10 minute meal: Spicy Zoodles & Shrimp 🍤🤩😋
This is a super easy meal and takes 10 mins start to finish.

Here’s how to make everything:
1. For the shrimp, I pat them down with a paper towel then tossed them with some olive oil, pink Himalayan salt, ground pepper, smoked paprika, smoked chili, and garlic powder. You can get creative and use whatever you want. Don’t be afraid to experiment.
2. Cook the shrimp for 60-75 seconds on each side. Don’t over do it as it will become rubbery.
3. For the “noodles” I spiralized 1 zucchini and tossed in some spicy cashew cheese sauce. Warmed it up for a couple of minutes on medium heat. You can use any type of pasta or cheese sauce you’d like.
4. Topped with some more red chili flakes and fresh parsley.

Ribeyes and Mac n Cheese! 🥩
The @pitbossgrills 700fb put in work tonight! We've got a Reverse Seared Ribeye with Smoked Bacon Mac n Cheese. •
We cooked up some creamy, cheesy Mac and tossed in the smoker for some Smoke Therapy. Of course we added BACON! In the mean time, the Ribeye was cooked Sous Vide for 3 hours @ 131°. We then threw it on the open PitBoss flame for a quick sear. Look at those marks! What a meal! 👀👀👀

•2 lbs Ground Beef
•1/2 cup panko bread crumbs
•2 tsp Worcestershire Sauce
•Parsley (finely chopped)
•Salt & Pepper
•4 tbsp Butter
•1 tbsp Olive Oil
•3 tbsp Flour
•1 1/2 cup Beef Stock
•1 cup Heavy Cream
•Dash of Worcestershire sauce
*These are just ideal measurements. I always end up adding more of an ingredient to my desired taste.*
1. Preheat oven to 350.
2. In a bowl, combine all meatball ingredients above and shape them into small-medium sized meatballs. Bake for 30 minutes, or until they have browned.
3. In a large pan, melt the butter and add the flour and garlic. On medium heat whisk until it turns a brown. Pour the beef stock and keep whisking, trying to remove all the clumps from the flour.
4. Pour in the heavy cream, stir and allow it to simmer until it thickens. Add the dash of the Worcestershire sauce. Add all seasonings listed above. Mix well.
5. Immediately, add the meatballs into the sauce and coat them evenly.
*You can serve this with egg noodles, rice, or mashed potatoes☺️*

Giant Pork & Beef Bolognase Meatball slow cooked in tomato sauce, with a 4 cheese Brussel Sprout Gratin.
It reminded me of grandma's cooking/ being a kid/ one of the best winter comfort meals I've ever had.
*For the meatballs
250g pork & beef mince per person
1 shallot or brown onion, diced super fine
A couple of garlics, minced
4 Tblsp breadcrumbs, 1 egg *optional, I dont add either
Combine the mixture into large meatballs & set aside in the fridge
*For the sauce
A couple of garlics, minced
1 sachet tomato paste
1 bottle of passata (tomato sauce), if you are making more then two servings add 2 cans of crushed tomatos as well
2 tsp red pepper flakes, dried basil, dried parsley, salt & pepper
1. Preheat your oven to 200 degrees. Use a small deep dish for two meatballs or a medium sized for more. the sauce needs to reach halfway up or almost submerge the meatballs.
2. Set the oven to 180 degrees, top the meatballs with olive oil on a lined baking dish and bake for 20 minutes.
3. Sautee the garlic until golden and add the remainder sauce ingredients until heated through. Transfer into the meatball pan & cover with foil, turn the heat to 170 and cook for 1 hr (or 160 for 2 hours)
For the Brussel Sprout Gratin
I cup of brussel sprouts each, ends cut off and boiled for 12 minutes
2 Tblsp flour
1 tblsp butter
2 garlics, minced
500ml milk, (or coconut milk for a vegan option)
2 handfuls of 4 cheese mix (or you can substitute for gruyere, smoked gouda, smoked cheddar or French comte for a more decadent version but I felt like keeping it classic)
In a saucepan melt the butter over medium heat, add the garlic and stir for 1 minute. Add the flour and stir, it will turn into a bubbling thin paste.
Add the milk (at room temperature), very slowly whilst stiring and it will create a thick sauce (roux), continue until all of the milk has been used up. Take it off the heat and allow it to cool down slightly, add the cheese, salt, pepper, tsp dried italian herbs & pour over the brussel sprouts. Add a thin layer of cheese on top & bake on 180 degrees for 25 minutes to heat through, and the top golden.

BUT we were in a rush the other day so we had to make something quick, simple, and of course get ready at the same time! Marinated Grilled Salmon 🍣
But like 🤤🤤 I could literally eat this e v e r y d a y ! ! Also, if you live in KS.. you know it’s hard to find good wild caught salmon — I get mine at @traderjoes ✔️ I always rinse my salmon + pat dry before anything else (idk it weirds me out of I don’t rinse off my sea food or chicken before cooking - get all the slime off 😂) Lay in a pan/bowl. Sprinkle with pink Himalayan salt, pepper, chili powder, garlic powder, lightly spray avo oil, drizzle honey + coconut aminos (or sub soy sauce - if your into disrupting your endocrine system and enjoy being estrogen dominant.. *sarcasm*). Let the marinade set in for a bit, I usually only do it until the grill is heated up. There’s so many ways to cook salmon, but what I’ve been doing lately (as seen from @rachaelsgoodeats ) is slap it right on the grill, skin side up. Don’t forget to spray the grill with avo oil spray so the salmon doesn’t stick — I made that mistake this time 😬. I like the “grill marks” it leaves + it gives it that charred taste!! Cook until almost done (not fully hard, can still pull apart with a fork easily) then flip over for a minute and then pull it off. Yum yum 👋🏼 #eatfitwithbrit
