INGREDIENTS
3 zucchinis
Cooking spray
3/4 lb. chicken breast cut into cubes
1 Tbsp olive oil
1/4 tsp Italian seasoning
1/4 tsp garlic powder
1/4 tsp salt
1/4 tsp ground black pepper
3/4 cup pasta sauce
1/4 cup grated parmesan cheese
1/4 cup shredded mozzarella cheese

INSTRUCTIONS

Preheat oven to 400°F.

To prepare the zucchini, cut the zucchini in half lengthwise, then use a spoon or melon baller to scoop the center flesh and seeds from the zucchini. Repeat for the remaining zucchini.

Place the zucchini in a baking dish or cookie sheet cut-side up and lightly coat with cooking spray. Place in the pre-heated oven for 15 minutes until the zucchini cooks slightly and becomes tender.

Meanwhile, to prepare the chicken, heat the olive oil in a large non-stick skillet over medium-high heat. Add the chicken along with the seasoning, salt and pepper. Cook for 8-10 minutes until the chicken is cooked through. Add the pasta sauce and cook for an additional 2 minutes, stirring occasionally.

Scoop the chicken mixture into the zucchini boats. Top the chicken with parmesan cheese and mozzarella cheese. Return the zucchini boats to the oven for 5 more minutes, or until the cheese is melted.

Sprinkle with fresh basil and parmesan cheese, if desired, and serve.

So tasty!

This week hasn't been the best, but I managed to do ok food wise and fasting wise up until last night (Friday) when I ordered pizza and drunk a can of fizzy. 😓

I'm trying not to beat myself up over it. But it is so hard. I have decided to dedicate tomorrow to food prep and just the next 2 days doing smoothies and shakes.

After a few stressors in the family, my foot, running around after the kids etc.... And my grandfather very ill and basically at palliative stages we have been at the rest home most nights.

Amazing how life stressors can cause us to do emotional eating. But tomorrow is a new day and I will get back on track.  I desperately want to be walking again too. That has made me loose my mojo a bit.

Todays Brunch 😍 Mango and Kale smoothie made with almond milk. So tasty! Summer may be over, but burgers are an ALL YEAR AROUND option! This is one of my favorite burger recipes, so easy and full of flavor. It’s definitely one to try out so be sure to save this for later 😋 
SWEET ONION & MUSHROOM BURGERS

INGREDIENTS
5 Yukon Gold Potatoes, scrubbed 
1 Yellow Onion
2 Potato Buns
1 lb Ground Beef
1 Tbsp Soy Sauce
2 slices Cheddar Cheese
1 clove of Garlic
1 Tbsp Butter
1 tsp Brown sugar
Oil as needed
Salt and pepper to taste 
DIRECTIONS
1. Preheat oven to 450 degrees. Cut potatoes into ½-inch-thick pieces. Halve, peel, and thinly slice onion. Thinly slice the mushrooms. Peel and mince the garlic. Halve buns. 
2. Toss potatoes on a baking sheet with a drizzle of oil, salt, and pepper. Roast until lightly browned, 15 minutes (we’ll add more to the baking sheet then).
3. While potatoes roast, heat a drizzle of oil in a large pan over medium heat. Add onion and mushrooms and season with salt and pepper. Cook, stirring, until softened and lightly browned, about 8-10 minutes.
4. While onion and mushrooms cook, form beef into two patties, each about ½-inch thick. Season all over with salt and pepper and set aside. 
5. Place 1 TBSP butter and garlic in a small microwave-safe bowl; microwave until melted and fragrant, 30 seconds. Brush onto inside of buns.
6. Once onion and mushrooms are softened, add soy sauce, ¼ cup water, and 1 tsp brown sugar. Cook, stirring, until onion is caramelized, about 2-3 minutes. 
7. Turn off heat; transfer to a small bowl and set aside. Wash out the pan.
8. Once potatoes have roasted 15 minutes, remove baking sheet from oven; push potatoes to one side.
9. Place buns insides up on the baking sheet or directly onto oven rack. Roast until potatoes are tender, and buns are golden brown, 5-6 minutes.
10. Meanwhile, heat a drizzle of oil in pan used for onion over medium heat. Add patties and cook to desired doneness, about 5 minutes per side. During the last minute add a slice of cheddar cheese to each patty.
11. Divide buns between plates and fill with patties, caramelized onion and mushrooms. Serve with potato wedges alongside.

