Serves: 6
INGREDIENTS:
3 Tbsp extra virgin olive oil
3 Tbsp lemon juice from 1 large lemon
1 garlic clove pressed or minced
1/2 tsp sea salt or to taste
1/8 tsp black pepper
1 1/2 cups cherry tomatoes halved
1 English Cucumber halved and sliced
15 oz chickpeas or garbanzo beans, drained, rinsed
1/2 medium red onion thinly sliced
1 avocado sliced
1/4 cup cilantro chopped
4 oz feta cheese diced

eatrealfood Happy Monday! Because you asked, sharing the FULL recipe for this ORZO GREEK SALAD 🍅🥗🥒 along with an easy, DIY bone broth 🍲 that I like to cook my orzo, brown rice or quinoa in for the best flavor + nutrition! Grab the delicious deets below👇🏼👇🏼
For the bone broth 🍲👌🏼
1 whole organic chicken. Rotisserie works!
2 tablespoons of apple cider vinegar
2-3 bay leaves 🍃
2 celery stalks, chopped (veins removed)
2 large organic carrots, chopped🥕
2 white onions, chopped
~8-9 cups of water 💦 
1/2 tsp of sea salt (or more, to taste!)🧂 1/4 tsp of ground pepper
3 cloves of garlic, finely minced

Instructions: in a large stock pot, add the entire chicken carcass; remove all white & dark meat. Throw in all of the ingredients- except for salt and pepper. Bring everything to a boil and then reduce heat to med/low and simmer (covered w/ a lid) for 2.5 hours. It will thicken nicely. Use a strainer to filter only the broth into a containers or tup & stir in the sea salt and pepper.

For the Orzo Greek Salad 🌟🌟🌟🌟🌟
Vinaigrette 👇🏼
3/4 cup of good quality olive oil
1/4 cup white wine vinegar 
1 tablespoon fresh lemon juice 🍋
1 teaspoon of dried oregano
1/2 teaspoon garlic salt🧂 
1/2 teaspoon minced organic garlic
1 tablespoon of dried parsley🌿
1/2 teaspoon ground pepper
2 teaspoons of raw honey or agave
.
The Greek salad has 4 cups of cold, but cooked orzo (I cooked mine in bone broth, recipe above!!🍲👌🏼🙃), 1 cup finely chopped bell peppers in every color, 1.5 cups of halved cherry tomatoes, 1.5 cups of diced cucumbers, & 1 cup of creamy feta chunks, I always buy goat feta.

It was one of those nights 🤪 where i had zero clue what to eat for din. I found this sad bag of cauliflower gnocchi (it’s probably been in the back of my freezer for 6 months 😬) when i reminded myself of one of my favorite combinations. Today is freshman move in day 😬 on campus and I wouldn’t be lying if it didn’t make me feel like I was doing the time warp. Do you remember moving in as a freshman? eatrealfood GARLIC BUTTER MEATBALLS WITH LEMON ZUCCHINI NOODLES -

Ingredients:
1/2 lb ground turkey meat
1/2 lb ground pork meat or substitute chicken
1/2 cup shredded cheese of your choice
4 cloves garlic, grated + 2 cloves garlic, minced
1 teaspoon Italian seasoning
1/2 teaspoon red crushed chili pepper flakes, optional
1 crumbled bouillon cube, optional
Salt and fresh cracked black pepper, to taste
1 cup fresh chopped cilantro (or parsley), divided
3 tablespoons butter
4 medium zucchini, spiralized
Juice of 1/2 lemon
1 tablespoon hot sauce

Instructions:
1. In a large bowl, combine ground turkey and ground pork, cheese, grated garlic, Italian seasoning, bouillon cube, red chili pepper flakes, chopped cilantro and black pepper. Mix well with your hands or fork and form medium balls. Arrange on a plate and set aside.
2. Melt 2 tablespoons butter in a large skillet over medium-low heat. Cook the meatballs for 8 – 10 minutes on all sides, until browned and cooked through. While cooking, baste the meatballs with the mix of butter and juices. Remove to a clean plate and set aside.
3. In the same skillet melt remaining tablespoon butter; then add lemon juice, hot sauce, minced garlic, and red pepper flakes (if you want). Add the zucchini noodles and cook for 3 or 4 minutes, stirring regularly, until zucchini is done but still crisp and juices have reduced a bit. Adjust seasoning with salt and pepper and garnish with more cilantro or parsley if you like.
4. Push zucchini on one side of the skillet and add the meatballs back to the pan and reheat for a minute or two. Serve immediately with a lemon slice on the side. Enjoy!

