This recipe uses canned potatoes (Did you know those existed?😂), making it super quick and easy. You’ll have din din on the table in about 20 minutes. You can use an air fryer OR oven for this recipe.

And in case you’re wondering, you can use fresh or frozen taters as well. I gotta look out for the minimal cooks out there from time to time!

fitfood TACO 🌮 Tuesday!! Made these delish chicken tacos for the whole fam to enjoy and everyone loved! 
Instructions:
Marinate 1 lb of organic chicken breasts in @freakflagfoods zesty green herb sauce (made with clean, organic ingredients & tastes amazinggggg - I found it at @thefreshmarket ). Cook the chicken in the chimi-verde sauce in a large pot for about 30 min over medium heat, then shred the chicken on a cutting board with 2 forks. Pour the leftover sauce from the pot over the shredded chicken in a bowl and mix together so it’s coated with the sauce. 
Now assemble the tacos: I used grain-free taco shells, shredded romaine, sprouted organic brown rice, the shredded chicken, guacamole & fresh cilantro.

Ingredients 
3/4 cup desiccated Coconut
1/3 cup coconut flour 
1/3 cup pitted dates, soaked 
2 tsp blue spirlulina @suncorefoods 
3 tbsp coconut butter 
3 tbsp maple syrup 
1-2 tbsp coconut oil 
Pinch of sea salt .
Add all ingredients into a food processor and pulse until come together. If your mixture doesn’t come together, add a little of coconut oil. 
Shape mixture into balls and place on a parchment lined plate or baking tray. Roll balls into more coconut if desired. Freeze bars for at least 1-2 hours until set. .

Guten Abend ihr Lieben🤗
Heute gibts mal etwas herzhaftes für euch, aber genauso lecker,  kalorienarm und proteinreich😋 Für euch nur das Beste😍🙏🏼😂🙊🙊
Super schnell zubereit, die Eier zu kochen nimmt die meiste Zeit in Anspruch😝
Und so gehts⤵️
Ihr braucht:
🍅 4 grosss Tomaten
🍅 2 hart gekochte Eier
🍅 120gr Thunfisch aus der Dose
🍅 100gr Magerjoghurt
🍅 1 EL Olivenöl
🍅 Salz & Pfeffer
🍅 2 Frühlingszwiebeln
👩🏻‍🍳 Zubereitung:
Die Eier hart kochen und dann klein schneiden.
Nun alle Zutaten für die Creme, außer die Tomaten und die Frühlingszwiebeln, miteinander vermengen. Den Deckel der Tomaten abschneiden und aushöhlen.
Die Creme einfüllen und mit den Frühlingszwiebeln toppen.
Ich habe vier gefüllte Tomaten rausbekommen, eine Tomate hat 132kcal, 14gr und 5gr Carbs🤗

The base is stir fried kale in tamari with a pinch of @murrayriversalt. Raw spinach leaves from my mums garden and raw zucchini noodles. Grilled asparagus,  button mushrooms and tempeh in @melrosehealth ghee. Avocado. Topped with a squeeze of lemon and black sesame seeds. .

Since having Van my digestion has been a little off and I’m finding it hard to digest meat. So I’m opting towards vegetarian sources of protein for at least one meal a day and maybe a small portion of meat the other meal. I actually forgot how much I love tempeh though 🤤 I’ll be adding that in heaps more. .

Topped with a squeeze of lemon and black sesame seeds. . . Since having Van my digestion has been a little off and I’m finding it hard to digest meat. So I’m opting towards vegetarian sources of protein for at least one meal a day and maybe a small portion of meat the other meal. 1.5 lbs. large raw shrimp, shelled* and de-veined, (I like to keep the tail on for presentation)⁠
2 Tbsps olive oil⁠
2 Tbsps clarified butter or ghee⁠
3-4 fresh garlic cloves, minced ⁠
1/4 tsp red pepper flakes ⁠
1/2 cup white wine (dry white wine/Sauvignon Blanc OR vegetable stock)⁠
2 Tbsps finely chopped parsley⁠
freshly ground black pepper to taste⁠
1 Tbsp fresh lemon juice⁠

📓 INSTRUCTIONS
Heat a large sauté pan on high heat then reduce to medium-high. Stir butter and oil around the pan. Sauté garlic, red pepper flakes, for a minute or two.⁠
Add the wine and shrimp, stir to coat the shrimp with the sauce.⁠
Lay shrimp so they are in an even layer in the pan. Increase the heat to high and bring the wine to a boil for two minutes.⁠
Turn shrimp to cook on the other side, continue to cook on high heat for another minute.⁠
Remove pan from heat. Sprinkle the shrimp with parsley, lemon juice, and black pepper.⁠

1. In an 8” non-stick skillet over medium heat, add mozzarella in an even layer. Top with parmesan and pepperoni. Cover with a glass lid and cook until cheese is completely melted and edges are golden. Top with oregano and red pepper flakes and remove from heat.
2. Let cool 3 minutes before sliding onto plate.
3. Garnish with parsley and slice. Serve with marinara for dipping if using.

