Herb and Breadcrumb Crusted rack of Lamb
With a drizzle of coriander chutney and
Herb crusted sweet potato disks
Grilled Herb Crusted Rack of Lamb is an easy lamb recipe with a savory herb garlic marinade.
It is seared, and encrusted with Dijon mustard and garlic and herb flavored bread crumbs then placed in the oven to finish off the cooking process.
You will need:
1 frenched cut rack of lamb trimmed of all but a thin layer of fat
1 1/2 teaspoons salt
3/4 teaspoon black pepper
1 teaspoon vegetable oil
1 tablespoon butter
1 teaspoon ground green chillies
1 teaspoon crushed fresh garlic
Brown the lamb:
Heat a heavy skillet over high heat until hot,
at least 2 minutes.
Meanwhile,pat the lamb dry and rub the meat all over with salt,pepper,garlic and green chillies.
Add butter and oil to the hot skillet,then brown the rack of lamb on all sides.
Transfer the lamb to a small roasting pan.
Put the oven rack in the middle position and preheat the oven.
Roast the lamb rack for 20 minutes.
Remove and brush the lamb rack on all sides with Djorn mustard.
For the herb coating
2 slices stale white bread
3 large garlic cloves, minced
OR garlic flakes by @robertsonsspice
1 tablespoon finely chopped fresh thyme
1 tablespoon finely chopped fresh rosemary
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon ground green chillies
1 1/2 tablespoons extra-virgin olive oil
Process the bread with garlic, herbs,salt,pepper,green chillies.
Stir in the oil.
Coat the meaty parts of lamb with the herb mixture,pressing to help adhere.
Roast the lamb rack for 10 minutes until the coating is golden and crispy.
Let the rack stand, covered for 5 minutes.
Cut the rack in individual chops and serve with a coriander chutney and crispy herb coated sweet potato discs

Made a very simple breakfast burrito today. It was so tasty and healthy.
1.Broccoli ( cut and steamed in small pieces)
2. Mushroom ( diced )
3. Shallots and garlic
4. Paneer / tofu
5 sauce of your choice
6. Salt and pepper
8. Tortillas or you can just use any roti
1 saute all the vegetables in a pan with 1½ t/b oil
2. Cook until cooked
3. Season it
4. Place the stuffing in the middle of the tortillas
5. Roll it
6. Put it in a grill sandwich maker
7. Cut it in half and enjoy 😁
