As you know, I have the biggest chocolate sweet tooth ever so I’m ALWAYS trying out weird healthy baking recipes...⁣
⠀⠀⠀⠀⠀⠀⠀⠀⠀⁣
This brownie recipe is inspired by the amazing @madebymorrea but I made a few changes to fit the ingredients I have and WOW these came out SO GOOD⁣
⠀⠀⠀⠀⠀⠀⠀⠀⠀⁣
Plus, I ran them by Jack (my boyfriend) without telling him the ingredient tea and he was obsessed⁣
⠀⠀⠀⠀⠀⠀⠀⠀⠀⁣
RECIPE:⁣
-1.5 cups Tigernut flour (you can buy at Whole Foods) or sub with a different flour⁣
-1 tsp Xanthan Gum (only if you use the tigernut)⁣
-1/2 cup coconut sugar⁣
-1/4 tsp baking powder⁣
-1/2 cup Hu kitchen dark chocolate gems⁣
-3 tbsp coconut oil⁣
-1 egg⁣
-1/4 cup cacao powder⁣
-1 cup almond milk⁣
-1/4 cup maple syrup⁣
-1 tsp vanilla⁣
⠀⠀⠀⠀⠀⠀⠀⠀⠀⁣
THE STEPS: ⁣
*oven at 350 degrees*⁣
1. Mix all dry ingredients in a bowl⁣
2. In a pan, turn on low heat and melt chocolate + coconut oil while stirring⁣
3. Turn off heat once melted and add egg, maple syrup, cacao powder, vanilla⁣
4. Combine wet ingredients with dry in the bowl and mix⁣
5. Spray whatever pan you are using with non stick spray then pour your batter on it evenly (I used a bread loaf tin)⁣
6. Place in oven and cook for around 20 min and check at 15 min to make sure they aren’t overcooked ⁣
7. Enjoy!!!! :)⁣

foodcombining Peaches and cream... a match made in heaven. I’m so happy peaches are back in season, I have been eating them nonstop. Peaches have such a light sweet flavor that they are the perfect oat bowl topping. Have a peach lying around? Grab it, You gotta try this recipe!

Peaches and Cream Cauliflower Oat Bowl🍑
-2 cup riced cauliflower
-2 tbs psyllium husk
-2 cups almond milk
-1 scoop vanilla protein powder @nuzest_usa

Add 1 cup almond milk to a pot and bring to a boil, add in cauliflower rice and let cook for 5 min. Add in psyllium husk, protein powder, rest of the almond milk and stir till completely mixed. Pour into a bowl and top with coconut yogurt, almond butter, and peaches.

Sautéed Peaches:
Slice 1 peach in half and then into smaller sections. Add coconut oil to a skillet and then add in peaches. Sprinkle cinnamon on top and let cook on both sides for a few minutes.

Talk about the perfect spring bowl! So light and delicious, happy Wednesday everyone🥰

- white rice (prepared according to box directions)
- sweet potato (roasted for ~40 mins @ 425°F in salt, pepper & olive oil
- broccoli & tomato roasted ~10 mins (during the last 10 mins that the sweet potatoes are in the oven) in salt, pepper, and olive oil
- steamed kale and edamame

DRESSING
- a solid pour of tahini (1/6 of a cup)
- a generous pour of maple syrup (to your desired sweetness!)
- juice of half a lemon
- 1-2 tbs of hot water to thin it out

what you need: •1 cup of quinoa (yields four servings, i only use one serving in the salad) •seven grape tomatoes •rainbow carrots •half a cucumber •spring mix •evoo and balsamic glaze •vegan pesto •garlic salt, black pepper and red pepper flakes // method:
~cook quinoa according to package ~chop carrots into small pieces ~cut tomatoes in half ~sauté carrots and grape tomatoes in a tbsp of avocado oil ~once cooked to your liking put in the pot with a serving of quinoa and mix in with a tbsp of vegan pesto ~put mix in a bowl or container and chill in the fridge while you mix your salad ~cut cucumber into small pieces ~take 2-3 big handfuls of spring mix in a bowl ~mix spring mix, cucumber, evoo and balsamic glaze with garlic salt, black pepper and red pepper flakes ~take quinoa and veggies out of the fridge on put on top of the lettuce mix //
this was a super yummy and relatively light dinner - it takes about 25 min to make and most of the work can be done while the quinoa is cooking which is nice - i put the extra quinoa in a container to use later in the next few days (it warms up easy and tastes good cold). this was so fun and colorful too, perfect for summer 🌞 hope you enjoy !! #plantbased #foodcombining #salad #recipe #guthealth #healthyeating #healthyfood

