During school, I am all about making my food nourishing, yummy, and simple. Happy Saturday, everyone🤗. Sharing a delicious meal that my papa😍likes to order for his breakfast at home. This is a very common dish for breakfast but you can have them for lunch or dinner too.😄
Wonton noodles are usually made from egg and I found @sunnoodles ramen as substitute which has the perfect texture and taste for this dish.⁣🤩
⁣
Recipe (serves 2)⁣
✔️BBQ tofu:⁣
~ 2 cubes of fried tofu⁣
~ 2.5 tablespoons soy sauce, 1/2 tablespoon hoisin sauce, 1/2 tablespoon garlic chili sauce, 2 teaspoons maple syrup, dash of 5-spice powder (optional), white pepper⁣
🍃In a heated low heat pan with all sauces, immerse tofu. Using a spoon, scoop sauce to 'marinate' the tofu, or flip few times so tofu is covered in sauce until all sauce is absorbed. For a sweeter version, you may add more maple syrup. Set tofu aside⁣
⁣
✔️Wonton noodles (for 2 servings):⁣
~ 1 pack of @sunnoodles , cooked based on package instructions⁣
~ Blanched Yu Choy⁣
~ Sauce: 2 teaspoons dark soy sauce, 1 teaspoon soy sauce and stir fry sauce, drizzle of sesame oil, fried shallots, white pepper⁣
🍃Mix sauce in a plate, and as soon as noodles is cook, toss them with sauce until well combined. ⁣

✔️Wonton recipe - see few posts back. How to store wontons if you make a big batch? Placed wrapped wonton on a non stick pan, making sure they are not touching, and freeze. Then, remove wonton and now you can store them together in a bag. If you store freshly wrapped wonton without the first step, they will stick together - no fun.😆

Serve noodles warm with BBQ tofu, blanched veggies, boiled wontons and pickled jalapeños. Enjoy and have a nice fun🌱 Saturday⁣🤗

On the way out we picked up a reading log for the Feed Your Brain Summer Reading Program. Half Price Books, the largest family owned used bookstore, has dedicated themselves to literacy efforts for more than 46 years. The Feed Your Brain program aims to close the gap in education children experience over summer break. Kids 14 & under can earn Bookworm Bucks by reading at least 15 minutes per day in June and July. 1) spread some @chosenfoods avocado oil on two slices of @cocobakes vegan gf sprouted sourdough
2) pop your bread in the oven to broil on high. cook until it’s nice & crispy
3) layer up your sandwich: cucumber slices, @goodcatchfoods vegan med flavor tuna, tomato, green onion, parsley, basil, & sprouts🌱
have a good friday & plz go to whole foods or a cool health restaurant this weekend then send me pics of your food so i can live vicariously thru you💚😅

if you’re a busy person or just too lazy to cook rice this stuff is a lifesaver - just put as much as you want from the frozen resealable bag in a bowl, pop it in the microwave for a sec, then you’re good👏🏻to👏🏻go👏🏻 ilysm @wholefoods 
i need to start eating more purple food again bc it really ups the aesthetic of my food pics & purple produce is super high in antioxidants🍆🍇🍠💟
currently subsisting on lots of yummy, healthy food with help from lots of iced coffee (got a new machine at the house, s/o kd) sooo basically not much has changed besides my meals being eaten out of containers, not at my kitchen table on ceramic plates or bowls. happy thursday💚🥦

While a sugar and caffeine packed breakfast may ignite you, that surge is short lived and will leave you dragging, and craving another quick fix. Hey Warrior 👋🏼😃 I’m Mya, past special education teacher, mom of 2 young girls, wife, love Disneyland and to travel, USED to live off fast food and caffeine but am now getting healthier (little by little) post my mom’s breast cancer diagnosis in 2015. SOSOSOS GUYS.. it is honestly a lot harder to cook meals that i usually would make back home.. For many reasons: ⠀
1.moving into an apartment is SO tiring ⠀
2.i still have not gone grocery shopping enough for the usual ingredients i like to make food with⠀
3.im trying to stay on a budget and not spend so much $$$⠀
4.theres not enough time in the day sometimes to document and cook meals that are “post worthy”⠀
Not at all trying to make these lame excuses but just saying life is busy and that’s what i’ve been doing instead of cooking(so sad).. I also live in one of the hottest places ever (today was around 108° i think) so my appetite is not at its highest when it’s that hot... ⠀
ANYWAY MAKE THESE YOU WONT REGRET IT!! I got this huge container of powdered almond butter for $5 at costco and decided to use it in this recipe for a lower fat option but you can definitely use normal almond butter (gonna try that next week)⠀

🌿dEATS:⠀
1 ripe banana⠀
1/2 cup chocolate oat milk⠀
1/4 cup coconut oil 
2 flax eggs:2 tbsp flax meal//3.5 tbsp water⠀
1 tsp baking soda⠀
1 tsp vanilla extract & 1/4 cup honey
1/2 tsp salt⠀
(1/2 cup powdered almond butter+1/4 cup water) & ⠀
(1/4 cup separate powdered almond butter+1/8 water)⠀
1/2 cup dairy free chocolate chips⠀
1/3 cup cocoa powder⠀
1/4 cup coconut flour⠀

Preheat oven to 400° then make your flax eggs and set aside, mix dry ingredients, & wet ingredients together... Put the chocolate mixture in a well oiled muffin pan ,then in a separate small bowl mix the other 1/4 cup powdered almond butter+water and add dollops of it to the tops of each chocolate mixture, top with more chocolate chips and bake for 15 minutes!!!! Let cool for 15 minutes then pop them out of the tin with a knife & top w sea salt🕺🏻🕺🏻🕺🏻🌈🌈🌈🌈

