cleaneats Pumpkin Spice Peanut Butter Bars🍫✨ These are absolutely ahhhmazing + a treat that I know I will be making all Fall. The pumpkin spice is optional if you aren’t into that (kinda judging you if you aren’t 🤷🏼‍♀️) Enjoy loves!

RECIPE:

Pb base:
1 cup natural Peanut Butter
⅓ cup maple syrup
½ cup coconut flour
2-4 tsp pumpkin spice *optional

Chocolate layer:
1 cup chocolate chips
2 tbs coconut oil
½ cup natural peanut butter

MAKE IT:
In a medium bowl, add in the peanut butter and maple syrup. Mix well. To the mixture add in the pumpkin spice along with ¼ cup of the coconut flour. Mix well. Add in the other ¼ of coconut flour. It will be tough to mix but keep going until it is all smooth!

Line a bread oaf pan with parchment paper. Add in the peanut butter mixture to the pan, flattening with a spatuala. Place into the freezer to set.

Meanwhile, melt the chocolate chips and coconut oil (either on 50% power in the microwave in one minute intervals or on a double boiler). Once it is smooth and melted, add in the peanut butter. Mix. Pour on the PB mixture. Let sit for 30 minutes in the fridge. 
Cut into squares and enjoy!!

I know what you’re thinking....Allie, chill with the zucchini. BUT don’t knock it until you try it, because I swear you can’t taste it at all! This recipe was inspired by @ambitiouskitchen (I veganized them and changed the main flour, so here is my version 👇🏻)
. 
VEGAN ZUCCHINI MUFFIN RECIPE: .
➡️Dry Ingredients: .
• 1 1/4c of @bobsredmill oat flour .
• 1/3c cacao powder .
• 1tsp baking soda .
• 1/4 tsp salt ————————————————————-
➡️Wet Ingredients: .
• 1 ripe bananas (mashed) .
• 1 medium zucchini (grated and presses out) .
• 1 flax egg (1T ground flax seeds + 3T of water) .
• 2T coconut oil (melted) .
• 1/3c maple syrup.
• 1tsp vanilla extract .
• 1/2c almond milk .
🍫Instructions: (Makes 12) .
1️⃣ Mix your flax egg and set in the fridge (10min) while prepping your ingredients 
2️⃣Use a medium sized grated to shred 1 zucchini, then transfer into an @elliesbest nutmilk bag (or paper towel) to squeeze out all excess liquid . 
3️⃣ Mash your banana in a medium mixing bowl, then add the dry shredded zucchini, the flax egg, and the remaining wet ingredients 
4️⃣ Mix the dry ingredients in a separate bowl, then slowly stir in the dry to the wet ingredient bowl to create your muffin batter 
5️⃣ Add to a muffin tin, top with mini vegan @enjoylifefoods dark chocolate chips, then bake for 24min @ 350°F (Cool and enjoy!).

2. In a 16-ounce canning jar, place oats, top with smoothie, and stir.

Then add broth, coconut aminos, and fish sauce and high pressure cook for 15 minutes. • once finished, add chicken and other veggies (I added carrots) And pressure cook for 10 minutes • quick release pressure and shred chicken • an a separate bowl, put zoodles and chicken, then top with broth. Top your pho with cilantro, lime, and green onions •

For the protein I used some Mighty Spark turkey & bacon blend and some pepper jack cheese. For the veggies, instead of potatoes, I used rutabaga, then added some red bell pepper, garlic, jalapeños, onion, and fresh thyme + basil. Of course added some more fresh jalapeños and avocado on the top.⠀

The good thing about breakfast hash is you can use whatever you want. There are no rules - use your imagination and whatever you have on hand. If you’re not low carb, keep the potatoes!⠀

To make this particular one:⠀

1. I roughly diced up 2 large rutabagas and sautéed for 7-8 in 1 tbsp avocado oil, paprika, garlic powder, and some sea salt. I peel by rutabaga using a peeler.⠀

2. In the same skillet, then added 1 package of @mightysparkfood turkey and bacon blend and seasoned with some more paprika, cumin, and garlic powder. Not necessary. Then started breaking up the meat with a wooden spatula to make sure it was cooking evenly.⠀

3. After about 5 minutes, to the same skillet added 2 chopped cloves of garlic, 1/2 medium onion, and 1 red bell pepper. Cook for 2-3 minutes.⠀

4. Then I created some pockets and cracked in 2 large eggs and added about 1 cup shredded pepper jack cheese.⠀

5. Put in the oven at 350F until the egg whites had firmed up. This takes about 10-12 minutes for me. Removed, then added some sliced jalapeños, fresh herbs, and some sliced avocado. You can add anything else on top .⠀

