eattherainbow dunno if you guys can tell, but I have a serious avocado kick at the minute. My cravings are doing this weird thing where I don’t know what I want most of the time, other than avocado toast. I’m not sure what that means... I guess my body just want those lovely fats, vitamins and phytonutrients 🤷‍♀️😛🥑🥑

do you ever go through phases where your hunger isn’t consistent? I seem to be really randomly ravenous, then I have little interest/don’t know what I want to eat. But that’s no excuse to not eat. I am trying to eat intuitively; within reason! I make sure I still get enough no matter what, but I’m just trying to ignore the traditional meal timings, and eat when my body is telling me to more. I used to be so rigid about timings and ‘waiting’ for meal times but, your body ain’t a clock, and some days is hungrier than others! so I’m trying to be more free about it🕊

I had a moment yesterday where I felt so overwhelmed with not only my school work load, but my part-time job and Instagram as well. whenever I feel like this, it always helps me to write everything down that is priority and needs to get done first, followed by what else needs to get done in descending order!
It helps me so much to visually see what I need to do, and having it written down on paper frees my mind of all the tasks and actually allows me to focus on one thing at a time!
Q: what do you do when you feel overwhelmed? I write a list (like I said above 😅), I go for a walk and listen to music, or I talk to someone who cares about me! 💕

Buddha’s Hand looks so beautiful and de smell is amazing! I let my children touch, feel, smell, bite, taste... and from the sweet part (the white from inside) I cut little pieces to mix into their fruit. I don’t want them to eat all of it, but I just give them the opportunity to discover!

It tastes amazing and blends perfectly in my smoothies and ice creams. This chocolate bad boy filled me up and left me feeling happy and satisfied but then I just love chocolate!!🙊🍫 Recipe; 1/4 cup of whole hazelnuts skinned and soaked overnight.
1 tbs of @superelixir nourishing protein powder
1 tbs of carob powder
1 frozen banana,
2-4 soft pitted dates
3/4 cup of hazelnut milk
1 tsp vanilla bean paste
Some ice cubes
Blend everything in a high powdered blender until smooth and creamy. Tastes just like liquid Nutella!!😋 I topped mine with crushed walnuts, homemade chocolate granola, buckinis and warm chocolate sauce. Enjoy!

Preschool lunch day 29. We sometimes buy the plain poptarts as a treat but cannot eat any of the other ones due to use of gelatin in the frosted product but these tiny poptart crisps are gelatin free/kosher dairy, yay! Swiping shows that I just don't think P likes sandwhiches with cream cheese, but he ate a lot of his other food so I'm happy. I've made this last weekend and I have to confess that the final result was much better than I was expecting. ⁣
I've chosen to use Cupuaçu (a tropical rain forest fruit common through the Amazon basin in South America) because of its taste and texture. Cupuaçu has a sweet taste with hints of vanilla and the texture is creamy and buttery perfect to use as a base for sorbets and sweet recipes.⁣

Ingredients⁣
3 @tropicalbrazilaus cupuaçu pulps⁣
2/3 cup + 2 tbsp Coconut sugar⁣
1/2 cup coconut flour⁣
1/4 cup coconut oil⁣
1 tsp psyllium husk⁣
1 cup coconut milk⁣
1 tsp baking powder⁣
⁣
How to make it: in a blender add the cupuaçu pulps, coconut milk and 2/3 cup of coconut sugar and mix it until creamy. Add the coconut flour, coconut oil, psyllium and baking powder and blend it until well combined. In a bowl mix 3 tbsp of hot water with the two tablespoons of coconut sugar. Line a round baking tin or greasy four small ramekins pour the sugar and water mixture at the bottom. Pour the creme caramel mixture on top and oven bake it for around 30/40 minutes in a fan forced preheated oven to 180C. Wait until it cools down to room temperature and refrigerate for 2-3 hours before flipping it over from the pan.⁣

eattherainbow Would never have thought to juice pumpkin. It was in our Rainbow veggie juice book. So good!! I added more orange veggies and a little bit of fruit to the original recipe. We juiced a small pie pumpkin, 3 orange peppers, 6 carrots, 2 golden beets, 1 big naval orange, 2 green apples, some turmeric and ginger root, and a big wedge of pineapple. A cup of flat mineral water to thin it out. All organic produce except for the roots. Good just as juice but oh my gosh, in smoothie form, it was like a cup of fresh crisp air and a waterfall. Lol I cant explain it. Made it into a pumpkin pie smoothie  by taking half of the pitcher of juice and adding 1/4 cup coconut cream, 1/2 frozen banana, a handful of ice, and pumpkin pie spice. I can always feel the dense and easily absorbed nutrients working within seconds. Before I even give you any details about this recipe I just want to say... if you don’t have an air fryer you NEED to get one. It’ll change your life for the better and it’s Christmas soon so treat yo self (or get someone else you) 😉

Now for the tofu....It’s sweet but tangy, flavoured with garlic, ginger and chilli 🌶. I served with jasmine rice, sesame seeds and spring onion and I’ve been dreaming of this meal ever since 😍

Tofu tip: I like to press my tofu for at least 3 hours before I serve it to make sure as much water as possible has been squeezed out. This is how you get the best results when you fry it.

