FLUFFY SCRAMBLED EGGS 🍳 This scrambled egg recipe gets me right out of bed on a slow weekend morning! Paired with smoked salmon and avo, it brings your favourite brunch spot to your very own kitchen table within 10 mins!

Ingredients ✔️4 eggs
✔️Handful chives, chopped
✔️Non-stick oil spray, olive oil, or butter
✔️Juice half lime
✔️100g smoked salmon
✔️Salt & pepper
1️⃣Place a non-stick skillet or cast-iron pan on a low heat to warm up.
2️⃣Break the eggs into a bowl, and pour in the milk, and a pinch of salt and pepper. Using a fork or whisk, beat the eggs vigorously for around one minute, until well mixed. Sprinkle in a handful of chopped chives, and stir.
3️⃣Spray the skillet with oil, or add a drizzle of oil or a teaspoon of butter to the pan. Once a thin layer is coating the surface, pour in the eggs. Keep the skillet on a low heat as the eggs will begin to cook immediately.
4️⃣When the outer edges are beginning to cook, pull them in towards the centre of the eggs in the middle of the pan. The uncooked egg in the middle will pour into the area pulled back. Continue to pull the edges into the centre repeatedly, until the cooked scrambled egg gathers in the centre, after around 4 minutes.
5️⃣When the uncooked eggs no longer run into the edges when the mixture is pulled back, begin to break up the mixture, moving it constantly to ensure even cooking, for around 3 minutes.
6️⃣Turn the heat off just before the eggs are fully cooked (when there is still a very slight runniness), as they will firm up while cooling and serving. They are perfectly done when they are not too runny, but avoid them becoming rubbery if cooked for too long.
7️⃣Serve on top of avocado mashed with juice from half a lime, and layer with a slice of smoked salmon and sprigs of dill. Season to taste.

Exposed But Not Alone. 8x8in acrylic on canvas panel. I’ve been putting my kiddos first all week as I solo parent, but last night they spent the night at grandma and grandpas because I just needed to recharge. So thankful to have them nearby. This painting happened last night, it didn’t come easily, but so so glad for a little focused time to remind myself I can still do it.
You never know how much you miss cooking until you don’t get to do much of it, and damn did I miss it this week. I finally got to go grocery shopping so I was well stocked for this morning’s meal. The only other plans on the agenda for today are salmon cooking, outdoor nap taking, and Florida trip planning 👀 My ideal Saturday. Happy weekend ✨

Cooking while the studio was in utter chaos (swipe for a little peek aka real life) seemed like a dumb & complicated idea. But it actually came together easily in one pan because of a few salad leftovers that were already chopped/sliced & grateful for an endless jar of pickled jalapeños. Added toppings to slow cooked scrambled eggs with Mexican string cheese...⚡️! Taco version with Sriracha mayo was good too.
Ps. Is it weird that I’m in love with this drop cloth? #sparkjoydaily