foodforweightloss good morning y’all & TGIF 💕 I went to Trader Joe’s last night so I just want to show off some of the stuff I got before my sweaty selfie 😂 First is the riced cauliflower stuffing which I am super pumped to bring to thanksgiving! I know it is only ~one day~ but I also don’t feel like I need to gorge out on every single “bad” food available to me on thanksgiving 👏🏻 next is the cookie butter ice cream. I’ve never had the actual TJ’s cookie butter before but OMG it is a Christmas miracle that I was able to only take two bites of this and then put it back in the freezer 😂 so fucking good. Next is some spicy chicken sausage which I’m pumped to have for dinner one night next week, then some salad dressing for my lunches, and finally some vegan pesto! I love pesto and I also got some cauliflower gnocchi (not pictured) so I’m excited to try it out this weekend 🥦 speaking of, I don’t know about you guys but I 👏🏻 AM 👏🏻 READY 👏🏻 for this weekend..not that anything bad has happened this week, I’m just ready to sit on the couch and do nothing for once 😂 I hope everyone has a wonderful day!! 💕

foodforweightloss So I bought this dress from Lulus as a possible bridal shower dress but I’m not sure 🤔 it physically fits however I’m hoping by May (and with a bra and Spanx on) it will fit a little nicer 😂 I may keep looking however as I’m not in love with the top half of it. I have had box-y shoulders all my life and I don’t think this dress is super flattering in that area. And I don’t mean that in a self-hate sort of way, I love my shoulders and they are strong and capable of carrying the weight of the world most days, I just think I could find something better 👏🏻 we shall see..I’ll probably end up keeping it anyway just in case 😂

If you’re anything like me, you often buy jarred unsweetened applesauce to keep in the fridge for healthier bakes, to pair with pork chops, or offer the kiddos as a more healthier snack option. Let me tell you… homemade applesauce is where it’s at and a total game changer! It’s so easy to make 👩‍🍳 It’s sweet and cinnamon-y and has no added sugar!

Recipe:
1/8 cup water (just enough to cover the bottom of your pot)
3-4 very large apples, peeled, cored and chopped
Cinnamon .

Place water into pot, followed by the apples. Sprinkle as much cinnamon as you like, remember you can always add more after you taste test the end result. .
Simmer until apples are soft enough to mash, stirring occasionally, approx 15 mins. .

Mash apples and let cool before storing in mason jars. .

Like I ~know~ that the answer is to just let it go and not let it ruin the rest of your day both mentally and food-wise BUT LIKE HOW? 🧁 today was birthday day at work and I made these beautiful cupcakes for everyone with no intention of having one for myself. But then I got up there and saw all the delicious things everyone else made and ended up eating a mini bagel, mini cheesecake bite, and a freaking cupcake...even though I just had a delicious and healthy and nutritious breakfast like an hour before 👿👿👿 currently chugging water to make myself feel a little better and wondering if I should do a second workout tonight to make up for it. I followed @lorifitlife method for cooking the oats as shown with her carrot cake oat highlight :) I mix oats with 2/3cups water in microwave 2.5 min at 70% power
Then I added egg whites, stirred in caramel skinny-syrup, cinnamon, pumpkin pie spice and back to microwave for 20 min at 70% stirred then one more 2min microwave stint at 70%. Thennnn I smeared into a container to make flat and did my toppings
Cozy for a freezing 🥶 cold day