One of my absolute fav 😍 restaurants is a place called "Big Bowl" 🥣 where you can make your own stir fry 😋 and add ALL the veg you want 🤤 I mean, it's like a dream 🌙 soooo, this dinner is basically my GO-TO big bowl order 👌🏻 but with like half the veg 🤷🏼‍♀️ because I just used what I had on hand 😆 . This meal was as made in minutes ⏱ AND tasted real gooood 😄 let's be real for a moment ☝🏻nobody wants to wait an hour for dinner to be ready 🍽 which is why this recipe is perfect 👌🏻 when you just wanna EAT! 🤪 . •••••••••• . dEATS 👇🏻: . . LIL' SPICY stir-fry "sauce" 🌶: . - 2 Tbsp. coconut aminos - 1 tsp. honey - juice of 1/2 lime - 1/8 tsp. chili garlic sauce (add more if you LOVE spice) . Contents: . - portabella mushrooms - broccoli - cauliflower rice - marinated tofu . 👉🏻 Sauté marinated tofu (recipe in a post awhile back) in a skillet on medium heat until crisp. In a separate pan sauté your veggies and cauliflower rice, with the sauce until cooked. Here’s a great snack packed with tons of fiber and healthy omega-3 fats!

3 Tbsp. chia seeds
2 Tbsp. walnut butter
½ cup unsweetened nut milk
1 Tbsp. monk fruit sweetener

Mix all ingredients well and leave in the refrigerator to set for 30-60 minutes
Remove and mix again or blend in high speed blender for 20 seconds.

Enjoy or store in the fridge for up to 3 days.

That comes from the days after I was diagnosed with Celiac Disease in 2004 and there wasn’t much to choose from besides plain meat, veggies, fruit, and rice. 
Items used:
Tinkyada Brown Rice Pasta Fettuccini GF pasta (my favorite brand of GF noodles)
Sliced Brussel Sprouts
Diced Orange and Red Bell Peppers
Garlic Cloves
Grape Tomatoes🍅
Parmesan cheese 🧀
Olive Oil
Grass Fed Butter
Sea Salt
Ground Black Pepper

Instructions

Set oven to 425, spread veggies & garlic cloves on baking sheet, drizzle with olive oil and season with sea salt & black pepper. Roast until lightly brown.
Make pasta per package. 
Drain noodles. Put in a serving dish. Melt butter over noodles and sprinkle with cheese. 
Place roasted veggies on top of noodles. 
ENJOY!

••• //NEW RECIPE// Fermented Peach and Choc Chip Muffins!! ••• I accidentally made these the other night when I was craving something "muffin-y" (That's a thing, right?) ••• The basic recipe can be used and then your flavors added, so I decided to use some of the fermented peaches I had sitting in my freezer, plus some dark choc I had been gifted...... the results ( honestly) surprised me 👌 🍑🧁 ••• Give these a crack and Let me know what you think. feedyourbrain ok here’s another Asian dish for ya bc I’ve been super into these flavors lately🥡

this meal is ALL veggies but inspired by a rice bowl. lighter option for when you’re wanting some takeout ya know?
.
wandered around @traderjoes and found these GF rice crumbs and ponzu sauce, got the idea & HAD to make some crispy tofu. the rice crumbs were a great alternative to panko or bread crumbs!
.
.
dEATS:
cauliflower rice + mushrooms + broccoli + tofu + rice crumbs + sesame oil + yuzu sauce + liquid aminos + spicy brown mustard + sesame seeds+ green onion + lemon juice
.
TOFU
➺ drain tofu
➺ chop into cubes
➺ put in container
➺ add in as much sesame oil, yuzu, & aminos as you like (at least enough to coat)
➺ add in 1/4 cup rice crumbs to make a coating
➺ add a little sesame oil into a hot pan and pan fry tofu until as brown as you like. hotter the pan the crispier the edges
BROCCOLI
➺ preheat oven to 350
➺ place broccoli on a sheet pan, coat with some oil and season how you like
➺ bake until lightly crispy (abt 15 mins)
CAULIFLOWER RICE
➺ cook riced cauliflower on medium heat in a pan with some sesame oil, aminos and lemon juice until as tender as you like
MUSHROOMS
➺ slice mushrooms and pan fry a little sesame oil

pile everything on a plate or bowl and top w spicy brown mustard, green onion, sesame seeds, and more lemon juice. sirracha or red pepper flakes would also be fire. I added lemon zest to be extra but that’s just me :}

This is in your power to mold and shift and your outcomes are within your control

If you haven’t been able to mold or shift this up until this point, it’s because of your approach. .
For some women— it’s a time conversation

If this is the case the assumption that is usually made is fitness+ nutrition  is less important than <children/work/spouse>

Beliefs that will support you in shifting

1️⃣ eating healthier doesn’t take more time than not.

2️⃣you will make the time back when you workout because your brain will be more efficient at work and you’ll also fall asleep faster
.
3️⃣ things get in the way, it fitness becomes a lower priority .
4️⃣ you can get a solid workout in 30 min
.
5️⃣you teach your kids more by what you DO, if you don’t set a good example, they will follow your lead (this applies to food and exercise)
.
6️⃣healthy foods CAN be kid friendly, if they are hungry, they will eat- the more you cater to them, the more of a nightmare you will create and you are setting them up to have issues with nutrition in their future if balance is not learned now
.
7️⃣ the cumulative long term effects of exercise and a good diet will positively impact all areas of your life
.