new quinoa salad recipe 🤍 // what you need: •1 cup of quinoa (yields four servings, i only use one serving in the salad) •seven grape tomatoes •rainbow carrots •half a cucumber •spring mix •evoo and balsamic glaze •vegan pesto •garlic salt, black pepper and red pepper flakes // method: ~cook quinoa according to package ~chop carrots into small pieces ~cut tomatoes in half ~sauté carrots and grape tomatoes in a tbsp of avocado oil ~once cooked to your liking put in the pot with a serving of quinoa and mix in with a tbsp of vegan pesto ~put mix in a bowl or container and chill in the fridge while you mix your salad ~cut cucumber into small pieces ~take 2-3 big handfuls of spring mix in a bowl ~mix spring mix, cucumber, evoo and balsamic glaze with garlic salt, black pepper and red pepper flakes ~take quinoa and veggies out of the fridge on put on top of the lettuce mix // this was a super yummy and relatively light dinner - it takes about 25 min to make and most of the work can be done while the quinoa is cooking which is nice - i put the extra quinoa in a container to use later in the next few days (it warms up easy and tastes good cold). this was so fun and colorful too, perfect for summer 🌞 hope you enjoy !! #plantbased #foodcombining #salad #recipe #guthealth #healthyeating #healthyfood

ngl, I’ve been on both ends of the spectrum.  I’ve been so busy I barely have enough time to eat.  I’ve also had so much free time that I get tired of looking through Instagram...iykyk.

the point of today’s post is to try & encourage you to set enough time aside for yourself.  No matter how busy you are, you should always come first. & maybe what I do, doesn’t work for you, the whole point is to do things that you love/ make you happy.  Here’s what works for me:

Meal prep:
- I just started working again, 8-5...instead of ordering food or eating something that will make me feel like crap, I meal prep.  I love eating healthy/ nourishing my body with the best food possible, so I set time aside to make sure I have lunch ready for the week.  Another tip is cooking extra dinner so you have leftovers!

Find a workout schedule that works for you:
- Try to pick a time for you to move your body in any way possible.  Moving your body is so beneficial, even if you only have time for a 20 minute walk..do it! @melissawoodhealth also has really great short workouts that are perfect to do when you wake up/ before bed.

Make a self-care routine:
- I love skincare, so for me, that is how I treat myself/ help myself feel better.  I have my little routine that I do in the mornings & at night & its basically my little meditation time where I don’t have to worry about anything else.  Find something that makes you feel the same way (face masks, a bath, sitting outside, watching a show, etc)

Mental health:
- I love to journal & write/ say positive affirmations.  When I’m drained & can barely think, this is such a good release for me.  It’s my time to let go of whatever challenges I’ve faced & welcome a new day.  Keeps my mind in check & makes me so happy!

"Prawn curry and sweet potatoes chips" An explosion of flavour, crispy and spicy all at the same time😋😜 Ingredients for two portions: -400 gr of king prawns - 2-3 sweet potatoes, peeled and sliced (3 mm thick) - 1 scallion (finely chopped) - 2 garlic cloves (minced) - 1 Tablespoon ground coriander - 3 Tablespoon curry powder - 1 Tablespoon masala - 1 Tablespoon cumin - 1/2 Tablespoon turmeric - 2 Tablespoon ground almond - 100 gr tomatoe sauce - 1 Cup light cream - 100 gr of extra fine beans - 4 mushrooms (chopped) - 2 Tablespoons of fresh coriander - Olive oil, salt, oregano and paprika. Preparation: -Preheat oven to 175° - In a bowl, put the sliced potatoes and then add salt, paprika, oregano and a tablespoon of olive oil, toss to coat and bake for 20 minutes, until crispy. - In an oiled pan cook the prawns for 4 minutes each side until golden. Set aside. - In the same pan (medium heat) add 3 tablespoons of olive oil, scallion, garlic and stir for 3 minutes until fragant. - Add the ground coriander, curry, cumin, masala and turmeric and stir for another 3 minutes. - Add the tomatoe sauce, ground almond, 1 teaspoon of salt and the cream, stirring until it boils. - Finally add the Prawns, fine beans, mushrooms and simmer for 3 more minutes. - Serve with the sweet potatoes chips and sprinkle with fresh coriander. This recipe is INSANE. I really missed that super excited feeling I get when I create a new recipe. It’s easy during these times to lean on comfort- and you SHOULD if that’s what your body is asking for- so I’ve put less pressure on myself to create and just make sure I’m giving myself what I need. And then I thought of this and that’s immediately what I needed 😁. It’s completely GF, vegan, and is super creamy like a vodka sauce. Can you believe it? You guys are going to LOVE! Did I mention it took me less than an hour to make? 
Recipe serves 4 people 
4 medium heirloom tomatoes
2 large red bell peppers 
1/4 cup sliced sweet onion 
1/4 cup EVOO
1 cup shiitake mushrooms
2 cups spinach 
1/2 cup basil 
Minced garlic
Red pepper flakes to taste
Sea salt to taste

