One time-saving cooking trick I come back to time and time again is doubling up what I’m preparing and freezing half. It doesn’t take much more time to make (everything is already on deck!)- and knowing I have freezer meals and snacks ready to go makes me feel much more ready for whatever comes my way - be it adventure or chaos!
These are simply peeled, boiled, and mashed potatoes and yams with plenty of organic/grass-fed butter, dried chives, fried and chopped bacon, chèvre, sea salt, pepper, and smoked paprika. I scoop them onto a sheet with a large muffin scoop, freeze, and store in freezer bags, ready to be added to a muffpot meal or adorn a quick lunch or dinner. Your freezer is your friend! 👊🍽

Have you ever heard of figgy pudding? 🍮 It's a traditional English dessert that's basically a dense cake that has been steamed. ♨ It's a rich, fruity dessert enjoyed at Christmas dinner, usually set alight with flaming brandy and served with brandy butter or hard sauce. 😋 It's definitely a delicious treat you don't want to miss! My figgy pudding has already been aged for 4 weeks to get it ready for Christmas. 🗓 It needs that time to develop the rich, caramelized flavors in the cake. 👍🏻 Check out my figgy pudding recipe in my profile for all the details!

Homemade Cabbage Soup —
▪️Half head Savoy Cabbage, Rough Chop
▪️5 Carrots, Peeled and chopped into large chonky bois ▪️Quarter onion, chunky
▪️2 leeks, white and light green parts only, sliced
▪️Package of frozen Sweet Corn homies
▪️Lil’ Taters. Baby ones.
▪️4 TABLESPOONS BUTTA
▪️2 TBS Olive Oil
▪️Splash of Dry Vermouth
▪️Splash of White Vinegar
▪️1/2 tbs white sugar
▪️Some shakes of Coriander
▪️Dill and Parsley
▪️Thyme and Fresh ass bay leaves
▪️Lots of water
▪️SOFRITO - Half a white onion, 3 celery stalks, 2 peeled carrots, 2 cloves garlic friends, tiny baby shallot. Throw that into the food processor.
Throw Sofrito and fats into Dutch oven on medium heat. Throw in bay leaves and thyme. Sprinkle in that coriander. Let it all mellow for a bit. Splash with vermouth. Let it have a cocktail hour.
Add everything else into the pot besides corn, dill, parsley. Let it come to a boil, then let simmer until they’re all softies. Add as much water as you want. Don’t ask me questions.
Turn off heat. Add a shitload of parsley and dill because it’s delicious. Add the corn.
Now eat it.

Easy shortbread cookies sandwiched with dulce de leche! This one’s for those of us who want to make an effort, but not the kind of effort that takes all day. #aintnobodygottime 😅 I’ve shared it before, my sister tells me I’ve overshared this image, but there was never a recipe so I’m adding it below #virtualcookieparty2019 .
1 cup softened butter
1/2 cup packed brown sugar
1 teaspoon pure vanilla extract
2 cups all-purpose flour
1/2 teaspoon fine salt
1/2 cup dulce de leche (a store bought can is great)
Preheat oven to 325 degrees F (165 degrees C). With a stand mixer fitted with the paddle attachment or a hand mixer and large bowl, cream butter, vanilla and brown sugar for 5 minutes. Add flour & salt slowly. Mix until combined, kneading just until it comes together to form a soft dough. Wrap and chill dough for an hour in the fridge prior to shaping. Sprinkle board with some flour OR powdered sugar. Roll to 1/4 inch thickness and use a cookie cutter to make whichever shapes you desire. I use a biscuit cutter and lift them gently with a palate knife to transfer to ungreased baking sheets. Prick with a fork and bake at 325 degrees F (165 degrees C) for 15-20 minutes, cool & sandwich with 1/2tbsp dulce de leche. Enjoy! #thedaleyplate#f52cookie#f52holidaycookie

A bundle o’brie with spiced cherry preserves in puff pastry, yes PLEASE 🥐 You can pull this one off in 30 minutes tops — just make sure your puff pastry is thawed and your oven is preheated to 400! Spread your jam atop and around the brie wheel, wrap it up, brush with egg wash, bake on parchment until golden. Bon appetit.
