw some meat in the slow cooker and at the end of the day you’ve got dinner waiting for you. Add some greens and veggies and you’re all set 👌🏻 .
This meal was inspired by my recent lunch at @backbonecafe (highly recommend for delicious food made with organic produce, grass fed beef, pasture raised 🐓, and vegan options). I had their vegan carnitas with rice and roasted veg. I’ve been craving it since and although my version is not vegan, it did hit the spot. I cooked a pork shoulder roast from @butcher_box seasoned with Himalayan pink salt, black pepper, cumin, and paprika in the slow cooker on medium for about 6 hours. When it was done I shredded it with a fork and added it to a plate of arugula, rice, and roasted zucchini and carrots. I finished it off with a sauce made with tahini, @traderjoes coconut aminos, apple cider vinegar, and a squeeze of lime.

Recipe
2tbs tomato puree 
3 tbs maple syrup 
2tsp vegan Worcester sauce
1tsp garlic puree
2tsp tamari or soy sauce 
1tsp liquid smoke (optional) 
1/2 tsp cider vinegar
Pinch of salt 
1tbs of water to thin it out and a little coconut sugar after you have tasted it, you might not need it!
1 can of chickpeas, rinsed and dried with a kitchen towel

Method; 
Place chickpeas in air fryer for around 10-15 minutes at 180degrees. Keep checking on them and giving them a toss around make sure they get the same amount of cooking on all sides. For the sauce, simply combine all of the ingredients and mix well. Taste it make sure its to your flavour. Once the chickpeas are ready they should have a little crunch on the outside and still soft in the middle. Warm a little of your sauce over low heat and toss the chickpeas in there to get them nice and coated. Serve with your favourite sides and dig in!

fuelyourbody I’m not someone who always eats “intuitively”. I know, this might raise some eyebrows since it’s such a *thing* these days. Don’t get me wrong; I always eat based on what I’m in the mood for, and I agree with many of the principles that guide intuitive eating, but I couple that with a deep understanding of the nutrients and amount of food I need. .
If I only listened to my body ALL.THE.TIME. then I would most definitely not get everything I needed out of my food. I might not eat enough some days, or I might just do away with protein altogether one day, and hey that would NOT be the end of the world, but I know my body and I know what it needs. I can listen to what it’s asking for, but I can also come back to what years and years of eating and living and research has taught me. .
Before you think I’m bashing anything or anyone (absolutely not!), I believe learning to tune in to what your body is telling you is perhaps one of the most useful skills in our personal health journeys. And I fully agree that food should not have morality (like “good” and “bad”). So pleeeease do make that a priority, and enlist all the help you can in getting there. But also remember that we sometimes get mixed messages and cues from our body, don’t know how to interpret them, and that it’s not always realistic. .
Understanding your individual physical needs is so important, especially for those w/ a history of disordered eating, autoimmune conditions, or athletes who need to fuel their body to achieve a level of performance. So! Where do we go from here? Know where you’re at in the process (be honest with yourself) and take steps from there, maybe through finding a practitioner who can help. Eating shouldn’t be so complicated 😆 but it is! So much of that is due to social media. Stay strong, know your body, and keep moving forward armed with both intuition and information.

I was craving a sweet breakfast this morning 🍞so I toasted up some GF bread with almond butter, granola, coconut, almonds & honey. So satisfying, tasty & filling. If I’m teaching or training, I’ll add a side of eggs or yogurt for a protein bump.

Because the other members of my family have a higher physical activity level than I do, they aren’t able to fast in the morning as well as I can. Usually I just fry up some eggs in avocado oil for them, but some days I have the right ingredients around to make something different... something a little special. This was one of those days!

Scrambled eggs, smoked wild salmon (sans sugar), and fresh chives are a super easy and delicious breakfast to whip up in a flash. My kids said they felt like they were eating fancy restaurant food. They’re easily impressed, but I’ll take a good Mom win any day of the week! 😁

Birth control pills  have a lot of side effects. They shut off the communication between your brain and your ovaries which can negatively affect the your hormones, adrenals, liver, gut and thyroid.

I stopped taking birth control pills because I didn't want to put synthetic hormones in my body. My hormones and adrenals are all out of whack due to hormonal birth control. My doctor's solution was to get back on birth control.  That would cover up the problem, is the reason I have it to begin with, thus it is not a solution to me

One of the natural strategies I'm using to rebalance my hormones is seed cycling. It is easy and works to support healthy hormone function. On days 1-14 of your cycle have 1 tablespoon each of freshly ground flax and pumpkin seeds. On days 15-28 have 1 tablespoon of freshly ground sunflower and sesame seeds. If like me you don't have a cycle just follow the phases of the moon. New to full moon is day 1-14. Full moon to new is 15-28

You can  put the seeds in smoothies, salads, or however you like. For days 15-28 I have made a cacao sweet and salty brownie ball. I eat✌🏻a day to get my daily requirement of sesame and sunflower seeds

fuelyourbody Confession time: I JUST got comfortable reading food labels. They were always so overwhelming and I really didn’t know what to look for. So I’m here to clear up the confusion for you to make.

The average American has a ratio of 20:1 omega-6 fatty acids (inflammatory) to omega-3 fatty acids (anti-inflammatory). Chronic inflammation can lead to several life threatening diseases so in a perfect world we’d be closer to a 1:1 ratio.  The issue is many companies and restaurants use oils like Canola, Sunflower, Safflower, Soybean, Margarine when they make their food, all of which are high in Omega-6s. You’d be amazed at how many foods contain those. If you can, steer clear.

