Meatless & Low Carb Option Available*
✖️1 cup dry lentils
✖️1/2 cup chopped onion
✖️2 garlic cloves, minced
✖️1/2 cup chopped bell peppers
✖️1/2 cup halved grape tomatoes
✖️1 teaspoon chili powder
✖️1/2 teaspoon cumin
✖️1/2 teaspoon garlic powder
✖️1/2 teaspoon smoked paprika
✖️lettuce leaves
✖️high fiber tortillas
Cheese, Lite Sour Cream & Cilantro optional*

Prepare lentils according to package directions. I used the pre- packaged steamed lentils from Trader Joes.

Coat pan with cooking spray. Over medium heat, add onions, garlic and peppers. Saute for about 3-5 minutes or until onions begin to soften. When the onions have softened, add tomatoes, cooked lentils and spices.

Continue to saute over medium heat for another 3-5 minutes, until spices are evenly distributed throughout the lentil mixture. 
Heat tortillas on a dry pan for about a minute on each side. Fill each tortilla with 1/4 cup lentil taco meat and dress with desired toppings. Use lettuce wraps instead for a low carb option.

So yesterday I did a post about the abysmal nutritional statistics in America — so today I wanted to give y’all an easy to follow basic guideline of how to get in the daily recommended 7-9 cups of whole, fruits & veggies without making your head spin from it being complicated!

This breakfast is my GO-TO. Remember “liquid before lunch,” for both your waistline/weight & health! This is an easy & effortless way to start your day off on the right note with all your daily needed vitamins & minerals in one place thanks to Equilibrium’s Daily Nutritional Support which you add into your smoothie (you can purchase it off my link in my Bio titled: SHOP - Equilibrium Supplements)!
Plus, you’re beginning your day with 2-4 cups of fruits & veggies JUST from your breakfast! Boom! Isn’t that amazing! Also, if you are Vata dominant and get cold easily, don’t add ice to your smoothie 🙃 or opt to add a small piece of fresh ginger to it which will warm you up from the inside out!

Lunch should be your biggest meal of the day between 12-2pm which is when your AGNI, aka digestive fire is the hottest (strongest). This is why I like to have grains or extra starch like potatoes with my vegetable centric meal during lunch!

For Dinner, choose something a bit lighter like leafy greens with 1-2 other veggies, paired with some wild caught salmon or sardines, or 1-2 organic pasture raised eggs, or some lentils or beans! A yummy homemade soup is a great way to get in a ton of veggies too!

You can pick whatever vegetables you want and make your own creations (think more variety/color the better) but this is just a guideline how to get enough fruits & veggies into your daily diet!! I hope this is helpful for you guys!! Remember, if you’re new to healthy eating, aim for 3-4 daily for a week, increase to 5-6 and eventually 7-9! Don’t feel you have to nail this overnight! eatinghealthyisfun If you’re looking for a dish to bring to a holiday dinner party, bring the veggies! With all the delicious food at holiday parties filling half your plate with veggies will balance out your meal! It’s still possible to have a balanced meal with protein, veggies, carbs, and fats at a holiday party. Sometimes I find that there isn’t many veggies served at holiday party’s, so I always offer to bring a big salad! .

The reason I like balancing my meals with protein, veggies, carbs, and fats is because I feel the best eating this way. You’re providing your body everything it needs at a meal. This keeps you full, satisfied, and energized! .

Serves 4-6 
Ingredients: 
1 head of broccoli, cut into florets 
3 cups butternut squash, cubed 
2 red onion, sliced thick 
Avocado Spray 
Dash of salt and pepper 
1 bunch Tuscan Kale, stems removed and sliced 
3 clove garlic, minced
1/2 tsp salt and pepper 
1 lemon, juiced 
1/3 cup olive oil 
1/3 cup raw pumpkin seeds 
Directions:
Preheat oven to 425F. 
On a baking sheet toss broccoli, butternut squash, and red onion with salt, pepper, and a spray of avocado oil- cook for 20 minutes.
In a bowl, massage the kale to make it softer to eat. 
Prepare the dressing by adding the garlic to a small bowl. Mix the garlic with salt and pepper. Add lemon juice and olive oil. Combine well and set aside. 
After 20 minutes, remove vegetables from the oven and add the vegetables to the bowl with kale. Toss with dressing. 
Top with pumpkin seeds.