It’s seriously beautiful here in the Mitten today. ☀️ Sunshine and 70’s at the farmer’s market this morning. Both heirloom tomatoes 🍅 and sweet corn 🌽 are in season, as an added bonus! 2 Cans Chickpeas⠀
2-3 Avocados (depending on size)⠀
Juice from 1 1/2 lime⠀
1/2 Cup Chopped Green Onions (about 4 stalks)⠀
1/2 Cup Chopped Celery (about 2 stalks)⠀
1/2 Cup Chopped Cilantro⠀
3/4 Tsp Garlic Powder⠀
3/4 Tsp Onion Powder⠀
3/4 Tsp Salt⠀
1/4 Tsp Pepper⠀
1/2 Tsp Dill⠀
OTHER:⠀
Toppings of Choice (tomato, greens, onion)⠀
Vegan Bread⠀

INSTRUCTIONS⠀
Rinse chickpeas and add to a bowl with all the other filling ingredients.⠀
Squish with a potato masher (or a fork if that's all you have) until well combined. I like to leave some chickpeas whole for some texture.⠀
Spread over toasted bread and add toppings of choice. I used tomato, red onion, spinach and arugula! Enjoy!

cleaneats Salmon Teriyaki with Green Beans & Sweetcorn Rice, will make a pefect meal for fitness lovers.

What you need: • 4 salmon fillets (5 oz. / 150g each) • 5 oz. (150g) green beans, frozen • 1 cup (150g) sweetcorn • 3.5 oz (100g) brown rice • 2 tbsp. sesame seeds • 1 tbsp. sesame oil 
For the Sauce: - 8 tbsp. soy sauce - 3 tbsp. maple syrup - 1 tbsp. lime juice - 4 tbsp. grated ginger - 2 garlic cloves, grated

What you need to do:
	Make the marinade by mixing all the sauce ingredients together. Season with salt and pepper. 	Cut the skin off the salmon then rinse, dry and marinate in the earlier prepared sauce for 1 hour. 	In the meantime, cook the rice according to the instructions on the packaging. Add the green beans to the cooking rice 4 minutes before the end of cooking, then drain. Next add the sweetcorn and mix well. 	Preheat the oven to 450F (230C). Place the salmon into an oven proof dish leaving the marinade aside. Bake for 8-10 minutes and 3 minutes before the end of baking sprinkle with sesame seeds. 	Transfer the marinade into a small saucepan and heat until it thickens, then mix in the sesame oil, take off the heat and set aside. 
To serve, divide the rice and salmon between plates, then drizzle with the teriyaki sauce. -

(150g) green beans, frozen • 1 cup (150g) sweetcorn • 3.5 oz (100g) brown rice • 2 tbsp. sesame seeds • 1 tbsp. sesame oil For the Sauce: - 8 tbsp. soy sauce - 3 tbsp. maple syrup - 1 tbsp. lime juice - 4 tbsp. grated ginger - 2 garlic cloves, grated What you need to do: Make the marinade by mixing all the sauce ingredients together. Season with salt and pepper. Cut the skin off the salmon then rinse, dry and marinate in the earlier prepared sauce for 1 hour. In the meantime, cook the rice according to the instructions on the packaging. Add the green beans to the cooking rice 4 minutes before the end of cooking, then drain. Next add the sweetcorn and mix well. Preheat the oven to 450F (230C). Place the salmon into an oven proof dish leaving the marinade aside. Bake for 8-10 minutes and 3 minutes before the end of baking sprinkle with sesame seeds. Transfer the marinade into a small saucepan and heat until it thickens, then mix in the sesame oil, take off the heat and set aside. To be honest, there will never be a period of my life that is completely satisfying. 
High school wasn’t the best time of my life
Graduating from college wasn’t my greatest accomplishment
My wedding day wasn’t the greatest day of my life
Having kids isn’t a deal breaker to my life, our lives, our happiness 
Every single day is a day to make the greatest. The best that you can. The most physically, emotionally and spiritually enjoyable as you can make it.
We are not here forever. We are not here to live just for certain moments
We are here to live, learn and create days that make our existence here worth while.
Contribute, soak, share, love, be open, have compassion. 
Aim to be 1% better than yesterday. Whether it’s how you treat your co workers, how you move in the gym, that food that you consume, the strangers you smile at, the course you enroll in, the mentor you finally invest in, the book that you read... you catch my drift.
Today, I said yes to me. That’s my 1% better today. Oh - and the squats are hella better than last week at 225.
And yes, I said hella ✌🏻 Set yourself up for success by giving a little bit extra as often as possible - it’s more satisfying in the long run mind body and soul ⭐️