High Fructose Corn Syrup- A type of artificial sweetener that when consumed to excess, can interfere with Leptin. Leptin is that hormone that senses the stretching of your stomach lining and tells your brain its full. If it’s inhibited, you don’t get that cue as quickly, meaning extra calories. This one is tricky because it has so many names, so that’s why it’s safest to consume whole foods that don’t need labels.

Brown Rice Syrup- A sweetener that often takes the place of white sugar & HFCS. Do I need to say more?

Watch out for those labels that suck you in by saying things like Fat Free or No Sugar Added or even Organic. I literally saw “Organic Canola Oil” on a label once. You wouldn’t grab cocaine if it said organic in front of it right?? Well maybe some of you would. To each their own lol.

If you’re on the fence about a product, check the ingredient list. If you see any of these or 2 paragraphs of ingredients... may be a good idea to pass on those.

fuelyourbody School morning breakfast in our house, is always healthy, real food. Their breakfast is a choice made by mom and dad, for littles learning how to make good choices. There are no processed, sugary cereals in the pantry for them to be drawn to, no packaged breakfast pastries or frozen french toast sticks and waffles with artificial flavors, added sugars and food dye to spike their blood sugars, no processed breakfast meats like sausage and bacon (research has shown these to be carcinogenic, and they are labeled as such by @who ). So how do we feed their bodies and brains, AND get out the door on busy mornings?.

Thought I‘d tell you a bit about why I started taking barley powder. ⁣⁣
First off, barley powder has loads of vitamins and other micro nutrients, that are extremely important for our health. I don’t feel like I am able to fuel my body with all of these just over the food I eat. ⁣⁣

I used it this past weekend to bulk prep a buffalo chicken casserole thing. .

1 whole cooked spaghetti squash - 1 pound of smoked and shredded chicken - half a bottle of their medium buffalo sauce - 1 can of black beans - and the addition of some frozen veggies each time I reheat it. .

I prepped this for a client a few weeks ago and added in a container of the @thehoneststand spicy nacho cashew cheese! Made it extra creamy!!! .

Looking for a new dish for meal prep that's easy and delicious?! Try whipping this one up! 😜 It makes a huge batch and can be tweaked to meet any macro or dietary need! .

Creamy Corn Chowder⠀
1 T oil⠀
1/2 onion, chopped⠀
2 carrots, peeled and chopped⠀
3 celery stalks, chopped⠀
1 clove garlic, chopped⠀
2 T butter⠀
2 T flour⠀
Salt and pepper ⠀
1/2 tsp thyme⠀
1 bag frozen corn⠀
1 potato, peeled and diced⠀
1 quart chicken stock ⠀
1 cup milk or cream⠀
Cheese and bacon bits for the topping!⠀
⠀
1. Heat oil in large pot. Add onion, carrots and celery. Cook for 5 mins. Add garlic. Cook until you can smell it!⠀
2. Add butter and stir til melted. Add the flour, some salt and pepper and the thyme. Cook until flour forms a paste. ⠀
3. Gradually add the chicken stock and stir. It will start to thicken! ⠀
4. Bring to a simmer and add the corn and potato. Simmer for 20 mins. Add the milk and cook for 5 more mins. ⠀
5. Top with bacon bits and cheese! ⠀

fuelyourbody This is not the prettiest picture, but this meal was good as hell for winging this recipe! I’ve never made scalloped potatoes before, and I really just wanted to do a olive oil rosemary seasoning. So, instead of doing super cheesy scalloped potatoes, I made a teeeeeny tiny bit of cheese sauce and used olive oil, rosemary, and Parmesan for the remaining ingredients.
🥔R E C I P E 🥔
5 lbs gold potatoes peeled & sliced THIN @wholefoods (I used our @oxo slicer, message me for the link)

SAUCE
4 Tbsp butter
1 -2 Tbsp garlic 
5 Tbsp gluten free flour @bobsredmill 
1.5-2 cups milk (or just about)
1+ cup Quattro formaggio cheese or less 
Salt & pepper

Olive oil
Grated Parmesan
Salt 
Pepper
Rosemary 
Scallions 
Directions:
Preheat oven to 400 degrees.
Peel and slice potatoes. Place sliced potatoes in a bowl of cold water for 30 minutes to remove the starch.
Remove potatoes from water and pat dry with a paper towel to remove any excess moisture.
Fill a glass dish with the potatoes in any pattern you wish.
Drizzle olive oil over the potatoes a few times. Add salt, pepper, rosemary, and grated Parmesan. 
Sauce
Melt the butter over medium-low heat until foamy.
Reduce heat to low and add minced garlic for 1 minute.
Add in flour one tablespoon at a time while whisking continuously.
Once a paste begins to form, slowly add in your milk (dairy or dairy free milk works) about 1/4 cup at a time.
Once the milk is added, slowly add in the cheese one handful at a time. Stir until smooth and creamy.
Add salt and pepper.

Evenly pour the sauce over the potatoes (it’s not much, so the entire dish will not be covered). Cover the potatoes with foil and bake for 40 minutes. 
Remove cover and bake for another 30 minutes.
Top with a little more cheese and add scallions. Bake for another 5 minutes or until tops are crispy and golden brown. 
Enjoy!