eatinghealthyisfun A warming plate of pearl couscous with chicken and veggies. I love all of the Christmas cookies and cakes flooding my feed as of late. But, we still need to eat.....right? This is the couscous dish that always reminds me of risotto without all of that stirring and it’s done in about 10 minutes. :
:
4 tbls butter plus 2tbls (to finish the dish ) 
1 onion diced 
2 garlic cloves minced 
1 1\2 cups of Pearl couscous
3 cups of home made or low sodium chicken broth 
1 cup of defrosted peas and carrots (1/2 cup of each or all peas or all carrots - your choice ) 
1-2 cups spinach 
About 1 to 1 1/2 cups of cubed rotisserie chicken 
3/4 cup grated Parmesan :
Over medium heat melt 4 tablespoons of butter and sauté the onion until translucent about four minutes then add your garlic, sauté that for about 60 seconds - add your couscous and toast it with the onion and garlic about a minute or two , then add the chicken broth,  a teaspoon of salt give it a stir and bring to a simmer. Reduce the heat a little bit -cover it and cook -you can give it an occasional stir if you want.  The  couscous should take about 10 minutes to cook. You should check it towards the end of the cooking time and give it another stir to make sure the couscous isn’t sticking and you still have enough broth in there. Taste the couscous to make sure it’s cooked. Turn off the heat, add your spinach, Parmesan, peas, chicken , carrots and the remaining 2 tbls of butter and give it a stir -Taste for seasoning and serve. :

This is kind of crazy for me but December snuck up on me and I am feeling a little fluffy... too fluffy for a swimsuit LOL so while normally I'd focus on maintenance over the holidays, this time around I am focusing on lean muscle mass and toning.

The only way for muscle mass and toning to shine bright like a diamond 💎 is to lose whatever layer of fat one MAY have with proper nutrition and consistently exercising.

eatinghealthyisfun Last night was so fun sharing my healthy chocolate chip cookie recipe at my friend’s @roomatthebeach holiday party! 🍪🍫Everyone was amazed how yummy these cookies were with some healthy substitutes. They’re made out of cashew butter and almond butter and sweetened with honey! .

These cookies are made with heart healthy fats from the cashew and almond butter. Also, the healthy fats and protein from the nuts are a filling and satisfying snack. Sweetened with a little honey. Honey raises your blood sugar slower then white sugar keeping your energy from dropping! .

Friendly Reminder: There is nothing wrong with having regular chocolate chip cookies too! Healthy is everything in moderation😊

Serving 1 Cookie 
Makes 12-15 cookies 
Ingredients: 
1 cup cashew butter 
1/2 cup almond butter 
1/2 cup dark chocolate chips 
2 eggs, whisk 
2 tbsp honey 
1 tsp vanilla 
1/2 tsp baking soda 
1/2 tsp baking powder 
1/4 tsp salt
Directions: Preheat oven to 375F. Line baking sheet with parchment paper. In a bowl, combine all of the ingredients. Form cookies with 2 tbsp of mix. Bake cookies for 10-12 mins.

eatinghealthyisfun “How do I get my kids to eat healthy?”⁣

It’s a question I get a lot so thought I would pass on some of my tried and tested tricks.⁣
⁣
This is a tricky one isn’t it!  My kids eat pretty healthy.  They still love chips, chocolate, McDonalds and candy.  But my motto, is their motto ➡️ all in moderation. ⁣
⁣
Here are some tips that work for me and hopefully will for you too:⁣
⁣
1. If your child sees you trying new foods, particularly healthy foods, they will be more likely to try it themselves.  While you are eating talk about how delicious it is!⁣
⁣
2. Explain to your child WHY it is good to eat healthy food more than the not so healthy foods.  This is a big one in our house.  I talk about the vitamins and what good a particular food does to our body.  I always say It’s all about putting premium fuel in these premium vehicles that are our bodies 🤸‍♀️🤸‍♀️
⁣
⁣
3. Keep trying!  Did you know we gotta encourage trying new foods up to ten times. Research shows that it takes up to TEN tries of a new food to decide if you like it or not. 😮⁣
⁣
4. If your kids are old enough ➡️ get them involved!  Get them involved in planning the meals, prepping and cooking.  They will eat what they worked hard on 😉 ⁣
⁣
5. Have cut up options!  When there is a veggie tray out they keep on picking away at it…it is pretty awesome to watch.⁣
⁣
6. When all else fails HIDE the food.  So many recipes use puréed goodness so you can add those veggies into something unexpected! ⁣
⁣
BUT most importantly - PATIENCE and KEEP GOING!  Don’t stress.  Like any new thing the worst thing you can do is quit and push.  Slow and steady wins the race.  Oh and.....⁣
⁣
some of these tips even work on ourselves AND our husbands 🤫🤪🤪😉⁣

Very knowledgeable, really nice, and not pushy at all. I live about 25 minutes away and will absolutely be going back! ☺️ I’m so happy I found this place.

