La vuelta a la rutina tiene que tener un Batch Cooking de por medio, el de hoy no es muy grande, pero es suficiente para empezar tranquila la semana ☺️

➡️Antes de explicaros que he hecho, voy a pediros que deslicéis hacia la izquierda y me ayudéis a ponerle nombre a la preparación de la segunda foto.

➡️Iban a ser burguers de berenjena y gluten de trigo(es el ingrediente base para hacer seitán) y lo que ha quedado sin unos trocitos muy jugosos y sabrosos que he hecho al horno, cuéntame qué nombre le pondrías y así podré repetirlo y darte la receta🙏☺️

El resto es todo muy básico:

🍃Arroz integral hervido
.
🍃 Frijoles negros
.
🍃 Judías al vapor, salteadas con ajo
.
🍃Falafel de lenteja roja

If you don't have a summer dish to bring to your family bbq's, now you do! ⁣

I promise you this salad will knock your socks off. It's so good you'll be going back for seconds and thirds. ⁣
⁣
What's your favorite summer dish? What do you bring to cookouts? ⁣
⁣
Lunch #dEATs 👇🏼 I made a large serving for about 7 people. But if you want a smaller serving size just do half of everything. ⁣
I used 2 @eatbanza alphabet noodle boxes. Cook as directed on box. ⁣
Season 4 chicken thighs with pepper, sea salt, onion powder and garlic salt. Cook in pan with olive oil until each side is golden brown. Cook an additional 20 minutes in the oven at 400 ° .⁣
Steam 2 1/2 cups of broccoli florets. Chop up 5 stems of shallots and 2 large stocks of celery. Hard boil 5 eggs and chop in large cubes. ⁣
Dressing: Mix 1 cup vegan Mayo, 3/4 cups plain Greek yogurt, 1 tsp Italian seasoning, 1 tbsp sea salt, 4 tsp Dijon mustard, 2 tbsp honey, 1 tsp pepper. ⁣
Once chicken is done, let cool and chop into cubes. ⁣
Mix pasta, veggies, chicken, egg, dressing , 1/2 cup red raisins and 1/3 cup of sliced almonds.⁣
Let cool in the fridge and enjoy!

Visiting LA is always like dropping in on another time for me. That time when I was just getting to know Scott, we didn’t have kids, and my weekends were filled with friends, bbqs, and sunshine. eatmoreveggies DINNER INSPO | Thai Chilli Basil Salmon. This was seriously good. I absolutely love the flavours, especially from the Thai basil, and the sauce becomes a sticky, sweet glaze on the salmon 😘👌

If you fancy making this tonight, here's what you need - for 2:
🔸2 salmon fillets
🔸2 chillis, sliced (or a good teaspoon of @verylazyfooduk chilli)
🔸2 cloves of garlic, crushed (or a teaspoon of @verylazyfooduk garlic!)
🔸1 tbsp soy sauce (or tamari for GF)
🔸3 tbsp oyster sauce
🔸1 tsp brown sugar (or Stevia or simply omit as it's probably sweet enough without this, due to the sugar in the oyster sauce)
🔸1/3 - 1/2 cup Thai basil, chopped
🔸olive oil
~
🔹Preheat oven to 200°C
🔹In a small bowl, combine soy, oyster sauce and sugar (if using) 🔹Heat oil in a frying pan and add chilli and garlic, frying for a few minutes
🔹Add the sauce mixture and cook for a couple of minutes until slightly reduced
🔹Add the basil and cook for another minute, then set aside
🔹Place the salmon skin-side down in a baking dish, pour the sauce over the top and place in the oven to bake for 10-15 minutes (adjust time depending on thickness of salmon)
🔹Serve with jasmine rice or cauliflower rice, and some steamed greens

I got this insanely clever trick💡 from my friend Alexandra @fivesechealth to dress up a simple tomato sauce, tried it, and now I’m in love.⁠

I used to pair a bean-based pasta (Not a fan 🤢, anyone else?) with my roasted 🍅 tomato sauce to get more protein into meals, but now I don’t have to. .⁠
.⁠
🍝 We paired this creamy tomato sauce with zoodles and a sprinkling of basil, and it was the ultimate summer deliciousness.⁠

