21daymealplan I still have a little bit back there! 🤣 and before you guys start comparing, please know that my butt in the first pic barely fit into an airplane seat, on any rides at theme parks and completely hung over the sides of chairs(I'm pretty sure I broke 2 chairs). So don't tell me what was better! I lived it! I'm perfectly happy with my butt right now(I'm afraid if I lose any more weight I might lose it all🤣 and my soon to be hubby would not be thrilledğŸ‘ŽğŸ½). All that said, it might be A LOT smaller, and this culture will say I looked better before, but it suits me just fine the way it is right now💜⁣

This easy chicken fritters recipe takes just 30 minutes to make. It's a healthy and delicious Keto recipe, and it's also perfect for meal planning.⁠

1.5 lb (700g) skinless boneless chicken breast⁠
2 medium eggs⁠
1/3 cup almond flour⁠
1 cup shredded mozzarella cheese⁠
2 Tbsp fresh basil finely chopped⁠
2 Tbsp chives chopped⁠
2 Tbsp parsley chopped⁠
1/2 tsp garlic powder⁠
a pinch of sea salt and fresh ground black pepper or to taste⁠
1 Tbps olive oil or more to fry⁠
Instructions⁠
Place the chicken breast on a chopping board and using a sharp knife, chop it into tiny pieces, then place them in a large mixing bowl.⁠
Into the large bowl, stir in almond flour, eggs, mozzarella, basil, chives, parsley, garlic powder, salt, and pepper. Mix well to combine.⁠
Heat oil in a large non-stick pan, over medium-low heat. With an ice cream scoop or a large spoon, scoop into the chicken mixture and transfer it to the pan, then slightly flatten to create a fritter. Don't overcrowd the pan, cook the fritters in batches, about 4 per batch.⁠
Fry until golden brown on both sides, about 6-8 minutes. Keep in mind that you need to cook them at medium-low temp, otherwise they will burn on the outside but won't get well cooked on the inside.⁠
Serve with your favorite dip and enjoy!⁠

Let me tell you guys… this crusted salmon was unreal! The combination of the texture + flavor from the crushed pecans , the saltiness from the cheese, and the freshness from the parsley came together really nice on this.

Compared to other nuts, pecans are among the lowest in carbs (4 grams) and highest in dietary fiber (3 grams) per serving. So I figured, why not add them to salmon and go the extra mile with the superfoods today.

To make this dish:
.
1.I started by using a small food processor and added 1/3 cup pecans, 2 tablespoons parmesan cheese, a handful of fresh parsley, and I pulsed it in the food processor. You dont want to over do it here because you dont want the pecans to become buttery. You want some larger pieces in there.Once pulsed, taste it and see if you want to add anything else.

2.Then grab a piece of fresh, high quality salmon and dab it down with a papertowel. Then drizzle and massage in a little bit of avocado or olive oil and then top with the pecan-parmesan-parsley mixture. Put as little or as much as you want.

3.Put in the oven at 450 for about 15 minutes or until done. Alternatively, you can put in the air fryer if you like.

4.While the salmon is going, get the rest of your bowl going. I started with a big base of mixed greens, added some sautéed mushrooms + peas, 1/2 a hardboiled egg, some cherry tomatoes, and of course 1/2 avocado.

5.Once the salmon was out of the oven, put it on the bowl and devoured it.

Perfect muscle + mind fuel. Let’s make it a good week 👊🏼👊🏼

The crazy thing is right before I started the @21daymealplan six months ago, I had gotten back up to my heaviest pregnancy weight, but I wasn't pregnant. That was a huge wake up call to me. Seeing 260 pounds on my 5'4 body scared me. As a nurse, I knew where my health was headed and it wasn't good. Today I am so so thankful to feel better, to have good health and to be helping others get theirs back too. ❤️ ___