Juggling a busy schedule and staying on track with your health and fitness goals can be daunting. Life gets chaotic, I get it! There are many things that can knock you off track, but there are also just as many tools available to you to keep you going full steam ahead.

One thing I know many people dread doing and often “don’t have time for” is ᴍᴇᴀʟ ᴘʀᴇᴘ. I understand it can be overwhelming when you first begin. But I promise it will end up saving you time in the end! As with anything, once you form a habit and create a routine, it gets easier and you get better at it as you go! A couple hours of prep on the weekend will undoubtedly save you time during the work week, alleviate the stress of meal-planning, allow you to avoid poor choices on-the-go, and ultimately set you up for success no matter what your goals are.

Here are a few things I find really add to the efficiency of my weekly meal prep:
.
𝗞𝗲𝗲𝗽 𝗶𝘁 𝘀𝗶𝗺𝗽𝗹𝗲: Stick to 2-4 protein/carb/fat sources (you can alter these every few weeks or so, but it makes prepping a heck of a lot easier when your meals stay generally consistent)
.
𝗕𝘂𝗹𝗸 𝗶𝘁 𝗨𝗽: If there’s anything you are able to prep in advance and freeze, do it!! Dedicate a day to a mass-prep and you will thank yourself for weeks on end! Cook, weigh and portion out your protein sources, pop em in Ziplocs and freeze them in freezer bags, with a week’s worth of meals in each. Then all you’ve gotta do is grab, unthaw, add some fresh veg and carbs and you’re ready for that week.

𝗨𝘀𝗲 𝘃𝗮𝗿𝗶𝗼𝘂𝘀 𝗰𝗼𝗼𝗸𝗶𝗻𝗴 𝗺𝗲𝘁𝗵𝗼𝗱𝘀: It makes it a lot easier when you can have rice in the Instapot, veggies on the stove top and fish/chicken in the oven. You’d be amazed how quickly you can get everything cooked by being a little versatile!

Ingredientes
500g de filé de frango em tirinhas
1⁄2 couve-flor (sem o talo)
1 cenoura (fatiada finamente)
1 cebola em cubos
2 dentes de alho picados
1 colher (sopa) de sumo de gengibre
1 xícara (chá) de água
1⁄2 xícara (chá) de shoyu (molho de soja) (uso com sódio reduzido)
2 colheres (sopa) rasa de amido de milho
1 colher (sopa) de azeite
1⁄2 colher (sopa) de óleo de gergelim torrado (opcional)
cebolinha fatiada a gosto (para servir)
gergelim torrado a gosto (para servir)
Modo de preparo
1. Numa jarra medidora, coloque a água e o shoyu. Junte o amido de milho e mexa bem com uma colher para dissolver.
2. Aqueça uma frigideira e junte as tirinhas de frango com 1 CS de azeite. Deixe dourar por cerca de 2 minutos – só mexa quando o frango descolar da panela.
3. Junte a cebola e o alho, acrescente a couve-flor e a cenoura e refogue por 6 minutos até começar a dourar e refogue por mais 2 minutos.
4. Acrescente o gengibre e misture bem para perfumar.
5. Regue com a mistura de shoyu e amido, mexa por cerca de 2 minutos até formar um molho mais espesso e brilhante.
6. Desligue o fogo e, por último misture o óleo de gergelim torrado. 
Salpique com cebolinha fatiada e gergelim.

Ingredients: 4 boneless skinless chicken fillets, about 5 oz each 1 Tbsp avocado oil, or olive oil 8 packed cups mixed lettuce leaves 1 cup cooked fresh or thawed frozen organic corn kernels 1.5 cups halved cherry tomatoes 1/3 cup chopped pecans 4 hard-boiled eggs, peeled and chopped 1 ripe avocado, diced Sweet Onion

Dressing: 2 fresh garlic cloves, pressed 1 small sweet onion, chopped 4 Tbsps extra virgin olive oil, divided 1/4 cup apple cider vinegar 1/2 a fresh lemon, juiced sea salt and freshly ground pepper

Instructions: Heat a grill pan or an outside grill on medium high heat. Rub chicken with sea salt, pepper and a bit of oil, then add it to the grill. Cook for about 5 minutes per side, or until cooked through and no longer pink in the inside. Set aside on a chopping board, cover and rest for a couple of minutes, then slice thin. Heat 1 Tbsp oil in a skillet over medium high heat; Saute garlic and onions for 6 minutes, or until soft and golden brown. Place camelized garlic & onions in a small blender together with remaining extra virgin olive oil, cider vinegar and lemon juice; puree until smooth. Season to your taste with sea salt & pepper, then refrigerate dressing until ready to serve. Ingredients:
12oz @sizzlefishfit Sockeye Salmon
1 Tbsp avocado oil
3 boiled eggs cooked and peeled
1 large bell pepper
2 large avocado, diced
2 cups cherry tomatoes
6 packed cups chopped romaine lettuce

