in a bowl, mix
2.5 cups almond flour
1/3 cup cacao powder
1/3 cup coconut palm sugar
1 tsp baking powder
1/3 cup cashew butter
1/4 cup melted vegan butter
1/2 cup unsweetened vanilla almond
fold in 3.5 oz chopped up dark chocolate
use an ice cream scoop to evenly distribute cookies, slightly flatten and bake at 350 degrees for 20 min
that avo + crispy chickpeas : toast ratio though 😎❤️ just the way I like it!

This winter’s shake is an homage to that cozy drink we all love – the London Fog. But we also have a lot of fog in Ballard, so we call it the Ballard fog 😉 @mirotea earl grey leaves are infused into soft chocolate chunks which are stirred throughout a vanilla shake. It’s a creamy, thick, sliiightly colder version of the original. It’s topped with a dollop of whip cream and an orange pistachio lace cookie that lends to a bright nuttiness for the finish.

The holidays are hectic & cooking a big meal can take hours!!! My favorite HACK for entertaining a crowd is putting them to work (😉) by offering easy, customizable meal boards. Just grill up your hot dogs, set out all the toppings, and let your guests choose their own adventure. It’s great for company with various dietary restrictions too. If someone’s keto or gluten free, they can grab a lettuce cup or pickle bun instead of the traditional option one. Paleo Clementine Cake 🍊🍊🍊 Beautiful, delicious, festive! The cake was like white cake, fluffy and moist. No refined sugar and diabetic friendly for my man! Great if you have some Clementine cuties to use up. 🍰🍰🍰 Preheat oven to 350 degrees F.
Measure and cut a piece of parchment paper to fit the bottom of a 9-inch round springform pan. Lightly grease the bottom and side with some ghee (you can also use light butter) and a little bit of arrowroot or tapioca flour. Make sure the entire sides and bottom are covered, then place the parchment paper inside. Set aside.
Using about 6-7 clementines, cut off the ends and thinly slice the clementines (circle slices) for the topping. Set them aside.
Next, mix together you dry and wet ingredients. I suggest mixing them separately first, then mix them together.
2 cups almond flour
1/4 cup tapioca or arrowroot flour
1/4 cup coconut flour
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
Wet ingredients (I used a hand mixer for 1 minute to ensure it was blended):
4 large, organic eggs
4 clementines, juiced (should be about 1/2 cup of juice)
1/2 cup honey
1 banana (smashed)
1 tsp vanilla
Then, in a small pot heat anout 2 tablespoons of ghee or butter, 2 tablespoons of honey and about 1/4 cup of fresh lemon juice. Stir frequently to dissolve and ensure it does not burn. When done, pour and spread this topping mixture into the bottom of your
Place the clementine slices in the springform pan, starting with the middle and working your way out, overlapping as necessary to fit. Lastly, pour the batter into the springform pan and place in the oven for 30-35 minutes (do the clean toothpick test!). Let the cake cool for 15 minutes. Remove from the springform pan and enjoy!

Happy 12/12 last Full Moon of the year 🌕I made the most delicious creamy vegan mushroom soup! With three different types of mushrooms 💥🍄💥 So easy to make and has the most umami packed flavors! All you need is:
1 pack of crimini mushrooms sliced
1 pack of shiitake mushrooms sliced
1 pack of maitake mushrooms sliced
1 onion chopped
2 cloves of garlic
1 tbsp of chopped ginger
1 can of coconut milk
1 1/4 cup of vegetable broth
1/2 tsp of rosemary
1/4 tsp turmeric
1/4 tsp cumin
Black Pepper to taste
1. Add olive oil to a pot & sauté onions, garlic, ginger with rosemary
2. Add sliced mushrooms, cook on medium, covered for about ten minutes letting the mushrooms release their water
3. Add coconut milk & the vegetable broth as well as the turmeric and cumin- let cook another 10 minutes on a lower heat
4. Take half of your broth & put it in a blender or a food processor with another half cup more of vegetable broth - blend until creamy and add back into your soup!
Adjust salt & pepper to your liking, drizzle a lil olive oil ~~~ and voila!!! 🌕🌘🌕 #stoneysnax

Chicken, honey, biscuit - sooo good! I shouldn’t really post if we’re not open this weekend, but I couldn’t resist. Fooling around with this idea - when we pop it on the menu I’ll add a bigger piece of chicken, maybe some iceberg lettuce for juicy crunch...