This month I have not been as focused on “weight loss” but more so living in the moment. I am still trying to be conscious of what I am eating and how much I am moving my body while using @21daymealplan as my guide. The goal is to hopefully maintain and I know some days will be easier than others. Last Saturday I had the chance of attending my first ever #zumba master class in memory of Robyn, a lady I did not have the privilege of meeting but that loved Zumba. We were taught by the talented and incredible @zjannam 💖! The energy in the room was on fire🔥! I am a firm believer of finding a way to move your body 💃🏻and sweat 💦 that you truly enjoy because that will definitely make a difference in helping to stay consistent in your routine! I know I can always count on doing Zumba to lift my spirits and make my day better and a good calorie burn! 🙌

Transformation Tuesday✨ This month I have not been as focused on “weight loss” but more so living in the moment. I am still trying to be conscious of what I am eating and how much I am moving my body while using @21daymealplan as my guide. The goal is to hopefully maintain and I know some days will be easier than others. Last Saturday I had the chance of attending my first ever #zumba master class in memory of Robyn, a lady I did not have the privilege of meeting but that loved Zumba. We were taught by the talented and incredible @zjannam 💖! The energy in the room was on fire🔥! I am a firm believer of finding a way to move your body 💃🏻and sweat 💦 that you truly enjoy because that will definitely make a difference in helping to stay consistent in your routine! I know I can always count on doing Zumba to lift my spirits and make my day better and a good calorie burn! 🙌

21daymealplan 2 months till i hit my 2 yr anniversary of this journey. 
Super proud of the progress so far and excited for next year .
This year has proven that i can maintain at a healthy weight and still enjoy life .i dont sweat the slight weight gains because i know exactly what to do . I no longer panic when i see an extra lb or two. 
The weight loss wasn't huge this year about 15 lbs is all but thats still such a great accomplishment . 
2019  tested me when it came to my mental health , my physical health has been great but i was slowly slipping into a dark place mentally . I wont say im 100% out of it  which is why i decided to take the month to just breath and love my fam and myself. Btw we are allowed to have mental health issues and love ourselves at the same time . Its probably more important to love myself especially when i feel like my life is falling apart (it isn't but that's how its feels in my head . I know it makes no sense. Trust me , i know 😅)
Life is harsh enough with out me hating on myself ,so i choose to love myself even at my crazy .

Started working out with a custom program and in person with a certified personal trainer yesterday and wow! I’m so excited for the months to come!

It’s been a lot of fun and time flies!

I told him I wanted to focus on my loose skin on my arms and upper thighs. Those are my problem areas that I want to address. Extremely excited for the progress! 😁

As far as weight - I’m at 155. Ideally I’d like to lose another 10 pounds but I’m pretty happy with where I’m at for now! 💗

OMG. I’m sitting here feeling like a blob then my dad sends me an old picture of myself from 9 years ago, I was 20 years old and I look soooo much older than I do now. I don’t even remember looking that big,  I feel so much healthier now and in control (even with my raging pregnancy hormones) -70 pounds between these pictures

21daymealplan I’m back! To put a long story short...anxiety is a bitch. It’s really done a number on me the last few months but today I put my foot down. I got a 20 minute jump rope session. I’ve lost all my stamina I built up but on the bright side, I know it’s possible to build it up again. Now I’m off for a walk to go buy stuff to meal prep. I’ve been eating more meat recently and my body hasn’t been appreciating it so I’m going back to more of a plant based diet. Back to using this page to stay accountable ✨🙏🏽

21daymealplan Just travelled for close to 24 hours to get to Israel 🇮🇱 for a family holiday. Probably won't be posting too much but wanted to say... It's so nice seeing my reflection and being happy with what I see. And I'm not just talking about physical appearance, I'm talking about my whole well being and happiness. 😁 So grateful for the @21daymealplan for the tools to regain my life. Down 57pounds/26kgs.

Today was very hard morning for me...I woke up at 4:55am ... at 6:40 I came to work and I can't understand why I was so exhausted...ğŸ˜ž I tried to search some information about products that could give energy, because at such case I always want something sweet...😖 I tried to calm down and think freshly...So, my decision were 1 banana, 1 cup of espresso and 3 mandarins.