Slice tomatoes and roast @ 350 until caramelized (~35 mins). Roast red peppers whole until charred (~30 mins) and sweet onions (~30 mins). Once they are done, remove the skin from the tomatoes and the stem and seeds from the bell pepper. Add tomato, pepper, sweet onions, EVOO, garlic, red pepper flakes, + sea salt to food processor and blend until creamy

Separately, sautée sliced shiitake mushrooms until cooked through and spinach until wilted. Chop spinach and set to side with mushrooms 
While pasta is boiling (I used @jovialfoods brown rice penne), move sauce from food processor to large saucepan and heat it up. Add pasta once it’s done cooking along with mushrooms, spinach, + basil

it has been a hot minute since I last spoke about my ed recovery but it seemed about time to give ya’ll another update. I just want to start by saying that there IS light at the end of the tunnel and to read this in whole.⁣

Recovery is tough. There have been countless moments that I would stay home due to feeling uncomfortable in my body or crying in bed wishing I could just eat something without worrying about the consequences that a single slice of bread would have on me. BUT as we keep pushing past things that we are initially uncertain about, we can become stronger and wiser. And boy, is that feeling amazing. ⁣
⁣
I am feeling more beautiful, happy, and confident than ever – and the best part is that my happiness is not correlated to my size in a pair of jeans. Yes – having to go from size 23 to a 25 was tough at first, but it was worth it because I look damn good in my jeans!!!
⁣
If my journey can help any of you going through something similar, it was more than worth it. Here are a few things I want you to know:⁣
⁣
-	Changing your mindset about yourself is crucial. Do not diminish your accomplishments, and instead celebrate your body for it’s beauty and abilities⁣
-	Health is not always relative to size. Being super small or super curvy does not say $hit about how healthy you are. You’re mental health, diet, and exercise do.⁣
-	And lastly, your journey will make you so much stronger. You are able to achieve anything you put your mind to. Trust me – a person with passion and drive is unstoppable. YOU are that person and do not let insecurities or nerves tell you otherwise.⁣

foodcombining I am a firm believer in consistency is key especially when it comes to wanting to make a permanent change in your life.  Our daily habits create change.  They create a permanent change that allow us to be the best version of ourselves.  It can be very difficult to stay committed to a goal, but the small things you do everyday make the biggest difference.  I am frequently asked how I stay motivated to eat healthy and find daily movement, but I have now realized that these two things are daily habits for me.  At the beginning, it was my motivation that got me on the right track, but now it is the actions I take everyday that keep me going on that track

I am a firm believer in consistency is key especially when it comes to wanting to make a permanent change in your life.  Our daily habits create change.  They create a permanent change that allow us to be the best version of ourselves.  It can be very difficult to stay committed to a goal, but the small things you do everyday make the biggest difference.  I am frequently asked how I stay motivated to eat healthy and find daily movement, but I have now realized that these two things are daily habits for me.  At the beginning, it was my motivation that got me on the right track, but now it is the actions I take everyday that keep me going on that track I wanted to share this quote with all of you as a reminder that passion and consistency equal success, and the little things you do everyday will get you to where you want to be wishing you all an amazing Thursday!! sending lots of virtual hugs xoxo, hip2healing❤️

foodcombining GF & Vegan Chocolate Chip Pancakes!