But during the circumstance in life when you’re not pregnant or breastfeeding, you should feel satisfied after a meal, and be full and energized for about 3-4 hours. What about you, how long do you normally stay full after a meal? Most of the time, your cravings are normal, because the body tries to tell you something! We just have to understand and listen to what the body is telling us. Perhaps you’re purely hungry because you didn’t eat enough calories. Or you didn’t eat enough fiber from beans or vegetables for example. Often times sisters are eating too less protein and too less vegetables however. Which very easily creates a craving for “something”. Similarly, we often can get cravings if we don’t drink enough water. The thing is, when we feel hungry (all the time) we are also often tired and moody, and also with lack of energy. Therefore, to ensure to eat healthy type of food items in balanced amounts at regular timings, drink enough water and exercise regularly; you can support yourself to be satisfied! To feel at ease. To have a higher fat burning, to have more energy and better mood and energy. Who doesn’t want that? As always, if this is something you feel you can improve, start with one action at the time. When you have that habit in place, work on the next one. Yes you can! In shaa Allah.

eatinghealthyisfun A lot of people don’t even believe it was me on the left. 
This was over 4 years ago and the one on the left is me 3 years ago. This was my biggest transformation.

Here is a picture of how I felt on the left. I was weighing over 215 lbs. I had severe panic disorder, depression and felt completely lost. I had many dreams and hopes but just never believed in my capacity to actually make them a reality. 
I couldn’t sleep at nights. Always worrying about the next day. Was I going to do better or was another shitty day going to be my reality again?

I felt sick, tired and hopeless.
_
There were so many things that helped me in my journey, but One of main point that really turned my life around was learning how to lose weight without dieting.
_
It was crazy how many diets I had started without ever finishing them because it always felt hard. I LOVE FOOD WITH A PASSION! I couldn’t just restrict myself from it all from one day to the other. I tried, but always failed.
_
When I finally learned how to balance a healthy lifestyle without starving, is when I was able to stick to a routine that worked for me, made me happy and gave me the results I wanted.
_
I was able to lose more than 40 lbs in the first 5 months of my journey. I was feeling amazing, energetic and most importantly full of hope. I COULD DO THIS! I finally felt like I was capable of sticking to something and succeeding. I was finally able to feel good, look good and DO good!

A lot of people don’t even believe it was me on the left. This was over 4 years ago and the one on the left is me 3 years ago. This was my biggest transformation. _ Here is a picture of how I felt on the left. I was weighing over 215 lbs. I had severe panic disorder, depression and felt completely lost. I had many dreams and hopes but just never believed in my capacity to actually make them a reality. I couldn’t sleep at nights. Always worrying about the next day. Was I going to do better or was another shitty day going to be my reality again? _ I felt sick, tired and hopeless. _ There were so many things that helped me in my journey, but One of main point that really turned my life around was learning how to lose weight without dieting. _ It was crazy how many diets I had started without ever finishing them because it always felt hard. I LOVE FOOD WITH A PASSION! I couldn’t just restrict myself from it all from one day to the other. I tried, but always failed. _ When I finally learned how to balance a healthy lifestyle without starving, is when I was able to stick to a routine that worked for me, made me happy and gave me the results I wanted. _ I was able to lose more than 40 lbs in the first 5 months of my journey. I was feeling amazing, energetic and most importantly full of hope. I COULD DO THIS! I finally felt like I was capable of sticking to something and succeeding. I was finally able to feel good, look good and DO good! _ Through my journey I have been able to teach many other women do the same and I am now ready to help more women! I know New Years is all about the resolutions and new goals. But seriously, how many New Years have past and your New Years resolutions stay lingering in January and end up forgotten by February. 
Ever wonder if it’s because there is something wrong with you?
My answer to that is NO! There is nothing wrong with you.

However maybe you’ve been doing it all wrong. Maybe, the reason why you have failed in the past, is simply because you haven’t prepared yourself since before the year even starts. We wait till the first of December or actually, the first week of December (because New Years leftovers, hangovers, etc right?) to be able to finally start planning how we are going to turn our life around. 
_
This morning I was listening to one of my favorite mentors Jim Rohn and he said “Don’t Start your year, until you finish your year”. Meaning, don’t take a step into anything until you have a plan! Now I’m all about just going for it even if you don’t know what the hell you are doing but, I truly truly believe that you need to at least have a goal, a mission and a vision in order for you to move forward. Otherwise, we end up just running in circles!

So, start planning now! What are your goals, where do you want to be this time next year and what can you start doing now in order for you to start connecting with that?