Recipe:⁠
.⁠
1️⃣Start with either a roasted tomato sauce or a can of tomatoes. For my roasted tomato sauce, I simply chop up around 20 tomatoes, cut up a red onion, 5 cloves of garlic, few sprigs of rosemary and roast for 1 hour at 325F. Then blend it up. Batch freeze.⁠
.⁠
2️⃣If you are using canned tomatoes, sauté some garlic + onions and add it to the blender with some herbs like oregano or rosemary.⁠
.⁠
3️⃣blend 1/2 to 1 box of silken tofu with your tomato sauce (I used 1/2 box of the tofu with 2c tomato sauce), with 1 clove of garlic, a few leaves of basil and 3 tbsp olive oil (sub with broth if you are oil-free) .⁠
.⁠
4️⃣Pour into a saucepan, bring to a slow simmer, careful not to burn.⁠

5️⃣pair with either pasta or zoodles.⁠

Thanks to @plateful.health⁠ ⁠ I got this insanely clever trick💡 from my friend Alexandra @fivesechealth to dress up a simple tomato sauce, tried it, and now I’m in love.⁠ .⁠ I used to pair a bean-based pasta (Not a fan 🤢, anyone else?) with my roasted 🍅 tomato sauce to get more protein into meals, but now I don’t have to. .⁠ .⁠ 🍝 We paired this creamy tomato sauce with zoodles and a sprinkling of basil, and it was the ultimate summer deliciousness.⁠ .⁠ Recipe:⁠ .⁠ 1️⃣Start with either a roasted tomato sauce or a can of tomatoes. For my roasted tomato sauce, I simply chop up around 20 tomatoes, cut up a red onion, 5 cloves of garlic, few sprigs of rosemary and roast for 1 hour at 325F. Then blend it up. I’ve been getting back into meal-prepping lately, and am absolutely loving it! Life is quite full-on with PhD thesis writing 🤓, so prepping food in advance and having meals stocked in the fridge has been such a help. All the details for this week’s meal prep (and recipes when appropriate) are below! 👇⁣

You can swipe ⬅️ for a video getting close and personal with this meal prep 🎥  And I’ve also created a couple of story highlights for meal prepping and my (almost daily) packed meals! If you watch my stories you’ll be seeing these foods popping up this week as well 😋⁣

1️⃣ Roasted 🍠 - chopped into pieces and tossed into the oven for about 45mins on 175C/350F.⁣
2️⃣ Vegan falafels - I whizzed up: a tin of chickpeas * 100g peas * 100g @vegbred * 1 tbsp tahini * 1 tsp cumin * and a dash of almond mylk in the food processor; formed into little patties, and baked for 30mins on 175C/350F (flipping over for the last 10mins).⁣
3️⃣ Chickpeas - cooked from dry in my @instantpotuk (I portioned out the cooked chickpeas into 5 single-serve containers which I froze, and will go through this larger container this week).⁣
4️⃣ Red cabbage - chopped, to easily add to salads.⁣
5️⃣ Chilli and kale - I had a load of chilli leftover from a batch I made the other day, so I portioned it into three containers and added kale as well.⁣
6️⃣ Golden cornbread - to serve with the chilli, it’s perfect for dipping! Recipe is on my blog 🎉7️⃣ Flapjacks - for a sweet treat in the afternoon or post-dinner 🤗 Recipe is also on my blog!⁣

You know when your birthDAY turns into a whole WEEK thing??? Ya it's awesome. I Honestly I felt very loved and very blessed 🥰🥰🥰. I got cookies, cake, chocolates, shakes, and ice cream. And I ate all of it. With no guilt at all. But this coming week I'm listening to what my body needs. Less sugar. Notice I didn't say I'm cutting out sugar from here on out. I didn't say I'm going back on my "diet". That's not what I'm about and not what I believe is sustainable. But eating less of it and listening to my body. That's is doable. More water and more veggies this week. And this isn't a punishment either. I'm not making myself do something I don't want. I'm literally craving veggies and water. it's true though.  something about containers of food already prepped TELLING me I have to eat them makes me NOT want to eat them.  I know it sounds completely weird.  maybe it's a bit of rebel in me.

but I will share with you a few tips on how I stay on track with our nutrition + we can KICK UP our heels in celebration of no more MEAL PREP!