These were amazing!!! So easy to make and customize them! Add chocolate chips or add blueberries, drizzle maple syrup or drizzle sunbutter all over! Either way the pancakes are delish! 
Makes 8 medium pancakes

Ingredients:
- 2 cups oat flour
- 1 1/2 tsp baking powder
- pinch of salt
- 1 tbsp apple cider vinegar
- 1 3/4 cup coconut unsweetened milk
-  2 tbsp maple syrup
- 1/2 tsp vanilla
- non dairy chocolate chips
- sunflower seed butter
- 2 tbsp coconut sugar
- 1 cup frozen blueberries

Method:
1. Combine ACV with milk in a small bowl set aside.
2. Combine flour, baking powder, salt in a large bowl. 
3. Make a well in the middle of dry ingredients and add the milk, maple syrup, vanilla and mix it up.
4. Add chocolate chips and mix once more.
5. Scoop out 1/4 cup of batter and place onto a low medium heat non stick pan coated with butter.
6. Flip once the edges have risen and cook till golden brown.
7. Mix in coconut sugar, 3 tbsp water & frozen blueberries in a small pot let it simmer till it thickens and becomes sticky.
8. Pour blueberries onto stack of pancakes with sunflower seed butter!

Thank you @melissawoodhealth for this delicious combo and introducing me to @veganmario gluten-free bread, which is by far the best gf bread I have ever found in the United States. They ship, and I always have two loaves in the freezer. 
Toast topped with 1/2 avocado, sea salt, lemon juice, and a thin-sliced heirloom tomato. Chili flakes are optional. 
Pro tip: make the avocado spread with freshly squeezed lemon and sea salt in a bowl. By mixing ahead of time, I ensure that the flavors are equally blended.  I like a smooth yet still textural consistency for my avocado spread. I prefer this technique, which allows the bread to remain warm and perfectly toasted😋

foodcombining Carrot Cake Oatmeal! 
No idea why I was craving these cozy oats when it’s getting so hot & sunny out these days🙊

Anyways here are the deats:
• 1/2 cup (45g) oats.
• 1/2 cup (60g) shredded carrots.
• 1 banana, mashed or in small pieces.
• 1 cup plant based milk.
• 1/2 tsp cinnamon.
• pinch of ground ginger.

Add all ingredients to a pot and let come to a boil on high heat. Turn down to low-medium heat and let simmer until all liquid is absorbed (takes ~5-10 minutes). I topped my oats with more banana slices, coconut yogurt, almonds and cinnamon! Yum!!✨ xx #wellnesswithjojo

Recently been using oatly in my smoothies (Bc I haven’t had coconut water, and they are soooo thick and creamy! It’s a real treat) .

Btw this smoothie is loaded w vitamins and nutrients and lots of antioxidants: strawberries and goji berries contain some of the highest antioxidants among all foods! I have a list of some of the best antioxidant dense foods, btw they are all from the earth!! I eat these foods every day and I have drastically grown since incorporating these foods into my diet... mindful eating ladies and gents! Nourish your body, free your mind 💚

this smoothie is SOOO fluffy & thick & high in antioxidants + healthy fats + even a serving of greens🤍plus, low in sugar!! sometimes smoothies can be packed with sugar (even from fruit- fruit is awesome but our bodies aren’t meant to eat tons of pieces of different fruit at once in a few sips!) and this puts on a blood sugar roller coaster- this smoothie is high in healthy fat + fiber while low in sugar so it helps to stabilize blood sugar! ♡

RECIPE: blend 1 avocado, 1/2 cup frozen cauliflower (trust me, makes it fluffy without all the sugar!), 1 cup frozen blueberries, a handful of spinach, a little splash of coconut milk, and optional: a spoonful of goji berry powder/a few drops of monkfruit extract if you like it on the sweeter side! ♡

Words that would play on repeat 🔂after seeing an unflattering picture of myself⁣⁣I can still remember all of the mean things I would tell myself when I looked at photos of my body😩 ⁣

⁣I remember comparing myself to my small-framed friends. I would idolize all of the cute clothes that she could wear fearlessly✨, or so it felt. ⁣
⁣
I would tell myself I could never pull off an outfit like that.⁣ I would try to lose weight by restricting my intake. ⁣
⁣
I thought 💭 it would “reset” me and I would lose weight. ⁣⁣ ⁣
⁣
But, the restriction was never maintainable. ⁣
⁣
I was always starving and obsessing over food🍦. ⁣
⁣
I remember laying in bed at night, unable to fall asleep, thinking about the next day’s meals and snacks. ⁣⁣Whenever I was not restricting, I felt out of control. ⁣
⁣
I felt like I was always overdoing it on the X and I always hated myself for that. ⁣⁣
⁣
I felt like I was constantly trying to lose weight, almost like I was running in a 🐹 hamster wheel.⁣
⁣
I felt so lost and confused as to how to reach my goals. ⁣⁣
⁣
I’m so thankful every day that I had the privilege to go to college and study nutrition 📚 and become a dietitian⁣