Me lo he preparado con lo que tenía en la nevera, lechuga, tomatitos cherry y... hamburguesas de lentejas... ¡Ensaladita al canto! pensaba que no iba a ser tan bueno el resultado.... 💪🏼😁 ¡riquísimo! Son las sobras de anoche, que hicimos junto a unas patatitas fritas, y son super super sencillas: 250gr lentejas cocidas, 50gr harina espelta integral, 1cebolla, sal, pimienta, orégano y 1diente de ajo en este caso grande(si os gusta más fuerte podéis echar más) a triturar, se hace una masa y a la sartén con un pelín de aceite ¡y ya! Nos encanta tanto a grandes como a peques, a pesar de los ingredientes no queda muy pesado de sabor👌🏼👌🏼👌🏼😎😎, y de paso #notiramoscomida

De vuelta al trabajo, de vuelta a los tuppers. I used my fav @mikeys muffins which are gluten free, dairy free, soy free and so GOOD!! This is a lemon blueberry muffin, sliced in half, filled with homemade blueberry chia jam, vegan store bought coconut whip cream and fresh blueberries. ⁣

Through the most important growing years, why wouldn’t we want to give them the nutrients needed to flourish and thrive?⠀

Further than that, many negative associations with food can start from childhood:⠀
⠀
“Finish all your food on your plate before leaving the table”.... Leading to ignoring innate hunger cues.⠀
“Pancakes are unhealthy, so we can only have them on Saturdays”... Leading to cheat days and “bad” food.⠀
“If you behave we can go get ice cream after this!”... Leading to using food as a reward for behavior. ⠀
⠀
These are NOT easy habits to break.. so here are some tips for how to improve eating habits for your children:⠀
⠀
🔹Give them the illusion of choice: “You can pick one vegetable you’d like to eat tonight!”.⠀
🔹Let them stop when they’re full. From infancy, kids tell us when they’re hungry and have had enough.⠀
🔹Serve minimally processed foods in appropriate portions.⠀
🔹Avoid strict eating rules. “Bread is bad for you so we can’t have that”.⠀
🔹Involve them in the shopping, preparing and cooking process. ⠀
⠀
We all know that kids are SPONGES. They will pick up on a parent constantly stepping on the scale, or saying things like “carbs are so bad for you” or “I need to go on a diet, I’m so fat”. ⠀
Taking a whole family approach to proper health and nutrition will provide the best environment for them to create healthy relationships with food and their bodies.⠀

Start small! You don’t have to suddenly switch to going all organic if that’s not what your family is used to. Decide your priorities and find a strategy that works for your kids. Make it fun!⠀

Weight Watchers has a new app for kids and I find it appaling. 
My thoughts are swirling and you can expect more on this topic soon... Our children honestly deserve better! They deserve to live in a world where we as adults teach them the value of nourishing food that inspires them to try new foods and be adventurous in the kitchen for the love of it. To lead active lives for the enjoyment of it rather than what technology says about it...fitness trackers, I'm coming for you too!

The humble carrot. Crunchy, colourful, versatile and delicious.

Carrots are one of those vegetables that have so many uses. They can eaten raw, roasted, steamed, stir fried, spiralised, included in a salad or sandwich and make a great addition to baked goods, such as cakes, muffins and slices. I’ve even made a carrot cake flavoured porridge before!

What is so good about carrots nutritionally?
🥕 Beta carotene, an antioxidant, which gives them their orange colour is protective against cancer and converts to vitamin A in the body. Vitamin A is important for vision, immunity and growth and development.
🥕 B vitamins, which are important for energy production.
🥕 Vitamin K, which is essential for blood coagulation and bone health.
🥕 Potassium, which is needed for regulation of blood pressure.
🥕 Fibre, which is important for digestive and gut health.

We planted these @thediggersclub heirloom carrots as seeds a few months ago. I’m pretty sure they were baby heirloom carrots and we have just left them a bit too long. The kids and I picked them on the weekend and it was a bit of a competition to pick the ones that weren’t orange. There was a lot of disappointment as we only found one purple and one white one. There’s a few more in the ground, so hopefully they are some of the more exciting colours.

Gooseberries are ideal for snack, they contain important vitamis and minerals too. For example 100g of berries contain 25mg calcium, 0,35mg iron, 10 mg magnesium, 27 mg phosphorus, 198mg potassium, 1mg sodium Na, 0,12mg zinc, 28mg vitamin C. Btw they taste amazingly good and sweet!