here's the tips:
➕weekly menu (planned out with the Gillies), the Gillies get to choose a veggie for the week (it's usually broccoli or brussels)
➕knowing WHICH day of the week we plan to DINE OUT, let's be real it's going to happen... we just aim for no more than ONCE a week, and I'll make sure to PLAN which restaurant then take a glance at their menu
➕being boring with my breakfast as well as lunch options... it's prolly no surprise to you but I'll typically have a smoothie and a salad for my first two meals of the day.  sometimes, it's a salad first... then a smoothie or vice versa.  but there's no confusion.  I'll even make SMOOTHIE FROZEN PACKS (which includes:  spinach, blueberries, avocado bits)
➕having the Gillies CHOOSE a snack of their choice for the week... the only stipulation is, it has to be mama-approved.  Little Man typically opts for nuts while Little Miss snags larabars.

and those are just a few tips we have USE in our household to keep us SANE for the week ahead when it comes to meals BUT no meal prep.  and yes, I cook our dinners... but I'm a 5-ingredients or less and in 30 minutes kinda chef!  anything TOO involved and dinner will be burnt because my attention span is elsewhere... not lying.

Warum es in letzter Zeit bei mir so viele Posts gibt, die Essen abbilden? Das hat mehrere Gründe. ⁠⠀ Erstens versuche ich besser kochen zu lernen. Ich mache das mit Hilfe von Kochbüchern, Rezepten von meiner Familie und eigenen Ideen. All das vermische ich zu einem neuen Ganzen. Zusätzlich entspannt mich das Kochen auch, womit wir bei Punkt zwei wären.⁠⠀ Mein Bloggername ist Programm, denn Mobyforty steht für "moppelige 40". Ja, ich entspreche nicht dem Instagramideal und ich finde, jederist gut so, wie er ist, wenn er sich in seiner Haut wohl fühlt. Ich habe in den letzten vier Jahren (jobbedingt) ziemlich zugenommen. Du kennst mich nicht anders als von den Fotos und Stories, ich mich aber schon. Zusätzlich merke ich, dass mir mein Gewicht doch auch in manchen Situationen im Wege steht. Das heißt, ich versuche mich mehr mit Ernährung zu beschäftigen, auch um an Gewicht zu verlieren, was mich zu Punkt drei bringt.⁠⠀ Da ich weiß, dass ich gerade unter Stress zum Zunehmen neige, ist die Beschäftigung mit Ernährung und Nährstoffen für mich eine wichtige Angelegenheit. Gerade das Stressbauchfett ist gefährlich. Und was soll ich sagen, genau da setze ich an. Dieses Bauchfett kann verantwortlich sein für verschiedene Erkrankungen wie z.B. Schlaganfälle, Herzinfarkt oder Diabetes. ⁠⠀ Und viertens möchte ich mich beim Fotografieren verbessern. ⁠⠀ So ist das. Leben ist Veränderung. I am going to do 2 weeks of super strict #whole30 to get back to eating healthy and feeling goooood. Everyone goes through times of change, looses their routine, and makes poor eating choices. This could be a move, vacation, or a stressful event. What’s important is that you get back on track when you settle back down in order to look and feel your BEST😜

🥜 1/2-3/4 cup canned lentils, rinsed⁣⠀⠀⠀⠀⠀⠀⠀⠀⠀
🧀 1-2 oz crumbled goat cheese (I used herbed but plain will do!)⁣⠀⠀⠀⠀⠀⠀⠀⠀⠀

🍽 When you’re ready to eat, add 1-2 Tbsp of balsamic vinaigrette. I made mine with 1/2 cup olive oil, 1/4 cup balsamic vinegar, 1 finely chopped shallot, 2 tsp dijon mustard and 2 tsp honey. I like to make a big batch and keep it in the fridge to use throughout the week!⁣⠀⠀⠀⠀⠀⠀⠀⠀⠀

I’m grateful to be able to start my day with a completely balanced and completely plant based, delicious meal!

If you are watching calories and carbohydrates, opt for cauliflower. Add a little extra virgin olive oil, and salt and pepper when whip them up.  This batch was so creamy I didn’t even add the EVOO. .