Now for the recipe. Here’s what you’ll need: 🌶1 packet of @tofooco tofu, pressed and cut into cubes (approx 1inchx1inch in size)
🌶4 heaped tbsp cornflour
🌶A pinch of salt to taste
🌶4 cloves of garlic, minced
🌶1 tbsp ginger, minced
🌶1.5 tbsp siracha sauce
🌶4 tbsp soy sauce
🌶1 tbsp rice vinegar
🌶3 tbsp maple syrup (or agave)
🌶1 tsp oil
🌶Spring onions and sesame seeds to garnish

Ich liebe mein Eiersalat-Rezept und selbst Mischköstler fanden den Eiersalat auch immer mega lecker!🤗
Sicherlich kennt ihr nun schon die Bäckerei, @beumerundlutum, aus meinen Stories! Nicht nur das dort alles Bio ist, liebe ich einfach drei Sachen dort am meisten: das Neandertaler Brot, die Zimtschnecken und das Dinkelcroissant! 🤤 Ach ja, natürlich sollte man die Bagels auch nicht vergessen.😛 Beim letzten Mal habe ich die mit Karottenlachs und Frischkäse gefüllt, heute zeige ich euch ein weiteres Rezept. Diesmal mit dem Neandertaler Brot. Das Brot wird ohne Mehl zubereitet, stattdessen besteht es aus Haferflocken und energiereichen, knusprigen Saaten wie Sonnenblumenkernen, Chia und Leinsamen. So lecker!😍 Dazu passt mein Eiersalat perfekt! Falls ihr in Berlin wohnt, schaut unbedingt bei Beumer und Lutum vorbei. Eiersalat Rezept:
⠀⠀
300 g Tofu
2 Teelöffel Senf
1 Teelöffel Kurkuma
ein wenig Kala Namak Salz, für den schwefeligen Ei-Geschmack
3-4 Esslöffel vegane Mayo
Pfeffer
1 Esslöffel Gurkensaft (optional)
frischer Schnittlauch, gehackt

Erstmal zerbröseln wir den Tofu mit Hand.
Danach untermischen wir alle anderen Zutaten, außer den Schnittlauch. Den fügen wir ganz am Ende hinzu. Je nach Belieben mehr Mayo und Kala Namak Salz hinzufügen.
Am besten mit frischem Brot servieren.

I am starting to get back into running. I was loving the progress I was making while adding in a 2-3 mile run 2-3 days a week. 
I hate running. Just like any workout though I am proud of myself when I am done. I’m not dying, I can breathe, I’m not cramping up, I just don’t like running. Cardio is good for my body. Yes, I know there’s other forms of cardio, but I want to like running.

eattherainbow Did you know that by the time children are 3-5 years of age, they have developed their unique adult microbiome? Furthermore, the first year, really sets the stage. So how do you encourage the growth of an abundant, flourishing microbiome for your little one?

Offer a variety of plant foods! Unfortunately, commercial baby purees often lack variety, usually containing the same ingredients over and over again. The more variety, the more opportunity there is to get more nutrients and phytonutrients, both of which support health in different ways. Nutrients, like vitamins and minerals, are essential to survive. Phytonutrients on the other hand, act as prebiotics, food for good gut bacteria. Good gut bacteria provide benefits by discouraging the growth of bad bacteria and thereby reducing inflammation. They also contribute to nutrient synthesis (some vitamins and short chain fatty acids) and much more! By eating a diet rich in phytonutrients and fiber, one can support the growth of a diverse jungle of bacteria instead of a monoculture of bacteria. And as we know, a monoculture crop is more susceptible to disease than a permaculture. 🦠
The same goes for children and adults alike. Many adults buy the same 10 fruits and vegetables over and over again. Do you fall into this pattern? Well, I encourage you to reconsider for your kiddos and for yourself!

Offering a wide variety of homemade baby food exposes your little one not only to more nutrient density but also flavor! The more flavors they try, the more likely they will enjoy a more wide variety of foods as they get older, thus paving the road to a healthy eater and a healthy robust gut microbiome.

Slowly still working my way through all the goodies that @goodlife.food life #gifted me a while back! I have had them in the freezer and I keep coming across them which is always a very nice surprise!

This was one of the Houmous Burgers with Tahini and Spinach. It is packed full of chickpeas, tahini, spinach and Moroccan spices plus a hint of lemon and garlic. All you need to do is whack these in oven for 20 minutes then pop together all your favourite bits in a wrap! Easy! I served it on a @bfreefoods chia and quinoa wrap with spinach, cucumber and lite hummus! So so yummy!

eattherainbow The star of the show tonight is a pearl barley risotto made with whatever veggies that needed using up - clear out time before our jolly holidays to warm climes ☀️ I love pearl barley and don’t use it enough - things need to change!
This is a definite winter warmer and so good on these cold nights - and it’s easy to make too - what’s not to like?

INGREDIENTS
Half a butternut - peeled, diced and roasted (160 fan for about 25 minutes)
Onion - diced
Sun dried tomatoes - snipped finely (I use the Merchant Gourmet ones)
Carrot - peeled & diced
Leek - finely sliced (this was one grown by one of my lovely friends and given to me a couple of months ago - stored properly veggies last for ages)
Courgette - diced
Mixed herbs
Porcini mushrooms - I used dried ones and soaked them for an hour - I kept the soaking liquor
Pearly barley - I used a cup and cooked it in the mushroom liquor 
1️⃣ whilst the butternut is roasting and the pearl barley is cooking, add the carrots, courgette, onion, leek, sun dried tomatoes and mushrooms to a pan.
2️⃣ soften on a low heat for about 20 minutes 
3️⃣ add the cooked pearl barley, mixed herbs and roast butternut 
4️⃣ stir well and serve 
ENJOY 💚

I saw this cute idea of serving fruit in ice cream cones, and my son's birthday party was the perfect time to try it. The little guests were very pleased and gobbled it all up, and the parents were just as happy that the kids avoided that crazy sugar rush. I filled the cones with mango, grapes, apple and satsuma wedges and kiwi berries (nergi). No one was asking for ice cream, so I dare to say it was a hit!