Fresh Lemon-Chive Salad Dressing not added yet... but from @cleanfoodcrush:
1/3 cup plain Greek yogurt
1/2 fresh lemon, juiced
1 fresh garlic clove
4 fresh chives
sea salt and freshly ground pepper, to taste

Instructions:
In a blender or food processor, pulse all Salad Dressing ingredients until creamy. 
Taste, adjust seasonings to your liking.
Cover, and refrigerate until ready to use.

Pre-heat the oven to 375F. Add 1 Tbsp of oil to a medium sheet pan; Add the salmon and cook for about 20 minutes. Season @caribeque Lemon-Garlic or else with sea salt and freshly ground black pepper, then set aside.

Arrange all salad ingredients in a meal prep container as shown, and when ready to serve, drizzle with dressing and gently toss to combine.

These are super easy to make on a weeknight. Just crumble or pulse tempeh in blender sauté with home made taco seasoning blend, and some onions.  To make pico de Gallo, chop tomatoes, cilantro, onion, and mix together with some fresh lime. 
Cashew crema : 1 cup soaked cashews, 1/2 cup water, 1 tsp nutritional yeast, dash of salt, white wine vinegar. Blend in high speed blender (I use @vitamix) or blender until smooth and drizzle over tacos. Sprinkle with cilantro and a squeeze of fresh lime.

This dinner comes together in 10 minutes or less and is a must try!! Ingredients:
Rotisserie chicken
2 Avocado
1 Red bell pepper
Corn
1 Can Black Beans
Cilantro
A sprinkle of salt, pepper, onion powder & garlic powder. 
Method

You can use anytime of shredded chicken—I used a rotisserie! Dice up the veggies, toss all of the ingredients up in a bowl and enjoy! I heated up the corn, black beans & chicken in the microwave before mixing with the veggies. —Great as is like a Mexican Chicken Salad, or serve like I did on a tostada. Enjoy! 🐝

I love this plan! I was originally gonna make stir fry tonight, but a friend of mine invited me over for dinner and made the juiciest and most flavorful chicken I’ve ever had! I typically eat brown rice but to switch it up I ate white rice in chicken broth to add extra flavor! You don’t ALWAYS have to eat brown rice. It’s all about finding out what YOU prefer and enjoy while being mindful of the rest of your plate. Yes I recommend brown rice but do I always eat brown rice? No! Because I have found my balance and what works for my body. It took me a very long time to find a lifestyle NOT a diet that works for me and I’d love to help you find yours..🥰✨💛❤️

fitfood Still going strong with incorporating pumpkin into as many recipes as I can, so here is another one! 🎃I made pumpkin chickpea cookie dough, date caramel, pumpkin sweet potato brownies, and incorporated them into a triple layer brownie bar!

These taste delicious and are super fudgy, and have chickpeas, sweet potatoes, and pumpkin in them, so they are full of great nutrients! Each layer of these bars can be an independent recipe as well.

I made them for my classmates today and they were a hit! I didn’t tell them that there were vegetables in them to see what they thought and they all thought they were really tasty. These are also vegan and gluten free!

my new FAV recipe ✨ I typically make my Brussel sprouts with balsamic but this week I decided to use something different and...it was amazing! 
𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬:
1 bag of Brussel sprouts (clean / trimmed), 1 tbsp olive oil 
1/4 cup teriyaki sauce
1 garlic clove 
1 tbsp herbs 
𝐃𝐢𝐫𝐞𝐜𝐭𝐢𝐨𝐧𝐬:
Clean and trim ends of Brussel sprouts 
On medium heat let the Brussel sautée in oil for 5-7 minutes 
Add garlic and add teriyaki sauce and cover for 5-7 more min 
Stir occasionally 
Add herbs for topping 
This recipe goes perfect over rice with chicken, I even ate some as a snack yesterday! I would love to get new recipes using Brussels, send them my way please if you have any!! Happy Sunday and Let’s Go Birds✨🌱🦅🍚 💛

To bring in the new season I made my favorite no baked energy bites ✨

1/2 cup organic peanut butter 
1/3 cup flaxseed 
1/3 cup honey 
Try adding chocolate chips and coconut shavings! I just am unable to do so because of my allergies.. Happy first day of fall my fellow foodies 🌱

First day of fall and sure feels like it in Michigan today 🍁 It makes me happy because this is my LAST full season living away from Pennsylvania. Tomorrow I start my ICU rotation and cannot wait.
