My Eiffel Tower cookie 🇫🇷 I can finally show you my entry for the @showmesweetsshow from this last weekend. This is one of my main 3-D elements from my 1st real cookie competition (and probably last😝) .
It was a crazy whirlwind and I’m grateful for the experience. I spent six weeks on the whole cookie. BUT, I learned more in 24 hours of the event than I did in the last two years of doing cookies. The competition was FIERCE and the winning cookies were absolute game changers in the industry. I’ve only been doing cookies for 2.5 years and I’ve never seen anything like the top 3. It’s like the cake, sculpture and cookie world had a crazy talented magical love child and the cookie bar just got raised to the moon. .

For this cookie I modified a cutter by @lucie.bakes , I cut it to fit precisely, mitered the SIDE angles for a smooth fit and angled back the legs. I iced all sides in and out, then painted with @thesugarart and @sugarprism_edible_acrylicpaint , lastly used an over piping technique that I saw on @juliamushers Cookie Connection web page. The glass windows were made with @simicakes1 isomalt. It took a little over 2 weeks for this cookie alone and is over piped inside and out. 💙🇫🇷❤️ The color that I chose for the base is the current color of the Eiffel tower, the other colors that are under the piping are historical colors that the Eiffel tower has been over the years. It’s actually very interesting, it has change colors and is re-painted every 7 years. ✌🏽 .

Trout Roe has played a role in a number of our dishes over the years.
It topped Deviled Egg Filling with Smoked Habanero Powder at Empellón Cocina and featured prominently in the Trout Flautas--where the fish's poached / dehydrated / fried skin subbed in for a tortilla at that restaurant's Kitchen Table.
We currently offer Trout Roe at Empellón as part of a salsa with Gooseberries alongside Arctic Char during lunch.
I have been making nature mandalas as a part of my meditative, contemplative practice.
